Easy {gluten free} chipotle chicken enchiladas , not quite a taco but certainly worth celebrating whenever you can make them happen, please let it be today!

I planned on sharing these easy enchiladas in time for you to make to celebrate Cinco de Mayo yesterday but clearly that didn’t happen #techissues = story of my life. But, I figured I would share them regardless because;

1 – Better late than never!

2 – Mexican food is life!

3 – With all the Corona chaos going on in the world, does anyone really know what day it is anyway?!

4 – They really are life-changingly delicious and Cinco de Mayo or not, you need them in your life because, yum!

I mean, would you just look at all that flavour!!!!!!!

These easy chipotle chicken enchiladas are a perfect weeknight meal. Grab a pack of your fave tortillas (these are the tortillas I use, made with just 2 ingredients, and are hands down the best tortillas, gluten free or not, especially for enchiladas!!!)  and some leftover chicken (or a store-bought rotisserie!) then make your own 2 minute, sugar free enchilada sauce that is so incredibly easy and so incredibly flavourful, life as you know it will be changed , forever!

The whole meal comes together in a matter of minutes and leftovers (if you have any, which we rarely do) are INSANE!

I honestly don’t know why I hadn’t made these easy sugar free chipotle chicken enchiladas until this past year.  What kind of life have I been living that until recently, I had not made my own enchiladas?!

Tacos, burrito bowls, loaded Mexican baked sweet potatoes, stuffed peppers? I’m on it, but enchiladas just didn’t make the cut, that is until now. Now that I’ve cracked the code I make them pretty much weekly. My heart and belly has never been so full (both literally and figuratively).

I think the main reason I didn’t make them before was because I hadn’t found a tortilla hearty enough to hold up to the challenge. Good gluten free tortillas can be hard to find. One thing I’ve learned is that most gluten free tortillas will dissolve, disintegrate or turn to mush (and no body wants a mushy tortilla) when you try to use them for enchiladas.

Then I got a hot tip from my friend Robin (side note – if you’re not following here you might want to go do that, shes AH-MAZE-ZING so many delicious recipes not to mention kitchen/life hacks!!!) anyway, Robin suggested I use corn tortillas and also showed me the best hack ever so you can warm/soften and roll your tortillas without them tearing – don’t worry, I shared this hot tip in the recipe notes below.

Guys, I’m telling you, these easy gluten free chipotle chicken enchiladas truly are life changing!

Made with just a handful of pantry staples that I bet you have on hand already and can be on the table, ready to devour in around 30 minutes!

And they’re totally customizable!

Don’t like spicy Mexican food – skip the chipotle

Don’t eat meat – lentils , jackfruit, black beans or any beans will work like a charm in these!

Want to up your veggie intake – capsicum / peppers, mushrooms, onions and sweet potatoes would be amazing in here!

Big time cheese lover?!  Sprinkle on some of that golden goodness, as much or as little as your pretty little heart desires!!

Keto friends not into tortillas – serve them as lettuce wraps instead!

Please, please, please just promise me one thing?!  Promise me that you will make my DIY sugar free enchilada sauce. I know the thought of making your own sauce sounds a little overwhelming but I promise you it takes 2 minutes – and most of that time is dusting off your spice cabinet!

I guarantee it’s 100% worth the effort! Even if you’re not making enchiladas, you should totally make that sauce then grab a bag of tortilla chips and have at it!

