{DATE FREE} Mix & Make Golden Spiced Bliss Bites

Makes approximately 16 subtly sweet, deliciously buttery, perfectly spiced bites of blissful deliciousness.

Ingredients –

1/2 cup almond butter

1-2 Tablespoons of maple syrup (or honey) – more or less to desired level of sweetness

1 teaspoon of vanilla extract

1/2 teaspoon of turmeric

1/2 teaspoon of ground cinnamon

1/4 teaspoon of ground ginger

1/4 teaspoon of ground nutmeg

1/4 teaspoon of ground cardamom

1/4 teaspoon of ground cloves

1/4 teaspoon of ground black pepper – this is important as the chemical compound in the black pepper is what helps and enables the body to absorb all of those incredible nutrients in the turmeric! You can’t taste the pepper, promise.

A pinch of salt

1/4 cup of coconut flour – or protein powder – see below *

2-3 Tablespoons of almond milk (or filtered water)

Optional add ins –

1 teaspoon of maca powder – For hormone balance

2 scoops of collagen ( I ♥  Vital proteins unflavored collagen peptides ) –  for gut healing goodness

* 1-2 scoops of protein powder (vanilla or unflavored would work best in this recipe) – for extra protein – I use Proganics Vanilla whey – you can use EMS10 to get 10% off

1-2 Tbsp Hemp seeds – Plant based protein, omega 3’s, vitamins, minerals & essential amino acids – I love My Hemple –  EMSWAN10 = 10% off

Optional for serving –

Cacao

Finely shredded coconut

Method –

1 – Place all ingredients into a medium size bowl and stir to combine.

Note – If the mixture is a little dry add a little extra milk or water until it comes together

2 – Taste and adjust to desired level of spice and sweetness – adding a little extra maple syrup/honey or vanilla and extra cinnamon if desired.

3 – Using your hands, roll approx 1 small Tablespoons worth of dough into bite size balls then set aside
 – FYI – I like to make my bites on the smaller side. You would probably need 3 of mine to make up one of those golf ball size bites you buy at cafe’s or in stores.

4 – If you are going to coat your bliss bites simply place your cacao & coconut into a small bowls or zip lock bags and gently press/shake until nicely coated.

Made with just 3 ingredients that I bet you have on hand already and can be ready to devour in less than 15 minutes!!

Honestly , I don’t know what more I need to tell you.

If you, like me, have a major soft spot for dark chocolate and nut butter then Easter/celebrating or not, you need these in your life like, yesterday!

Sugar Free – Gluten Free – Dairy Free – Grain Free – Low Carb – Vegan – Keto & Paleo Friendly (just sub almond butter, works like a charm)

3 ingredients + 15 minutes and you too could be devouring a dozen of these, lightly salted, vanilla spiked, chocolate coated, fun and festive peanut butter eggs.

Stop what you’re doing, this needs to happen, now!

Copycat Reese's {Dark Chocolate Peanut Butter} Eggs

  • Prep Time: 20 mins
  • Persons: 8-14
  • Difficulty: Easy

  • Ingredients
  • For the peanut butter filling –
  • 1/2 cup of peanut butter (or nut/seed butter of choice)
    * You could also sub peanut powder + enough water to make a natural PB consistency
  • 1 teaspoon of vanilla – more or less to taste
  • 3 Tablespoons of powdered sweetener or vanilla protein powder. You can also use coconut flour.
  • A pinch of flaky sea salt
  • Optional add-in;
  • 1-2 scoops of collagen – great for hair, skin, nails and gut healing goodness
  • For coating –
  • 1 cup of dark chocolate
  • 1/2 tsp finely ground instant espresso pwd (ref or decaf) – optional but SO GOOD!
  1. Instructions
  2. Line a small tray (or plate) with baking/parchment paper and set aside.
  3. Place all filling ingredients into a small bowl and stir until well combined.
  4. Taking approximately 1 Tablespoon at a time (depending on how big or small you want your egg to be) roll them into balls, then gently pinch one end to create an egg shape then  place your PB egg on to your prepared baking sheet.
  5. Repeat until all mixture has been used then place your PB egg laden tray into the fridge or freezer for 5-10 mins to chill while you prepare that dreamy chocolate coating.
  6. Melt chocolate by your preferred method.
  7. Removed chilled PB eggs from the fridge/freezer.
  8. Taking one PB egg at a time, place into melted chocolate, use 2 forks to gently toss/coat each egg, tapp off any excess melted chocolate and return to your lined tray.
  9. Repeat until all PB eggs have their deliciously indulgent, dark chocolate coating.
  10. Drizzle any remaining chocolate over your now coating PB eggs.
  11. Pop them back in to the fridge (or freezer) for 5-10 mins to set.
  12. Devour!
  13. These delicious little eggs will keep well in the fridge for several weeks but can also be stored in the freezer for 3-6 months!

