Is it even St Patricks Day if you don’t have yourself a creamy, dreamy, light and green-y shamrock shake?! Sorry, that was terrible I know. I could go back and delete it but wheres the fun in that?!

You guys, this smoothie . . . honestly, I have no words!

Subtly sweet, seriously creamy, spiked with the perfect hit of vanilla, a hint of minty freshness & it’s choc-full of choc chips!

You can’t beat a classic like cookies and cream & adding a touch of matcha, a hint of mint + some extra chocolate = best idea, ever!

A matcha made in heaven! Sorry #notsorry it had to be done!

Not only does it taste incredible but, it also packs a nutritional punch!

It’s rich in antioxidants, high in calcium, potassium, magnesium, iron & fiber.

It’s a natural anti-inflammatory!

Great for stabilizing blood sugar, balancing hormones, enhancing mood, aid concentration & restoring energy levels (both mental & physical).

And, it’s packed with protein & gut healing goodness!

Healthy Shamrock Shake

  • Prep Time: 2 mins
  • Persons: 1
  • Difficulty: Easy

  • Ingredients
  • 1/2 C vanilla yogurt
  • 1/2 C unsweetened vanilla almond milk (or milk of choice ) – more or less to desired consistency
  • 1/2 tsp matcha powder
  • 1 Tbsp cashew butter
  • 1/2 tsp vanilla
  • a few drops of peppermint extract  – a little goes a long way!
  • 1/2 C frozen zucchini – makes it extra thick – you cant taste it , promise!
  • A pinch of pink salt
  • 1/4-1/2  cup of ice – more or less to desired consistency
  • * If you like a sweet brew, add 1/2-1 teaspoon of monk fruit sweetener (or sweetener of choice) to taste
  • A handful of ice
  • Best served with a dollop of whip, a cheeky shaving of dark choc & a crushed (GF) oreo!
  • Optional add ins;
  • A handful of spinach + 1/4 of an avocado for healthy fats and extra fibre!
  • 1 Tbsp melted sugar free dark chocolate sauce to swirl your glass with happiness
  • 1-2 scoops of collagen – for gut healing goodness
  • 1 scoop protein powder – for extra protein – vanilla works best in this recipe imo*
  1. Instructions
  2. Place all ingredients into your blender and process until smooth, creamy, and well combined.
  3. Pour into a chilled glass or mason jar then top with toppings of choice.
  4. Enjoy xo

Soft baked, choc fudge lava brookies for two (or just you)!

The perfect way to celebrate valentines, galentines, or just for those moments in life when you need, that’s right, I said NEED, a cookie or 2 but don’t want to bake, or can’t be trusted with ( ← we’ve all been there)  an entire batch of 12 – 24!

Soft, chewy, crispy on the edges, super, SUPER fudgy in the middle! THE PERFECT COOKIE (or should I say brookie?!) for any occasion or, simply just to help you crush those late night cookie cravings (please tell me I’m not the only one who has them pretty much every. single. night?!) but also, just because cookies/brookies are always a good idea! Am I right!? Oh, you know I am!

Just in case you’re not familiar with life-changing deliciousness that is the brookie  . . .  a brookie = soft-baked cookie meets suuuuuuper fudgy, rich chocolate brownie and yes, its just as incredible, if not more so, than you imagine. They even come complete with that signature, cosmic brownie crackle on top!!!!

This, right here, this single serve, super fudgy (secretly healthy), soft baked choc fudge lava brookie has taken my obsession with cookies, brownies and melty puddles of rich dark chocolate to a whollleeeee new level!

I mean the only thing better than a fresh from the oven, soft baked, ooey gooey brownie or choc chip cookie is a fresh from the oven, soft baked, ooey, gooey double choc fudge lava brookie! Who says you have to choose between brownies OR cookies?! I say lets have both!

You with me? of course you are, you’re cool like that!

Super simple, seriously delicious made with just a handful of ingredients that I bet you have on hand already and come together in one bowl, with one spoon, and can be ready to devour in a matter of minutes!

Annnndddd, they also happen to be secretly good for you!

Gluten Free – Dairy Free – Grain Free – Refined sugar free – Low Carb – Paleo – Keto – 100% Vegan friendly but most importantly they really are edible awesomeness personified and you need them in your life because, yum!