Easy {Gluten Free} Chipotle Chicken Enchiladas

  • Cook Time:20 mins
  • Persons: 2-4
  • Difficulty: Easy

  • Ingredients
  • 1 1/2 cups of cooked chicken, shredded
  • 1 Tablespoon of Mexican seasoning
  • 1 cup of enchilada sauce – DIY recipe below
  • 6-8 tortillas – I use these la tortilleria corn tortillas – hands down THE best
  • For the life changing {sugar free} enchilada sauce
  • 1 cup of tomato puree
  • 2 Tablespoons of tomato paste
  • 1 Tablespoon of chipotle hot sauce – more or less to taste
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of ground cumin
  • 1 teaspoon of Gevity RX natural bone broth concentrate – optional for gut healing goodness
  • Salt and Pepper to taste
  • 1/2 teaspoon arrowroot powder – optional but makes the sauce a little thicker
  • For serving –
  • Avocado
  • Mixed Greens
  • Jalapenos
  • Greek style yoghurt
  • Extra hot sauce
  • Quick and easy homemade pico;
  • 1 cup baby tomatoes, quartered
  • 2 Tablespoons of fresh coriander/cilantro (but really measure that with your heart)
  • 1 Tablespoon of finely chopped red/purple (Spanish) onion
  • A squeeze of lime
  • A generous pinch of salt & pepper
  1. Instructions
  2. Place all ingredients for your life changing (sugar free) enchilada sauce in to your food processor or blender and process until smooth and well combined. Taste and adjust as needed. add more salt , pepper or extra spice as needed
  3. Pre-heat oven to 175’C / 350’F – lightly grease a small baking dish, spread 3 Tablespoons of enchilada sauce across the bottom of the dish and set aside.
  4. In a small bowl mix chicken, Mexican seasoning and 1/2 cup of enchilada sauce and mix to combine. Set aside.
  5. Warm/soften your tortillas – this is 100% necessary especially if using the gluten free corn tortillas it’s what helps make your tortillas pliable so you can roll them up without splitting or tearing .
  6. Place 1/3 cup of water in to a small shallow pan and heat until steaming (not boiling or simmering)
  7. Use tongs to place 1 tortilla at a time in to the warm water for 10-15 seconds until slightly softened.
  8. Remove from the water bath, then place on a sheet of paper towel (or cheesecloth) to remove excess water.
  9.  Place 2-3 Tablespoons of chicken mixture in the middle of your tortilla, then gently roll, place in to your prepared baking dish.
  10. Repeat until all tortillas have been filled.
  11.  Drizzle remaining enchilada sauce over the top of your filled tortillas and bake for 10-15 minutes until heated through and the edges of your tortillas are golden and crisp.
  12. Cheese lovers – if you want to add cheese, sprinkle on as much of that golden goodness as your pretty little heart desires, return to the oven and bake for an extra 3-5 minutes until cheese is melted and bubbling.
  13. While your enchiladas are cooking, mix up your pico.
  14. To serve –  plate them up, top with all of the things (extra avocado & hot sauce for me please)

It’s Friday again already can you believe it?!

Not only is it Friday but it’s the first Friday in May?!

Sloooowwwww down 2019!!!!!

But, here we are, another fabulous Fri-Yay is upon us and you know what that means . . .

Today I’m sharing a short, sharp total body workout that you can get in and get done in less than 20 minutes, with or without equipment, totally your call!

I’ve said it before and I’ll say it again, with the right combination of exercises you can have an awesome workout in next to no time at all, and that my friend is what we are going to do today!

Today’s workout is called full body fiesta with very good reason, although it’s made up of just a handful of familiar exercises, believe me when I say you will be feeling the burn from top to tail!

In today’s workout we are going to do 6 exercises that incorporate most of your major muscle groups, I’m talkin’ quads, glutes, hamstrings, back, lats, delts/shoulders, chest, biceps and abs/core which means you get serious bang for your workout buck!

Just because your workout is short doesn’t mean it’s not effective, trust me. When you’re done with this workout, your heart rate will be pumping, endorphin’s flowing, metabolism firing and have you feeling, strong and energized ready to take on the rest of the day!

So, here’s what we are going to do –

A descending ladder workout which simply means we will start by completing 10 reps of each exercise  (count reps per leg/side for lunges/Climbers & twists) and continue to decrease one rep, each round, until we get down to 1 , make sense?

We will do;

Curtsy Lunge
Squat
→ Lateral (side) Lunge
Burpees
Mountain Climber’s &
Russian Twists

Nothing overly complicated, basic movements done with good form for a short but effective total body workout.

I’m not allocating any specific rest breaks in today’s workout but I want you to listen to that beautiful body of yours and rest as needed.

Anytime you feel like you need to take a break to catch your breath and grab a little drink then by all means please do so, and take all the time you need. However, if possible try to wait until you get to the bottom of each round to do so but, do what you gotta do, OK?!

Catch your breath, grab a drink then get straight back into it, deal?