Allow me to introduce you to what is soon to become your new favorite lunch or lighter style dinner.

You guys . . .

These spicy tuna, tahini and lime salad lettuce cups are so quick and easy to prepare but they are so insanely delicious, packed with so much flavor that your pretty little head may just explode!

You guys know how much I love a good lettuce wrap (see 👉🏻 here , 👉🏻 here, 👉🏻 here and 👉🏻 here ) and these bad boys are my latest obsession.

One taste and I know you will be as in love with them as I am!

Especially that light, fresh, creamy, dreamy, garlic infused, tahini and lime dressing . . . oh my word! 😍😍😍

The combination of that deliciously creamy, slightly nutty tahini combined with a pinch of garlic, a sprinkling of red pepper flakes and light. freshy, zesty squeeze of lime is absolute perfection!

I seriously want to take a bath in that dressing.

Ok maybe not, especially considering that there are red pepper flakes are involved . . . but I think you get the point!

It’s seriously good!

So good in fact, you might want to go ahead make yourself a double – triple – quadruple batch because if you’re anything like me (which I’m pretty sure you are seeings as we are food and fitness lovin’, invisible internet BFF’s and all)  you are going to want to eat it on allllll of the things! #cantstop #notsorry

It’s such a quick and easy way to add a tonne of flavor to a delicious, nutritious, 5 minute meal!

Serve them simply as they are or, for a heartier meal you cold roll it into a tortilla,  load them on to a slice or two of your favorite bread, or a couple of crackers for a quick and easy yet seriously satisfying, flavor packed lunch.

Or you could even serve them along with some light and fluffy cauliflower rice (or regular rice or quinoa if you prefer) and garlic roasted Brussels sprouts and have yourself an absolutely amazing dinner.

I personally adore them served straight up as they are, in all their unadorned, simplistic (slightly messy) glory. I love the contrast in texture and the cool, crisp freshness that those crunchy little lettuce leaves bring to the table – but play around, do what you feel just promise me you’ll make them sooner rather than later.

However you choose to eat them you really can’t go wrong!

There’s just so much much to love I tell you!

And oh how I do dearly love thee, let me count the ways . . .

1 – Our spicy tuna, tahini and lime lettuce wraps are super quick and easy to prepare, made with just a handful of ingredients that I bet you have on hand already.

2 – They are packed with protein and heart healthy fats which means that not only are they all kinds of delicious but, these pretty little lettuce cups are guaranteed to keep you feeling full and satisfied for hours on end.

3 – They also happen to be naturally gluten free, dairy free, nut free, low carb, keto and paleo friendly as well as 100% Whole30 compliant but, most importantly . . .

4 – They are insanely and I mean I N S A N E L Y delicious, seriously nutritious and something the whole family will absolutely adore!

10 ingredients, 5 minutes in the making = Deliciously winning on so many levels!

Honestly, I don’t know what else to tell you . . . please just do yourself a favor and go make them already!

All natural, quick and easy, light, fresh, sweet and spicy, creamy, dreamy, vibrant, delicious, seriously nutritious, spicy, tuna, tahini and lime salad lettuce cups . . .

Spicy Tuna, Tahini & Lime Salad Lettuce Cups
{Low Carb – Gluten Free – Keto & Paleo Friendly}

Makes (1 serving) of 2 – 3 all natural, quick and easy, light, fresh, seriously flavorful, sweet and spicy lettuce cups.

Ingredients –

For the salad –

1 large (or 2 small) cans of tuna – drained

6 baby tomatoes, quartered.

1/2 a small carrot, grated

1/4 cup red cabbage, finely shredded

For the dressing –

2 Tablespoons of tahini

1/2-1 teaspoon of garlic powder

A squeeze of lime juice (about 1/2 teaspoon)

A pinch of red pepper flakes

Salt and pepper to taste

For serving –

Baby coz or butter lettuce leaves, washed and dried

1/4-1/2 an avocado, sliced

1 small red chili, sliced

Red pepper (chili) flakes

Coriander (cilantro)

Method –

1 – Place all of the dressing ingredients into a small bowl or glass jar and stir to combine.

The dressing is quite thick so feel free to add a splash of water (about 1/2 tsp at a time) to reach desired consistency.  I usually take 1 Tablespoon of the dressing and stir it into the tuna salad mix before thinning it out. 1 – this helps the salad mix hold together nicely in my lettuce cup  and 2 – no one likes a watery tuna salad!!) then I thin it out to drizzle over the top.

FYI – you will have a little extra dressing, especially if you don’t do the extra drizzle when serving (but please do the drizzle!).

2 – Place your tuna along with 3/4 of your carrot, cabbage and tomatoes into a small and stir to combine.