Also, primarily made with nut butter and a cheeky hit of espresso = totally acceptable for breakfast consumption + a big ol’ vat of coffee, of course.

Crispy on the edges, soft and chewy in the middle and literally oozing with rich, chocolaty awesomeness when you bite on!

Double Choc Fudge Lava Brookies for two

  • Cook Time: 6-8 mins
  • Persons: 1-2
  • Difficulty: Easy

  • Ingredients
  • 1/4 C almond flour
  • 1 tbsp cacao
  • 1 tbsp almond butter
  • 1 tbsp maple syrup
  • 1 tbsp monk fruit sweetener – or granulated sweetener of choice
  • 1/2 tsp instant espresso pwd) – opt but helps enhance the richness of the chocolate
  • 1 tsp vanilla extract
  • Dark choc (chips or chopped) measure with your heart
  • 1/2 tsp baking soda
  • a BIG pinch of salt
  • 1 scp collagen – opt but great for an extra hit of protein + hair, skin, nails & gut health.
  1. Instructions
  2. Place all ingredients apart from the chopped chocolate into a small bowl and stir to combine
  3. Add chocolate and stir to combine.
  4. Pop the bowl into the freezer for 10 mins (or you can refrigerate for 30 mins up to 2-3 days).
    Note – if you prefer a thinner, flatter, crispier cookie, you can skip this step but I find freezing the dough for a few minutes helps the cookies hold their shape better through the cooking process and I personally LOVE my cookies on the thicker side #youdoyou
  5. When you’re ready to get your cookie on, remove the bowl from the freezer or fridge.
  6. Scoop and roll your cookies into desired shape and size and place them onto a lined baking tray.
  7. Bake @ 175’C / 350′ F for smaller cookies bake for 6-8 minutes – medium-sized cookies bake for 8- 10 minutes – large cookies bake for 10-12 minutes and if you’re making one monster size cookie bake for 12-15 minutes.
    NOTE – at this time they will still feel soft. DO NOT OVERBAKE YOUR COOKIES!!!! Sorry for yelling but this is very important! Once your cook time is up, remove them from the oven and set them aside for 3-5 minutes to cool and set.
    Trussssttttt me. I would never steer you wrong. Your trust and patience will pay off because now you’re cookies will have set and the edges will be crispy and the middle will be ooey, gooey and all kinds of wonderful.

Now, lets quickly talk about these dark chocolate strawberry bounty bars . . . think —> everything you love about the good old fashioned bounty – yummy, chocolaty, coco-nutty deliciousness with a berry-licious twist that are dare I say, may just be wayyy better than the original, and I don’t just mean coz they’re made with healthier, “better for you” ingredients, I mean because they truly do taste all kinds of magical, also, espresso infused dark chocolate always wins imo

You could say they are kind of like a cherry ripe but also not really because cherries & strawberry taste veryyyy different. I waffling, I know , I’m so excited to share this recipe & FREE e-book with you that I can’t even think straight!

Strawberry Bounty Bites

  • Prep Time: 10 mins - Chill time - 30 mins - 1 hour
  • Difficulty: Easy

  • Ingredients
  • For the strawberry coconut bars:

  • 1 C desiccated coconut

  • 1/4 C coconut cream – thick part only* see note

  • 1/3 C strawberries, hulled & roughly chopped

  • 2 Tbsp maple syrup – I use sugar free – more or less to taste

  • 2 tsp vanilla

  • a pinch of salt

  • 1 scoop vanilla protein powder – technically opt but I love the extra flavour, nutritional boost + pre/pro-biotics it brings – brand recs & cheeky discount below**

  • For the chocolate coating:

  • 1/2 C dark chocolate chips or roughly chopped

  • 1/4-1/2 tsp finely ground instant espresso*** – optional but SO good!