For those of you who are just getting started or may not have access to a gym of any kind of weights you can absolutely do with workout without any added weight and let me tell you, you will be feeling it.

Just because you’re “only” using your body-weight as resistance doesn’t not make this an easy workout. Your heart will be pumping and those quads, glutes, hamstrings, biceps, shoulders, abs – you name it,  will be burning by the final round! And, you will definitely be feeling the effects of it tomorrow I assure you (and I mean that in the best possible way).

For our fully functioning/more advanced lifters who might be looking to make things a little more challenging – grab yourself a weapon of choice – a set of dumbbells, a barbell, kettlebells, your EmPack, some resistance bands or any combination you like. Make sure you choose something appropriate for your strength but, don’t be afraid to challenge yourself.

Although, we want quality not quantity, always! Never compromise your form, ever! If your form starts to fail your done, got it?

As always make sure you are nice an warm before you start your workout – Run on the spot, do jumping jacks, jump rope, dance around your living room, anything to get you warm then it’s time to get serious.

Finish with a nice little cool down and stretch, maybe take a walk or something anything to help bring your heart rate down. Finish with a few of your fave stretches. Please don’t skip the stretch people, its like dessert for the body.

Now for our smoothie recipe . . .

In honor of upcoming Cinco De Mayo I thought we could have ourselves fun and festive, Mexican inspired smoothie today.

How does a nice, tall, light, fresh, subtly sweet, deliciously creamy, secretly healthy, blackberry mint & lime mojito shake sound?

You guys, this smoothie . . .

It’s fun, festive and just all  kinds of delicious!

Sweet juicy blackberries, zesty lime, a hint of minty freshness and a gentle hum of belly warming!

Sooooo good!

It really is just simply divine, the perfect way to treat yo’ self while you re-fuel and re-energize yourself on this fabulous Friday (or anytime really because, yummmmm)

Oh and I should probably mention that not only does our fun and festive smoothie taste like an absolute dream but, it also happens to be naturally gluten free dairy free (if you want) , refined sugar free, BANANA FREE,  (!!!) , low carb, vegan, keto and paleo friendly

Blackberry Mint & Lime Mojito Smoothie - Gluten Free - Dairy Free - BANANA FREE - Refined Sugar Free - Low Carb - Vegan - Keto - Paleo - www.betterwithcake.com

Blackberry Mint & Lime Mojito Smoothie
Makes 1 nice, tall, subtly sweet, creamy, dreamy, super smoothie

Ingredients –

1/2 cup of coconut or Greek style yogurt

1/2 cup unsweetened vanilla almond milk

1 cup of frozen blackberries

1 Tablespoon of fresh mint leaves (or 1 drop of mint oil)

1 teaspoon of freshly grated lime zest

1/2 teaspoon of rum extract

A pinch of pink salt

1/4-1/2  cup of ice – more or less to desired consistency

Optional add ins;

1/2-1 cup cauliflower or zucchini (pre-steamed & frozen works best) Keto friends sub 1/3-1/2 an avocado – a great way to get an extra (undetectable) serve of veg & make your smoothie extra thick

1 teaspoon of chia seeds – for fibre & omega 3’s

1-2 scoops of unflavored collagen – for an extra boost of protein and its great for hair, skin, nails & gut healing goodness

1 scp protein powder – for extra protein (vanilla or unflavored would work best in this recipe) .

Method –

1 – Place all smoothie ingredients into your and process until smooth, creamy and well combined.

2 – Pour into a chilled glass or mason jar then top with toppings of choice – I love to use coconut shreds & jalapenos for some extra festive flare

In honor of Cinco De Mayo (and I because I had a serious craving for a killer iced chocolate) I thought we could have ourselves fun and festive, Mexican inspired smoothie today.

How does a nice tall, light, fresh, decadent, rich, subtly sweet, seriously chocolatey, creamy. dreamy, delicious, nutritious Mexican Mudslide sound?

Did you know that research shows that cayenne pepper has been known to boost metabolism as well as support weight loss, aid digestion, promote heart health and reduce muscle and joint pain?!

Seriously, how cool is that?!