3 -Add about a Tablespoon of your tahini and lime dressing into your tuna salad mix and stir to combine.

4 – To serve – Place a few slices of avocado into your prepared lettuce cups, top with your super tasty tuna salad, add the rest of your carrot, cabbage and tomato them sprinkle with fresh coriander, extra chili (or chili flakes) and drizzle over a little more of that divine tahini and lime dressing!

Golden delicious, nutrient rich almonds and some pretty little pistachios are oven roasted and blended with a generous pinch of salt to bring you a creamy, dreamy. deliciously buttery, lightly salted nut butter that is so insanely delicious that life as you know it will be changed forever!

So when those two, tasty little, worlds collide what you get is absolute, edible, awesomeness personified.

Ahhh you guys, I am so beyond excited about this delicious new collaboration. One taste and I know you are going to just love, love, love it as much as I do!

It’s thick and creamy, deliciously buttery, perfectly salted and simply divine!

What’s not to love?!

As always our healthy, homemade almond butter is made with no refined flours or sugars, using just a handful of real food ingredients that I bet you have on hand already.

No weird additives or unpronounceable ingredients – just almonds, pistachios, a cheeky pinch of salt and a whole lotta love is all you need! ❤❤❤

And, once you’ve roasted those golden delicious, nutrient rich almonds and pretty little pistachios you’re divine little jar of edible awesomeness comes together in a matter of minutes!

So much to love I tell you, and love it you will!

Oh and FYI – this pretty little jar of salted, roasted pistachio almond butter also happens to be naturally vegan, gluten free, dairy free, paleo friendly and whole30 compliant but, most importantly, it’s seriously delicious and you need it in your life like, yesterday!

Roasted Pistachio Almond Butter
{Vegan, Gluten Free & Paleo Friendly}

Makes approx 2 1/2 cups All natural, quick and easy, creamy, dreamy, velvety smooth, lightly salted, healthy, homemade, roasted pistachio almond butter

Ingredients –

2  cup of raw almonds

1  cup of pistachios, shelled

1/2 (heaping) teaspoon of salt flakes

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) then add your almonds and pistachios, making sure they are spread evenly – aka not crowded.

3 – Roast your nuts for 7-10 minutes, until gloriously golden, deliciously fragrant and lightly toasted.

4 – Pour your golden, delicious roasted nuts into the bowl of your food processor or blender, add salt and process until smooth and creamy (or your desired consistency). Initially the almonds would grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Once you have blended to your desired consistency have a cheeky taste test (or two) and adjust seasoning as needed.

Note – If you prefer a thinner consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – but I highly doubt it will last that long! (← seriously, good luck with that 😉 )

Chocolate chai spiced chia pudding!!!!!

Try saying that 10 times fast?!

I don’t know if it’s because the weather is getting cooler as we head into winter here in Sydney but, for some reason I find myself seriously craving all things chai!

I just can’t seem to get enough.

So in an attempt to satisfy my never ending craving for chai (and chocolate) I thought I would make myself a delicious little pudding cup.

Because who doesn’t love a good pudding cup (and chocolate) am I right?!

And, ummmm, you guys . . .

Best idea, ever!

This chocolate chai spiced chia pudding is seriously, incredible!

It’s decadent, rich, subtly sweet, deliciously indulgent and seriously chocolatey with the perfect hum of chai inspired spices.

So, SO good!

And, you know what makes it even better?!

The fact that it also happens to be seriously (and I mean S E R I O U S L Y ) good for you!

It’s made with no refined flours or sugars, sweetened naturally with just a splash of vanilla and those chai inspired spices.

Also, because I’ve used coconut yogurt and vanilla almond milk in our base it also happens to be 100% dairy free, vegan, gluten free and paleo friendly!

And then there’s all those incredible health benefits that those cheeky little chia seeds bring to the party – It’s rich in antioxidants, packed with protein, high in calcium, fiber, magnesium and those all important omega 3’s!

Super-food say whaaaaatttt?!

So much to love I tell you and love it you will!

This pudding would make the perfect little, deliciously indulgent, late night dessert but, it’s also light enough to enjoy for breakfast especially if you serve it with some coconut yogurt, a sprinkling of this cranberry and coconut {grain free} granola and a giant vat cup of coffee, of course.

Chocolate pudding for breakfast = winning!!!

It also makes a killer post workout (or anytime) snack.

I mean would you just look at it?!

Swoon!!

Those of you who have been following along for a while now may recall that I have some weird, texture issues with straight up chia pudding. Same goes for porridge/oatmeal.  As much as I want to, I just can’t do it which is why I always end up blending it. That way it gets thick, creamy, velvety smooth and all kinds of delicious! Texture issues be gone baby!