  1. Instructions
  2. Line a small tray (or plate) with baking/parchment paper & set aside.
  3. Place all ingredients for the strawberry bounty bars into your food processor & pulse or process until combined.
  4. Now, you have two options here . . .
    Option A – spoon your strawberry coconut mixture into a silicone mould (I used a small rectangular silicone ice cube tray that I just bought at woolworths but any kind of silicone chocolate mould would work) make sure you press the mixture firmly down into fill the mould and use the back of your spoon to smooth/level out the tops.Gently tap the filled mould on to the counter top a few times to help remove any pesky little air bubbles that may be hiding in the middle of your bars and place them in to the freezer for an hour or two to set.
    Option B – If you don’t have (or want to buy) an ice cube tray or chocolate mould you can  just use your hands to roll the mixture into balls or form little log shapes like the more traditional bounty shape we know & love..
  5. Place your rolled balls (or logs) your prepared baking tray (or plate) and place it in to the freezer for an hour or two to set.
  6. Once your strawberry coconut bars are set, leave them in the freezer while you prepare your chocolate for coating.
  7. Melt chocolate by your preferred method. Remember to add the finely ground instant espresso powder if using.
  8. Taking one bar (or ball or log) at a time, dip the bottom half of each strawberry coconut bite into your melted chocolate.Let any excess chocolate drip off the bottom (pro tip – gently scrape the base on the side of the bowl your melted chocolate is in so it’s nice & smooth) then place on your prepared baking tray.
  9. Drizzle any remaining chocolate over the top of your berry-licious bounty bites.
  10. Enjoy xo

Notes –

These blissful bites of deliciousness are best kept in the fridge & should keep well in an air tight container for 1-2 weeks (but I doubt they will last that long because , yum! ) or you can freeze for up to 3 months.

Note / tips:

*Tip to get the thickest, creamiest coconut cream – open your can of coconut cream & let is sit, uncovered, in the fridge overnight. Then, the next morning when you’re ready to make your beautiful bounty bars you just scrape of the super creamy top layer. You can use the remaining liquid to make smoothies – I pop then in an ice cube tray & freeze for future use.

** I love Macro Mike plant based almond protein powder (have not tested any other kind/brand in this recipe). Its gluten free, dairy free, sugar free, boosted with probiotics & truly tastes all kinds of incredible. Its hands down without question the smoothest, most delicious, elite tasting protein power (plant based/dairy free or otherwise!!) I have ever tried. Anyway, sugar free iced peppermint mochas that can be hot or iced! Deliciously winning on so many levels!!!

Hands down one of my all time fave holiday drinks. Ever! & something I’ve been having every day since the start of December Sorry Im only just now telling you about it . Forgive me?!

One sip & all will be forgiven I just know it (even just the smell) makes my Christmas lovin’ heart (& belly) all kinds of happy.

The decadent richness of cacao combined with that gentle hum (or loud rev if you prefer) of espresso & that subtle hint of minty freshness

Seriously, so good! Starbucks who?!

*No added sugar
*Packed with protein
*Loaded with gut-healing goodness

All I want, every day between now & Christmas pls!

And yes, I’d you aren’t a fan of coffee (pls tell me how we’re friends again?! jk – ILY) just leave it out & have yourself a creamy, dreamy choc mint chiller. It will still be insanely delicious just not quite as magical IMO

Sugar Free Peppermint mocha!

  • Prep Time: 2 mins
  • Persons: 1
  • Difficulty: Easy

  • Ingredients
  • 1/2-1 cup unsweetened vanilla almond milk (or milk of choice)
  • 1 Tablespoon of cacao – at night (or if Im feeling super stressed & frazzled) I make it w/ 1 Tbsp yes please health – life changing magnesium rich super food “night, night” hot chocolate mix
  • 1-2 shots of your fave espresso – 1 sachet of Before you speak high performance instant espresso + 1/3 C water (I love mocha or OG in this recipe) – or 1-2 tsp of reg instant espresso or a shot or 2 of your fave brew.
  • 1/8-1/4 tsp of peppermint extract – more or less to taste
  • 1 tsp vanilla
  • 1/4-1/2 cup of ice – more or less to desired consistency.
  • * If you like a sweet brew, add 1/2-1 teaspoon of monk fruit sweetener (or sweetener of choice) to taste
  • A handful of ice
  • Optional add ins;
  • 1 Tbsp melted dark chocolate to swirl your glass – pure happiness
  • 1 tsp maca – for hormone balance
  • 1-2 scps of collagen – for gut healing goodness
  • If having for (or with) breakfast/lunch or iced in the afternoon, add 1 scoop protein powder – for extra protein ( I love Macro Mike the deluxe choc, white choc, vanilla  or mocha work really well here) – use AMB-EM to score an extra discount.
  • To Serve –
  • a dollop of whip, a cheeky shaving of dark choc & a cute little candy cane.
  • * If you want it warm, simply ditch the ice heat, blend, enjoy
  1. Instructions
  2. Place all ingredients into your blender and process until smooth, creamy and well combined. If serving hot, heat your milk first and be very careful when blending!
  3. Pour into a chilled (or warmed) glass, mug or mason jar then top with toppings of choice.
  4. Enjoy xo