I promise this smoothie doesn’t taste spicy, that cheeky spoonful of tahini (or you could use cashew butter if you prefer) not only makes your smoothie extra creamy and all kinds of delicious but, it helps to balance out that richness of the chocolate and tones down that little kick of heat so what you’re left with is a sneaky yet powerful nutritional boost and a subtle, gentle belly warming hum of deliciousness.

It really is simply divine, the perfect way to treat yo’ self and refuel and re-energize that beautiful body of yours on this fabulous Friday.

Oh and I should probably mention that not only does our fun and festive, seriously chocolatey smoothie taste like an absolute dream but, it also happens to be vegan, dairy free and paleo friendly – so much to love I tell you ❤❤❤

Mexican Mudslide {Vegan - Dairy Free - Paleo Friendly} - www.betterwithcake.com
Mexican Mudslide
{Vegan, Dairy Free & Paleo Friendly}

Makes 1 ice cold, light, fresh, decadent, rich, subtly sweet, creamy, dreamy, delicious, nutritious, seriously chocolaty Mexican mudslide that has a cheeky little kick of heat.

Ingredients –

1/3 cup coconut or Greek style yogurt

1/2 cup vanilla almond milk (or milk of choice)

1 teaspoon of vanilla (or 4-6 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

1/2 an overripe banana (preferably pre-frozen)

1 Tablespoon of cacao

1 Tablespoon of Tahini or Cashew butter

1/8 teaspoon of cinnamon

A pinch of Cayenne pepper (more or less to taste. FYI – I used 1/2 of my 1/8th tsp)

1/2-1  cup of ice – more or less to reach desired consistency

Optional but recommended for serving –

Cacao nibs – I use actually this cacao crunch by Power Superfoods

Coconut Flakes

Chili flakes if your feeling extra fiesty

Method –

1 – Place all ingredients into a blender and process until smooth and creamy.

2 – To serve, pour into a chilled glass or mason jar and garnish with a cacao nibs, coconut and chili if desired.

Note – You could also add in a scoop of protein powder (chocolate, vanilla or unflavoured would work well in this recipe) and some great lakes gelatin for an extra boost of protein if you’re into that kinda thing – do what you feel baby 🙂

It’s Friday again already can you believe it?!

You know what that means?!

It’s time for another round of fit Friday fun!!!!

And let me tell you, we are going to have ourselves some fun today because today I’m sharing a short and sharp total body complex that you get done in less than 20 minutes!

Wait, wait, don’t let the fact that I just used the word complex put you off, I promise there is nothing complicated about this workout at all.

Let me explain –

In a complex, we simply use the same piece of equipment throughout the entire workout.

And, in general we would aim to complete one complete round of our workout before putting our chosen piece of equipment down, unless of course you need to rest.

For example –

In today’s workout we are going to do the following exercise –

Deadlift – Bent-over row – Power clean – Push press – Squat

So, if you chose to use barbell, you would do 8 reps of the deadlift, 8 x bent-over rows, 8 x  power cleans, 8 x push presses, and then 8 x squats – move from one exercise to the next without putting the bar down and then we would take a full minutes rest (or as long as you need) before we repeat the entire sequence through for a total of three rounds.

One thing you want to keep in mind is what kind of squat you want to do, if you are using a barbell and wanted to do a standard barbell back squat you would need to remember to bring the bar down behind your head so it’s in the right position for your squats.

If you were wanting to do a front squat then simply lower the bar down onto your shoulders, under your chin. The same applies if you are using dumbbells or kettlebells too.

This means you need to think about how much weight you choose to lift, most likely you can deadlift more than you can clean or press so you are going to want to scale your weight accordingly.

Does that make sense?

I’ve said it before and I’ll say it again, with the right combination of exercises you can have an awesome workout in next to no time at all, and that my friend is what we are going to do today!

In today’s workout we are going to do just 5 simple exercises that incorporate most of your major muscle groups, I’m talkin’ quads, glutes, hamstrings, back, lats, delts/shoulders, chest, biceps and abs/core which means you get serious bang for your workout buck!

Just because your workout is short doesn’t mean it’s not effective, trust me. When you’re done with this workout, your heart rate will be pumping, endorphin’s flowing, metabolism firing!

