Low carb – sugar-free swirled strawberry cream cake = the prefect treat to make and eat for Valentines, Galentines or just because yum!

Subtly sweet, light and fluffy vanilla spiked sponge cake swirled with tart-sweet {homemade cheats} strawberry jam and frosted with lashings of lightly sweetened freshly whipped cream!  This cake is nothing short of delicious. Every bite is swirled with fresh berries, hints of vanilla and fluffy whipped cream! You are going to LOVVEEEEE it!

Truth be told, Ive been holding on to this recipe for months (but really, years) now. Ever since Eve was little, every year for her birthday without fail, she always requests one thing . . . strawberry sheet cake with alllll of the whipped cream! My girl knows what she wants and let me tell you, she has very good taste!

It’s deliciously simple, incredibly flavourful and if summer had a signature sheet cake, this would be it!

It’s light, fresh, and just downright delicious and it also happens to be secretly good for you! Made with no refined flours or sugars using just a handful of ingredients that I bet you have on hand already and can be ready to devour within the hour!

Healthy enough to serve for breakfast with a big ol’ vat of coffee, of course, but indulgent enough to celebrate just about any occasion! + a champagne toast if you feel so inclined!

Gluten Free – Dairy free (if you want) – Grain free – Refined Sugar free –  Low Carb – Paleo – Keto Vegan friendly !

Swirled Strawberry Cream Cake

  • Cook Time: 1 hour
  • Persons: 4-6
  • Difficulty: Easy

  • Ingredients
  • For the vanilla sheet cake:
  • 2 eggs – or flax eggs
  • 2 Tablespoons of vanilla yogurt
  • 2 Tablespoons of unsweetened vanilla almond milk
  • 1 Tablespoon of vanilla
  • 1 cup almond flour
  • 1 teaspoon of coconut flour
  • 1/4 cup monk fruit sweetener (or granulated sweetener of choice)
  • 1 teaspoon baking powder
  • 1/2 teaspoon of baking soda
  • A pinch of salt
  • For the strawberry swirl:
  • 1 cup of strawberries, roughly chopped
  • 1 teaspoon of monk fruit sweetener (or granulated sweetener of choice)
  • A squeeze of lemon juice (about 1/2 a tsp)
  • For the frosting –
  • 1 cup of whipping cream (coconut or regular) – can also use cream cheese or vanilla Greek yogurt
  • 1 teaspoon of vanilla extract
  • 1-2 Tablespoons of powdered sugar ( I used monk fruit but regular icing sugar is totally fine) – more or less to taste
  • 1 Tablespoon of your strawberry sauce
  1. Instructions
  2. For the strawberry sauce –
  3. Add the strawberries, sweetener and lemon juice to a medium-size saucepan over high heat.
  4. Bring the mixture to a boil, once boiling use a potato masher or fork to break down and mash the berries. Continue to cook for 5-8 minutes or until the sauce has reduced and thickened by 1/3.
  5. Remove from the heat and set aside to cool. It will continue to thicken as it cools.
  6. For the cake:
  7. Pre-heat your oven to 175/C/350/F and line/grease your baking tray pan with baking/parchment paper and set aside.
  8. Place all of your cake ingredients into a medium-size bowl and stir to combine.
  9. Pour into your prepared baking tray.
  10. Take about 1/4 cup of the strawberry sauce and dollop it by the teaspoon randomly over the top of the cake.
  11. Use a knife (or toothpick) to lightly swirl the sauce around, don’t over mix it.
  12. Bake for 20-30 minutes until the top springs back when lightly pressed and the cake is set. If you feel the cake is browning too quickly just cover with some foil to prevent it from burning.
  13. Set aside to cool while you make your whipped cream.
    Note – as the cake cools, the strawberry sauce will sink down into the cake leaving luscious, sunken swirls of sweet strawberry sauce. It’s incredible! You will LOVE it!
  14. To frost the cake, top with 1/3 of your whipped cream, then drizzle over the extra Tablespoon of strawberry sauce, you can swirl it through the cream with a toothpick, add the remaining cream, and smooth to the edges.
  15. Slice.