Healthy {Sugar-Free} Gingerbread Latte

  • Prep Time: 5 mins
  • Persons: 1
  • Difficulty: Easy

  • Ingredients
  • For the latte –
  • 1-2 shots of your fave espresso – or 1 sachet of Before you speak high performance instant espresso (I love mocha, OG or cinnamon in the AM & the decaf mocha in the afternoon/evening) – or 1-2 teaspoons of reg instant espresso + 1/3 C water
  • 1/2 cup vanilla almond milk (or milk of choice)
  • 1 teaspoon of vanilla
  • 1 teaspoon of cinnamon – more or less to taste
  • 1/2 teaspoon of ground ginger – more or less to taste
  • A pinch each of nutmeg, all spice and cloves – more or less to taste
  • 1 Tablespoon maple syrup or sweeter  of choice more or less to taste
  • 1/4-1/2  cup of ice – more or less to desired consistency if having iced – omit if you want a hot latte
  • Optional add ins;
  • 1 Tablespoon of sugar free chocolate sauce to swirl your glass  – pure happiness
  • 1 Tablespoon of gingerbread almond butter – makes it extra lush & 10 x more festive!
  • 1/2 teaspoon Further food Turmeric Tonic – anti-inflammatory goodness!
  • 1 teaspoon of maca – for hormone balance
  • 1-2 scoops of collagen – great for hair, skin, nails & gut healing goodness
  • 1 scoop protein powder  – for extra protein ( I love using Macro Mike salted Caramel, sugar cookie or vanilla buttercream AMB-EM = 10% off if you want to try it. caramelized white choc is amazing too!
  • To Serve –
  • Whipped cream + extra cinnamon & a few shavings of dark chocolate for serving
  1. Instructions
  2. Place all ingredients into your blender and process until smooth, creamy and well combined. If serving hot, heat your milk first and be very careful when blending!
  3. Pour into a chilled (or warmed) glass, mug or mason jar then top with toppings of choice.

Chocolate-covered rum balls!

Because is it even Christmas without a cheeky rum ball (or two?!) !

If you’re my mother-in-law, the answer is no! Girlfriend is cuckoo for a Christmas rum ball!

As in, she gets all giddy like an excited little school girl as soon as she sees them appear in stores . . . in October!

The rest of us be like “umm seriously way too soon for Christmas stuff in stores?!” And girlfriend be all happy dancing and high five-ing strangers about the appearance of the rum balls! which is exactly what you’ll be doing once you taste these bad boys!

Subtly sweet, seriously chocolaty, super fudgy infused with a gentle heart & belly-warming hum (or loud rev if you prefer) of “rum”

Made with just a handful of ingredients that I bet you have on hand already & can be ready to devour in less than 20 mins & they get bonus point because they also happen to be secretly good for you! 

They are packed with protein, calcium and are rich in magnesium thanks to those deliciously buttery almonds. And, you also get a double dose of antioxidants thanks to the addition of cacao as well as that decadent, rich, dark chocolate coating! Deliciously winning on so many levels!

These all-natural, secretly healthy {non-alcoholic} chocolate-covered rum balls would make the perfect addition to your Christmas snack table or, a great little, secretly healthy, fun and festive treat to make and give to friends, family, teachers, co-workers, you name it!

Feel free to use real rum if you prefer and kick up the quantity of you want a stronger flavour but, for me this tiny amount of rum extract (just 1/2 a teaspoon) was perfect. It was subtle, not at all in your face or over-powering – just delicious.

However you choose to do it you really cant go wrong!