So, here’s what we are going to do –

5 basic exercises – Deadlift – Bent-over row – Power clean – Push press – Squat – we will do 8 reps of each exercise (without putting out weight down if possible) and repeat the entire sequence through for a total of 3 rounds, got it?

Nothing complicated, basic movements done with good form for a short but effective total body workout.

We will move from one exercise to the next without putting out weights down then, once we have completed all reps of each exercises we will take 1 full delicious minute of rest and recovery – catch your breath, grab a drink then we get straight back into it and repeat for a total of 3 rounds, deal?

Grab yourself a weapon of choice – a set of dumbbells, a barbell, kettlebells, some resistance bands or any combination you like. Make sure you choose something appropriate for your strength but, don’t be afraid to challenge yourself.

Although, we want quality not quantity, always! Never compromise your form, ever! If your form starts to fail your done, got it?

Take your time, concentrate, focus and breathe through each and every exercise. You are strong, you are amazing, you have big energy! You’ve totally got this!

And because nothing makes a workout challenge more fun than getting a buddy to join you. Why not grab your BFF or a family member or your fave workmate and have them join you, power in numbers baby!

As always make sure you are nice an warm before you start your workout – Run on the spot, do jumping jacks, jump rope, dance around your living room, anything to get you warm then it’s time to get serious.

Finish with a nice little cool down and stretch, maybe take a walk or something anything to help bring your heart rate down. Finish with a few of your fave stretches. Please don’t skip the stretch people, its like dessert for the body.

Now for our post workout refuel – Smoothies are a great option for your post workout refuel, they make it super easy for the body to absorb and digest those precious nutrients, they are seriously convenient, quick and easy to prepare and, a great option for those of us who don’t have much of an appetite post workout.

It’s so important to nourish and re-energize your body post workout, you want to make sure you give those muscles some fuel so that they can rebuild and repair themselves after working so hard.

In honor of Cinco De Mayo next week (plus I just have a serious craving for iced chocolate) I thought we could have ourselves fun and festive, Mexican inspired smoothie today!

How does a nice tall, light, fresh, decadent, rich, subtly sweet, delicious, nutritious Mexican Iced chocolate smoothie sound?

This bad boy is packed with protein, and low GI carbs will help refuel and re-energize that beautiful body of yours.

Plus the cheeky pinch of cayenne pepper we add into our smoothie today not only adds a deliciously subtly hum of heat to our decadent and rich, seriously intense little iced chocolate it also adds an extra nutritional boost.

Did you know that research shows that cayenne has been known to boost metabolism as well as support weight loss, aid digestion, promote heart health and reduce muscle and joint pain?!

I promise this smoothie doesn’t taste spicy, you really do just get this delicious little belly warming hum of heat – it’s so, so good!

Oh and FYI – this delicious little smoothie also happens to be vegan, dairy free and paleo friendly but, most importantly, it’s downright delicious.

Mexican Iced Chocolate {Vegan, Gluten Free & Paleo Friendly} - www.betterwithcake.com
Mexican Iced Chocolate Smoothie {Vegan, Dairy Free & Paleo Friendly}

Makes 1 ice cold, light, fresh, decadent, rich, subtly sweet, creamy, dreamy, Mexican iced chocolate with a cheeky little kick of heat.

Ingredients –

1/3 cup coconut or Greek style yogurt

1/2 cup vanilla almond milk (or milk of choice)

1 teaspoon of vanilla

1/2 an overripe banana (preferably pre-frozen)

2 Tablespoons of cacao

1/8 teaspoon of cinnamon

A pinch of Cayenne pepper (more or less to taste. FYI – I used 1/2 of my 1/8th tsp)

1/2-1  cup of ice – more or less to reach desired consistency

Optional but recommended for serving –

Cacao nibs – I use actually this cacao crunch by Power Superfoods

Shredded coconut

Chili flakes if your feeling extra fiesty

Method –

1 – Place all ingredients into a blender and process until smooth and creamy.

2 – To serve, pour into a chilled glass or mason jar and garnish with a cacao nibs, coconut and chili if desired.

You could also add in a scoop of protein powder or some Great Lakes Gelatin for an extra boost of protein if you like.

Lemon, Lime Iced Green Tea

I’m going to be totally cliche’ today and talk about how I just can not believe how fast this year is going?!