And you know what that means, it’s time for another round of fit Friday fun!!!!

And boy are we going to have some fun today!

Today I’m sharing a short, sharp lunge filled, lower body workout that you can get in and get done in just 15 minutes , with or without equipment, totally your call.

You guys know how how much I love, love, love my lower body workouts (also, it’s all I can do at the moment with my poorly arm – no upper body and no holding weights for me), but also,  The lower body is where your powerhouse muscles are (I’m looking at you quads, glutes and hamstrings) which means you get a serious bang for your workout butt, I mean buck 😉

So, here’s what we are going to do – click here to see a demo/workout with me

♦ Glute bridge
♦ Step up
♦ Reverse lunge with knee raise
♦ Rear foot elevated split squat

♦ Squat with pulse

Aim to do 10 reps of each exercise (count reps per leg) then repeat the entire sequence through for a total of 3-4 rounds (or as many rounds as pretty in 15-20 minutes) , resting as needed. Sound good?

Nothing overly complicated, basic movements done with good form for a short but effective total body workout that will have you feeling strong , energized and ready to take on the rest of your day!

Now, for those of you who are just getting started or may not have access to a gym of any kind of weights you can absolutely do with workout without any added weight and let me tell you, you will be feeling it.

The aim here is to move from one exercise to the next with minimal/no rest in between – That being said, I want you to listen to that beautiful body of yours and rest as needed.

Anytime you feel like you need to take a break to catch your breath and grab a little drink then by all means please do so, and take all the time you need. However, if possible try to wait until you get to the bottom of each round to do so but, do what you gotta do, OK?!

Nothing complicated, basic movements done with good form for a short but effective workout that is guaranteed to leave you feeling strong, energized and ready to take on the rest of your day!

Although it’s totally not necessary, simply using your body weight alone is challenging enough but,  for our fully functioning or more advanced lifters who might be wanting kick things up a notch feel free to grab yourself a weapon of choice – a set of dumbbells, kettlebells, your EmPack,  resistance bands or a combination would work. Just make sure you choose something appropriate for your strength but, don’t be afraid to challenge yourself.

But remember, we want quality not quantity, always! Never compromise your form, ever! If your form starts to fail your done, got it?

Take your time, concentrate, focus and breathe through each and every exercise. You are strong, you are amazing, you have big energy! You’ve totally got this!

No Equipment – At Home
Lower Body Workout

As always make sure you are nice an warm before you start your workout – Run on the spot, do jumping jacks, jump rope, dance around your living room, anything to get you warm then it’s time to get serious.

Finish with a nice little cool down and stretch, maybe take a walk #socialdistancing or something anything to help bring your heart rate down. Finish with a few of your fave stretches. Please don’t skip the stretch people, its like dessert for the body.

Now for our smoothie recipe . . .

How does a nice tall, light, fresh, creamy, dreamy, subtly sweet, secretly healthy, strawberry shortcake shake sound?

You guys, this smoothie . . .

It’s everything you love about a big ol’ slice of strawberry shortcake,  (complete with extra whip ) all served up in one pretty little cup!

No whisking, no baking, no cooling, no slicing and no sharing required!!!

And, it also happens to be seriously good for you!

Made with no added sugar, packed with protein and loaded gut healing goodness, not that anyone would ever know! I won’t tell if you don’t!

It’s subtly sweet, luscious, creamy, spiked with the perfect hint of cinnamon  – it literally tastes like straight up dessert and I am here for it!

And, I should probably mention that not only does our creamy, dreamy, dessert inspired smoothie taste like straight up heaven in a cup but, it also happens to be dairy free (if you want) , gluten free, BANANA FREE, DATE FREE, sugar free, low carb, keto, paleo and vegan friendly!!!

So much to love I tell you and love it you will!