Choc Fudge Rum Balls

  • Prep Time: 15 mins
  • Persons: 10+
  • Difficulty: Easy

  • Ingredients
  • For the rum balls –
  • 1/2 C mixed almonds/cashews/walnuts
  • 1/2 C almond meal
  • 3/4 C pitted dates, about 6 – I used medjool*
  • 2 Tbsp of cocoa
  • 2 Tbsp almond or cashew butter
  • 1 Tbsp of vanilla extract
  • 1/2 tsp of rum extract (or a shot or 2 of the real deal)
  • 1/2 tsp instant espresso pwd
  • a pinch of salt
  • a splash (1-2 Tbsp) water (or rum) as needed – just enough to bring the ‘dough” together
  • 1 scp (30g) chocolate / vanilla (or preferred flavour) protein pwd* – optional
  • dark choc, roughly chopped
  • 1-2 Tbsp of unflavored collagen – optional – gives an extra boost of protein and is great for hair, skin, nails & gut health!
  • For the chocolate coating –
  • 1 C dark chocolate
  • 1/2 tsp instant espresso
  • Festive sprinkles
  • *you can also skip the chocolate coating & just roll in dessicated coconut, cocoa pwd or just leave them as they are.
  1. Instructions
  2. Place nuts in your food processor/blender and process until nice and fine. Remember as always you want there to still be a few little “chunks” to give the bites a little texture.
  3. Add almond dates and process until the mixture starts to come together to form a nice sticky “dough”.
  4. Add almond meal, cocoa powder, salt along with your vanilla and rum extract then process again until combined.
  5. If your dough is a little dry add a splash of water 1 teaspoon at a time until it comes together to form a delicious chocolaty dough.
  6. add chopped chocolate, if using & stir to combine.
  7. Using your hands, roll approx 1 heaping Tablespoon of the mixture into deliciously blissful bite-size pieces then set aside.
  8. Place sprinkles into a small bowl (or plate) and set aside.
  9. Melt chocolate by your preferred method then mix in the espresso and stir until dissolved.
  10. Using 2 forks, toss each bliss bite in the melted chocolate then roll in sprinkles
  11. Pop them back on the lined baking tray (and into the fridge to speed things up) until set.
  12. Store in an airtight container in the fridge until you’re ready to share in the love.

* If your dates aren’t super fresh & juicy, soak them in boiling water for 10 mins to help rehydrate them then drain & proceed

How to make sugar free salted caramel cashew butter fudge?

♦ You simply throw all of your fudge ingredients into your blender and let it do the work for you! As far as treat making goes I don’t think it gets much easier than this! And would you just look at how creamy it is and those flecks of vanilla😍

♦ Once your salted caramel cashew butter fudge is blended and looking all creamy and dreamy like, we simply pour our creamy fudge into a lined baking tray, sprinkle with some coconut flakes and then pop it in the fridge (or freezer, it’s faster) for a few hours to set.

How to store your sugar-free salted caramel cashew butter fudge?!

♦ This fudge is best stored in the fridge in an airtight container and should keep well for 2-3 weeks (but I doubt it will last that long because its soooooo yummy, we always eat ours within a few days #noegrets) however, it can also be frozen for at least 3-6 months! So, you can make a double-triple-quadruple batch so it’s ready for when the festivities begin (or the cravings strike). Look at you being all organized!

Salted Caramel Dark Chocolate Cashew Butter Fudge

  • Prep Time: 10 mins - Chill Time: 2 hrs mins
  • Persons: 16
  • Difficulty: Easy