Seriously, ssssllllooooooowwwwwww ddddddoooooowwwwwnnnnnnnnnn!

How is it May already?!

I just can’t even believe it!

Tell me it’s not just me? Is this year flying past you too?

May?!

Already?!

It can’t be!

But, you know what it does mean? Cinco de mayo is next week!!!!

Holla, love me an excuse to get my mexican feast on!

Lemon, Lime Iced Green Tea

Now, because May totally snuck up on me I don’t have a traditional mexican style recipe to share with you today however, if you look back through the archives you will see I have your little fiesta well and truly covered.

Today, what I do have for you is a nice tall glass of the most amazingly simple, light and refreshing {all natural} lemon, lime iced green tea.

You guys, this iced tea is the perfect way to wash down your mexican feast. Or to quench the strongest of thirsts at any time of day really. It’s seriously so light and fresh you are going to love it!

It’s crisp, clean, cool and refreshing.

This Lemon, Lime Iced Green Tea is all natural with no artificial colours, sugars, flavours or preservatives. It’s loaded with antioxidants and research shows that green tea not only helps to boost your immunity along with your metabolism but also aids with digestion and helps to lower cholesterol and prevent cancer  – what more could you ask for?

Whip up a big ol’ pitcher of this iced tea and your cinco de mayo table will be complete my friend.

Now, if you need help planning a menu for your cinco de mayo celebration I suggest you start by serving this ah-mazing Mango Pico De gallo with a big ol’ pile of your fave corn chips. Although, if you, or someone you know is a little scared of the fruity salsa we can no longer be friends you should totally make up a big ol’ bowl of this trusty old, restaurant style salsa instead. Or as well as. Options are always a good thing to have right?

Right!

Oh and of course you need a big old mountain of this killer guacamole. I mean you can’t have a mexican fiesta without guac! That would just be wrong!

You should serve this grilled avocado and “popcorn” bean salad as entree, or this ah-mazing vegetarian chilli, or these cheesy, avocado and black bean quesadillas, or why not just have a trio of entrees and serve a little of each? Like I said, options people 😉

For Main you could serve these Mexican BLT sliders, or these Mexican Meat Loaf Muffins or for something a little lighter you could serve these spaghetti squash and black bean tacos. I mean who doesn’t love a good taco?! If there is such a person I don’t want to meet that I can tell you that much. Kidding . . . kinda 😉

For Dessert you need these lemon, lime donuts. Wholewheat, oven baked and finished with the most amazing zesty, sweet lemon lime glaze. Ugh so, so good!

And you should wash it all down with a nice tall glass of this all natural, light and refreshing Lemon, lime Iced Green tea.

I have no idea why I didn’t think to make this tea sooner it’s seriously incredible. Light and refreshing, all natural and something the whole family will love.

Anyways, go make yourself a big ol’ glass of this all natural, light, refreshing, antioxidant rich lemon, lime iced green tea.

Actually, you better make a double batch because chances are, someone will come in while you have your back turned and swipe that ice cold glass of light, fresh, delicious, liquid gold before you have a chance to enjoy it and then there will be tears and we can’t have that now can we.

Make it, Drink it, Love it

Lemon, Lime Iced Green Tea

Lemon, Lime Iced Green Tea
Makes 1 large or 2 small cool, and refreshingly naturally sweet cups of iced tea

Ingredients –

1 Green tea bag

1-2 cups of boiling water

Juice of 1/2 a lime

Juice of 1/2 a lemon

1 cup of ice

Optional –

1 – 2 sprigs of fresh Mint

1 sachet of stevia (or sweetener of choice) – optional

Method –

1 – Fill and boil your kettle

2 – Place tea bag in a large mug or heat proof jug.

3 – Pour in as much boiling water as your little heart desires

4 – Add stevia (or sugar) if using, stir to combine, then set aside to cool.

5 – Once your tea has cooled, squeeze in your lemon and lime juice  and give it a little stir

6 – Grab a nice, pretty little glass and fill it with ice

7 – Pour your cooled tea into your ice filled glass then add your sprigs of mint and get your all natural, cool and refreshing iced tea on

So I’m going to be totally cliche today and talk about the fact that I can’t even believe that it’s may already?!