It really is simply divine, the perfect way to treat yo’ self while you refuel and re-energize that beautiful body of yours on this fabulous Friday.

Sugar Free Strawberry Shortcake Shake

 

Makes 1 shake
Ingredients –

1/2 cup of vanilla yogurt

1/2 cup unsweetened vanilla almond milk (or milk of choice ) – more or less to desired consistency

1 cup of strawberries – I used frozen

1 teaspoon of  Before you speak coffee sugar free vanilla creamer –  – use EMS10 to get 10% off – or regular vanilla but , they creamer makes it extra lush

1 Tablespoon of almond butter

1/2 teaspoon of cinnamon

A pinch of pink salt

1/4-1/2  cup of ice – more or less to desired consistency

Optional add ins;

1 Tablespoons of melted dark chocolate to swirl your glass  – pure happiness

1 teaspoon of maca – for hormone balance

1-2 scoops of  collagen – for gut healing goodness – I ♥ ATP science unflavored collagen peptides

Reishi & ATP Science Adrenal RX– boosts immunity, calms the nervous system & my busy brain

1 scoop protein powder  – for extra protein ( I used vanilla  )

Cookies, crumbled – for serving – I love using Simple Mills – SO GOOD!!

Method –

1 – Place all smoothie ingredients into your blender and process until smooth, creamy and well combined.

2 – Pour into a chilled glass or mason jar then top with toppings of choice – I use coconut shreds, cacao nibs (or a shaving or dark chocolate) always.

Original, strawberry or coconut?!

No Bake, Strawberry Shortcake Bliss Bites

  • Prep Time: 10 mins
  • Persons: 16+
  • Difficulty: Easy

 

  • Ingredients
  • 1/2 cup raw almonds
  • 1/2 cup raw cashews
  • 3/4 cup (approx 8 large) medjool dates – Keto friends see notes*
  • 1 cup freeze dried strawberries
  • 1 Tablespoon of vanilla
  • 2 Tablespoons of almond butter
  • 1/2 teaspoon of cinnamon
  • A pinch of salt
  • Optional add ins;
  • 2 scoops of collagen ***  adds an extra hit of protein & is great for hair, skin, nails & gut health
  • 1-2 Tbsp of protein powder ****
  • Optional for serving –
  • Freeze dried strawberries, crushed to powder
  • Finely shredded coconut flakes
  1. Instructions
  2. Optional but highly (HIGHLY) recommended – Place your almonds and cashews on to a lined baking tray and roast at 175’C/350’F for 5-10 mins until lightly toasted, gloriously golden and deliciously fragrant.
  3. Once toasted, place your nuts into your food processor/blender and pulse until crumbly, you want there to still be a few bigger chunks to give the bites some nice texture.
  4. Add dates and process until the mixture starts to come together into a sticky “dough”.
  5. Add vanilla, cinnamon, salt along with collagen & protein pwd (if using) then process again until combined.
  6. Add freeze dried strawberries and process again to combine.
  7. Using your hands, roll approx 1 small Tablespoons worth of dough into bite size balls then set aside
.
    FYI – I like to make my bites on the smaller side. You would probably need 3 of mine to make up one of those golf ball size bites you buy at cafe’s or in stores.
  8. If you are going to coat your bliss bites simply place your strawberry powder & coconut into a small bowl or zip lock bag and gentle press/shake until nicely coated. Store in the fridge until ready to serve.
  9. Enjoy xo

Notes –

*  Keto/ low carb lovin’ friends & those of you who have trouble digestive dates –  soak/ferment your dates in coconut water keifr or kombucha overnight and you should be ready to roll. How you ask?! Well, apparenely adding beneficial bacteria to them in the way of coconut yoghurt or coconut kefir or kombucha removes all the sugar in the fruit! You cab read more about how/why it works here

** if your dates are a little dry/ you’re not using fresh juicy dates (or fermenting them first), soak in boiling water for 10 mins to help re hydrate them & bring them back to life. Then just drain & proceed with the recipe as written.