  • Ingredients
  • For the sugar free , salted caramel cashew butter fudge –
  • 1 C natural cashew butter (just cashews + salt – or natural nut seed butter of choice)
    or 1 1/2 C of raw cashews soak in boiling water for 10 mins if using
  • 2 teaspoons of vanilla extract
  • 1/4 C Maple Syrup (I use sugar-free)
  • 1/4 C of coconut oil, melted and cooled
  • 1/2 teaspoon of salt
  • 1 Tablespoon of Macro Mike sugar free – probiotic rich – plant-based protein powder (I ♥ the salted caramel, vanilla butter cream or caramelized white chocolate in this recipe) – technically optional but makes your fudge thicker & richer & gives it a nice little nutritional boost + a hit of protein which makes me feel better about eating it for breakfast! use AMB-EM for a cheeky discount off if you want to give it a try.
  • 1 Tbsp unflavoured collagen – optional but adds an extra hit of protein & is great for hair, skin, nails & gut health!
  • For the espresso infused dark chocolate coating –
  • 1/4 cup dark chocolate
  • 1 sachet of before you speak coffee (I use the decaf mocha – EMS10=10% off if you want to try it) – or 1/2 tsp finely ground instant espresso pwd – reg or decaf
  • 3 Tablespoons of toasted coconut flakes
  1. Instructions
  2. If using raw cashews – place your cashews into a medium-size bowl and pour over enough boiling water to ensure they are fully submerged. Set aside for 20 minutes then drain and rinse.
  3. Line a small rimmed tray or loaf pan (I used a small 7 x 5 pyrex dish) with baking/parchment paper and set aside.
  4. Place your cashew butter (or nut butter of choice), coconut oil, vanilla, maple syrup, protein pwd (if using) and salt into a blender (or food processor) and process until smooth, creamy and well combined.
  5. Pour your salted caramel cashew butter into your prepared tray, spreading into one nice even layer.
  6. Sprinkle over your toasted coconut flakes and pop your fudge into the freezer for an hour or 2 (or even overnight) to set.
  7. Once your fudge has set, cut it into whatever size your pretty little heart desires. FYI – I cut mine into 16 x bite size pieces.
  8. Once cut place back into the freeze while your prepare your chocolate.
  9. Melt chocolate by your preferred method – I like to do mine double boiler style on the stove top but do what you feel.
  10. Once you have your chocolate melted and ready to go, take out your tray of fudge slices and carefully dip the bottom of each in a little melted chocolate and placing each one back onto the frosty baking sheet as you go. Continue until all your fudge has a dark and delicious chocolate coated underside.
  11. Drizzle any remaining chocolate over the top and pop your fudge back into the fridge or freezer to set and enjoy.
  12. Enjoy xo

This fudge should keep well refrigerated for 5-7 days or frozen for 3-6 months

NOTE – This fudge is quite delicate so I suggest keeping it refrigerated (or even stored in the freezer) until you are ready to serve

Spiced, salted dark chocolate peanut butter cups a fun & festive twist on my fave Halloweeen/ anytime candy {aka healthy homemade Reeses copy cat}!

I know they may not look very festive but, in my house, these pimped up PB cups are 100% essential on our Halloween snack table!

Lightly salted, perfectly spiced, vanilla infused peanut butter stuffed into in a decadent, rich, cool, crisp (espresso infused) dark chocolate cup that literally ooozzzeessss with awesomeness when you bite on in!

Halloween celebrations or not I firmly believe that every day should end with, or at least include at some point, dark chocolate & nut butter!

You with me?! Of course you are, you’re cool like that!

Lightly salted, vanilla spiked peanut butter stuffed into in a decadent, rich, cool, crisp dark chocolate cup that literally ooozzzeessss with awesomeness when you bite on in!

Dare I say, even better than the OG & I don’t mean just coz they’re made with more wholesome/better for you ingredients I mean because they truly taste all kinds of magical!

If you, like me, have a major soft spot for dark chocolate & nut butter (who doesn’t?!) then you need these in your life like, yesterday!

Alsoooooooo , just a little FYI – you mighttt want to get a jump start on these bad boyz coz tomorrow I’m sharing a very fun, and VERY festive (but still crazy simple) recipe you’re going to want in on asap & PB cups will be required!!! Yyes, you could* just buy some but, my healthy homemade pumpkin spiced peanut butter cups are at least 10 x more magical & therefore your life by extension will also be at least, 10 x more magical than if you were to use store bought. Plus, my homemade version can be ready faster than you could dash to the store & buy some & I bet you already have everything you need in your pantry already!!!!

Made with basic 4 ingredients that I bet you have on hand already (I know, I know I said that already but its def bares repeating) & can be ready to devour in just 15 mins!!

Super simple, super delicious . . .

Honestly, I don’t know what more I need to tell you.