Seriously, how fast is this year going?

Good bye summertime.

The mornings and evenings are getting much, much cooler which of course I love – Hello winter coats, jeans and uggs!

But May already?! I can’t believe it!

Although . . . May means Cinco De Mayo and I love an excuse to get my mexican on!

Knowing that Cinco de Mayo was coming up has had me craving mexican like a mad woman, so I have had my menu pretty much planned for this day for weeks! (←yes I am a huge nerd, ain’t no hiding it people, I am what I am)

We will be kicking off our day with these ah-mazing looking mexican pancakes , lunch will be none other than our very own Mexican BLT sliders with a side of corn chips, home made restaurant style salsa and of course mountains of guacamole! Dinner . . . I’m tossing up between this ah-mazing looking tequila and lime steak salad or this black bean and quinoa citrus salad . . . what do you think?

I do know I plan to wash it all down with several of these  festive looking beverages and to finish things off . . . we will be having donuts. Or is it doughnuts? I’m going with donuts because its easier to type. Um lazy much?!

Either way . . . they will be inhaled consumed!

I was so torn about what to make for my cinco day dessert . . . I’m not usually a fruit lovin dessert eater. Don’t get me wrong, I love fruit but when it comes to dessert . . . usually I think richer flavors . . . chocolate, vanilla . . . you know . . . the usual. But when I think if mexican food I think light and fresh so lemon and lime donuts it is and light and fresh is exactly what they are – winning!

These are kinda like a family friendly edible margarita . . . in my mind anyway . . .

These donuts are slightly sweet and almost refreshing . . . easy to eat . . . and very addictive!

Oh and the glaze . . . do not skip the glaze. Although these babies are delicious just as they are, they are like citrus spiked little sponges and soak up the glaze which if you set them in the fridge adds this awesome little crunch to the top of these super soft lemon lime deeeelicious little donuts!

Oh and if you don’t have a donut baking tray please don’t let that stop you from making these ah-mazing little treats, just use a muffin tray instead! Boomshakalocka, I told you I got your back! Now go . . . get baking 🙂

Grain Free Lemon and Lime  Donuts {baked} with Lemon Lime Glaze

Makes 16 delicious donuts

Ingredients –

1/4 cup butter or ghee, softened

2 Tablespoons of plain coconut or Greek style yoghurt

1/3 cup vanilla almond milk

2 teaspoons of vanilla extract

1 egg – vegan friends sub your fave egg replacement

zest and juice of 1 lime

zest and juice of 1 lemon

1/2 cup monk fruit sweetener (sub stevia or coconut sugar)

1 1/4 cup plain flour – I use cassava flour

1 1/2 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon of salt

For the Glaze –

1 cup powdered monk fruit sweetener (or powdered sweetener of choice)

1 Tablespoon of coconut or Greek style yoghurt

1 Tablespoon of vanilla almond milk

juice of 1/2 a lemon

juice of 1/2 a lime

Optional but recommended –

1 Tablespoon of monk fruit sweetener

zest of 1/2 lemon

zest of 1/2 lime

Method –

1 – Preheat oven to 175’C (350’F)

2 – In a medium bowl place butter/ghee,  yoghurt, milk, egg, vanilla, zest and lemon/lime juice and whisk until well combined.

3 – Sift flour, sugar, baking powder, baking soda and salt into egg/milk mixture and whisk until just combined.

4 – Pour batter into donut tray and bake for 12-15 mins, until golden and the tops spring back when lightly pressed. A toothpick should have just a few crumbs attacked when inserted into the thickest part.

5 – Allow to cool in tray for 10 mins, then transfer to a wire rack to cool completely.

6 – While your donuts are cooling prepare your citrus sugar if using. In a small bowl combine sugar and lemon/lime zest and stir to combine. Set aside.

7 – Now we make our glaze, in a small bowl sift powdered sugar.

8 – Squeeze in lemon and lime juice, add yoghurt and milk a teaspoon at a time stir until smooth. Keep adding milk until you reach your desired consistency.

9 – Dunk each donuts into the glaze and finish with a sprinkling of lemon/lime sugar . . . just because you can.