Salted Pumpkin Spiced Dark Chocolate Peanut Butter Cups {aka a Healthy Reeses Copycat}

  • 15min
  • Makes 8-10 mini cups of deliciousness
  • Difficulty: Easy

  • Ingredients
  • For the Filling –
  • 1/4 C peanut butter
  • 1/4 tsp vanilla
  • 1-2 Tbsp powdered sweetener of choice – I love using a mix of  powdered monk fruit / icing sugar (I just buy it @ woolworths) you can use regular icing sugar or powdered stevia if you prefer & Macro Mikes white chocolate almond protein (use AMB-EM to save $$). Coconut flour works too but not as smooth (or sweet/ authentic tasting)
  • 1/4-1/2 tsp pumpkin spice (or just reg cinnamon but plzzzzz use the pumpkin spice) – measure with your ♥
  • Pch of salt
  • Optional add in
  • 1 Tbsp collagen – great for hair, skin nails & gut healing goodness
  • For the cups –
  • 1 C dark chocolate
  • 1/2 tsp finely ground instant espresso – technically opt but it really helps enhance the richness of the chocolate
    I actually use 1 sachet of Before you speak coffees – magical adrenal reset decaf mocha – you can order online @ before you speak coffee and use EMS10 = 10% off if you want to try
  1. Instructions
  2. Mix filing
  3. Melt chocolate by your preferred method
  4. Pour/spoon into choc mould or paper cupcake cases , make sure to spread some melted chocolate up the sides of each cup
  5. Chill in the freezer for 5
  6. Fill with 1-2 tsp PB filling & cover with extra melted choc
  7. Chill for 5
  8. Devour
  9. Enjoy xo

Pumpkin spice season is officially HERE and to say I am excited is a bit of a understatement!!!!

This recipe is one I’ve been making, on repeat, since the start of October & my only regret is not sharing it with you sooner. One taste and I know you’ll be just as obsessed as I am (& hopefully forgive me for taking so long to share it with you)!

I know that here in Australia, for some reason, we haven’t yet fully discovered the joy that is the pumpkin spiced latte (or pumpkin spice anything for that matter) so if you’re wondering what all the fuss is about think gingerbread meets chai but 10 x better!!!!

I’m pretty sure you can get a pumpkin spiced latte at Starbucks but, they cost a small fortune (+ they’re not exactly healthy or easily accessible for many of us)  so, what’s a girl to do when her heart aches pumpkin spiced everything yet sadly there is no pumpkin spiced anything on the cards?! Or is it in the cards!? Either way, it ain’t happening!

So, what’s a girl to do?!

She heads to the kitchen and whips up with her own deliciously simple, quick and easy, healthy homemade {sugar free} pumpkin spice coffee creamer that’s what!

Honestly, I’m not sure I can drink my coffee any other way from now on. Well, that is until we hit December 1st when gingerbread szn officially starts and you better believe I will be adding gingerbread spice to all of the things!!!! You have been warned (excited much?! I think yasss!!!)

So, it’s time to skip super expensive, sugar laden Starbucks and try my {sugar free, dairy free, low carb & vegan friendly) pumpkin spice coffee creamer recipe. Life as you know it will be changed, forever!!!

What you’ll need to make your creamy, dreamy healthy pumpkin spice coffee creamer?:

♦ Coffee (hot or iced – a double shot for me pls) +

♦ pumpkin spice mix

♦ a splash of vanilla

♦ sweetener of choice (I ♥ to use vanilla collagen which adds a hit of protein & is great for hair, skin, nails & gut health or sugar free / monk fruit maple syrup) and

♦ a pinch of flaky sea salt which elevates everything. always!.

That’s it!!!

How to make your healthy, homemade {sugar free} pumpkin spiced coffee creamer?! :

Just throw everything in to your blender & blend, blend, blend. Ok, it really only takes one quick 10 second whizz and you my friend are one step away form having the creamiest, dreamiest latte you’ll ever have!! Ever. Ever. Ever!!!!!

Well, until I introduce you to my gingerbread latte  . . .

Serve it hot, serve it iced, not a coffee drinker?! (ummm how are we friends again?! jks you know I love you) it’s also incredible on a hot (or iced) chocolate!!!

Add a little whipped cream + some extra cinnamon on top if you’re fancy (<— do it, thank me later!!).

Gluten Free – Dairy Free (if you want) – Sugar free – Low carb – Paleo – Keto – Vegan Friendly!!!

But , most importantly, it really does taste like an absolute dream  <— think spiced coffee ice cream. It’s a little cup of heart warming, soul soothing happiness and you need it in your life because, yummmmm!

Pumpkin Spice Creamer

  • Prep Time: 2 mins
  • Persons: 4+
  • Difficulty: Easy

  • Ingredients
  • 1/2 cup unsweetened vanilla almond milk (or milk of choice)
  • 1/2 cup whipping cream – I use dairy free*
  • 2-3 scoops vanilla collagen creamer **
  • 2 teaspoons vanilla extract
  • Pumpkin spice – measure with your heart
  • pinch sea salt
  1. Instructions
  2. Place all ingredients into your blender & blend until smooth, creamy & well combined.
  3. Store in the fridge in an air tight container for up to one week (I seriously doubt it will even last that long – seriously, SO good!!!!!)

Notes:

*I used loco dairy free thickened cream which I just bought at coles but, you can sub extra milk but, the cream really does make it thicker, creamer & (at least) 10 x extra lush. It’s 100% worth it in my opinion.

** or sweetener of choice – maple syrup is my go-to alternative in this recipe – I use sugar free/ monk fruit maple & its SO good in here!

This stunning yet simple heirloom tomato salad is one of my favorite side dishes of all time!!

 

Sweet, juicy heirloom tomatoes, tangy “ricotta”, flaky sea salt, drizzled with Greek ranch, a splash of balsamic & tons of fresh herbs. It’s light, delicious and the epitome of summer. The perfect accompaniment to any meal although, to be honest, Ive been known to make & eat it all on its own! Yes, it really is THAT good!

The flavour combination is seriously incredible & the texture!!! Its hearty yet light, fresh, flavourful, sweet & salty with the perfect crunch! A party in your mouth!

 

So, if you’re looking for a deliciously simple, show stopping side to add to your Festive feasting table, or just to make on a random Monday because #health , then look no further friend, this stunning yet simple heirloom tomato salad it exactly what you need!

Super simple, insanely delicious, the perfect way to elevate any meal!

Heirloom Tomato salad + Greek yogurt ranch

  • Prep Time: 5 mins
  • Persons: 4-6
  • Difficulty: Easy

  • Ingredients
  • For the tomato salad –
  • 4-6 heirloom tomatoes, sliced
  • 1 Tbsp Balsamic vinegar
  • 3-4 Tbsp Ricotta – I made my own macadamia ricotta – recipe below
    (if using store bought/plain ricotta add 1/2 tsp Garlic powder & 1/4 tsp Onion Powder + a pinch of salt & pepper)
  • Fresh basil &/or micro greens to serve
  • For the Greek yogurt ranch –
  • 1/2 cup plain greek style yogurt
  • 1 Tbsp good quality mayo – I use Gevity RX broth boosted mayo – it will change your life!
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • A sqz of fresh lemon juice (about 1/2 tsp)
  • 1/2 tsp dried dill
  • A pinch of salt & blk pepper to taste
  • 1-2 Tbsp water to thin dressing to desired consistency
  1. Instructions
  2. Make/mix your ricotta. Set aside.
  3. Make your ranch & set it aside.
  4. Arrange sliced tomatoes onto a serving plate
  5. Top your sliced tomatoes with random dollops of ricotta
  6. Finish with a drizzle of balsamic, ranch & a sprinkling of fresh herbs & a generous pinch of Spice Tub’s salad dressing mix  – or just some brown & yellow mustard seeds & a pinch of dried oregano.

Macadamia Ricotta

  • Prep Time: 10 mins
  • Persons: 1 C / 16 (1 Tbsp) serves
  • Difficulty: Easy

  • Ingredients
  • 1 1/2 Cups of raw macadamias
  • 1 Tablespoon of lemon juice (from 1/2 of 1 large lemon)
  • 1/2 teaspoon pink salt
  • 1/2 teaspoon of garlic powder
  • 2-3 Tablespoons of filtered water
  1. Instructions
  2. Place all ingredients into your food processor or blender – start with 2 Tablespoons of water and add more if needed.
  3. Process until smooth, creamy and well combined.
  4. Taste and adjust seasonings as needed. Set aside.