So, if you don’t have the same texture issues that I do you can go ahead and skip the blending stage. It’s totally up to you, 100% your call. Blending it doesn’t change the flavor of our pudding so go ahead and do what you feel, just promise me you’ll make it, and soon, OK?!

All natural, quick and easy, creamy, dreamy, velvety smooth, decadent and rich, seriously chocolaty, perfectly spiced, secretly healthy chocolate chai spiced chia pudding . . .

Chocolate Chai Spiced Chia Pudding
{Vegan, Dairy Free & Paleo Friendly
Makes approx 2 serves of all natural, thick and creamy, decadent, rich, velvety smooth,  seriously chocolatey, secretly healthy, perfectly spiced chia pudding

Ingredients –

1/4 cup of coconut yogurt (or Greek style yogurt)

1/3 cup unsweetened vanilla almond milk (or milk of choice)

3 Tablespoons of  chia seeds

1 Tablespoon of cacao

1 teaspoon of vanilla extract or 4-6 drops of Vanilla Cream Stevia – I use Sweet Leaf Stevia

1/2 teaspoon of ground cinnamon

1 pinch of nutmeg –  I used 1/2 of my 1/8th teaspoon

1 pinch of cardamom –  I used 1/2 of my 1/8th teaspoon

1 pinch of cloves –  I used 1/2 of my 1/8th teaspoon

1/4 teaspoon of espresso – optional

A pinch of salt

Optional but recommended for serving;

1 teaspoon of shredded dark chocolate  (or cacao nibs)

Coconut yogurt (or yogurt of choice)

Chia seeds

Method –

1 – Place all pudding ingredients into a small bowl or jug and stir to combine.

2 – Cover and refrigerate for at least 4 hours, (or overnight). Make sure you go and give it a little stir every now and again to remove any lumps and just to make sure those cheeky little chia seeds haven’t settled at the bottom of the bowl.

3 – Once your pudding is nice and thick, place the mixture into your food processor or blender and process until smooth and creamy. If you don’t have texture issues like me you can skip this step and simply stir and serve as is.

Taste and adjust sweetness if necessary, you could add a little maple syrup, honey or some extra stevia/vanilla if you like your pudding on the sweeter side.

4 – Pour your pudding mixture into cute little cups or bowls and place it back in the fridge for at least 30 minutes chill and re-set before serving (it gets a little warm and the consistency thins out with the friction created while blending).

6 – To serve, top with coconut yogurt (or yogurt of choice),if using, sprinkle with chocolate (or cacao nibs) and some extra cheeky chia seeds if desired.

Deliciously simple, decadent, rich, healthy, homemade mocha chia spiced almond butter . . .

You guys . . .

So much deliciousness your pretty little head may just explode!!!!

Gloriously golden, nutrient rich almonds are oven roasted then blended with a splash of vanilla, a cheeky pinch of salt, a combination of chai inspired spices (think cinnamon, nutmeg, cardamom and cloves) , a sprinkling of cacao and a gentle hum espresso.

I know I say it about all the nut butters that we make but you guys . . . this mocha chai spiced almond butter is so insanely delicious that one taste and life as you know it will be changed forever!

The subtle sweetness of vanilla combined with those creamy, dreamy, buttery almonds, that  heart warming hum of chai inspired spices, the decadent, richness of the cacao and that gentle hum of espresso . . .

You guys . . . I can’t even . . .

It’s decadent and rich, subtly sweet, deliciously indulgent, seriously chocolaty and simply divine!

For the coffee haters out there;

1 – Tell me again why we’re friends?! Just kidding, kinda, you know I love you 😘😘😘

2 – Please don’t be put of by the fact that this almond butter has espresso in it. I personally don’t think it has a strong coffee flavor (although you could certainly ramp things up if you wanted) the coffee seems to just enhance the richness of the chocolate more than anything.

Trust me, that leetle touch of espresso brings an element of depth and richness to this little jar of heaven that takes our latest batch of healthy, homemade almond butter to a whole new level!

Seriously, just trust me on this, I would never steer you wrong. ❤❤❤

Healthy, Homemade Mocha Chai Spiced Almond Butter
{Vegan, Gluten Free & Paleo Friendly}

Makes approx 1 1/2 heaping cups of all natural, quick and easy, creamy, dreamy, decadent, rich, delicious, nutritious, perfectly spiced, espresso infused, healthy, homemade chocolate, chai spiced almond butter

Ingredients –

2 cup of raw almonds

1 Tablespoon of vanilla extract (or 8-10 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

1 Tablespoon cacao

1 teaspoon of instant espresso

1 teaspoon of ground cinnamon

1/4 teaspoon of ground nutmeg

1/4 teaspoon of cloves

1/4 teaspoon of cardamom

Well these are kind of like that.

But in cute little cups instead of spheres.

FYI – They also happen to be way better for you too – these babies are made with no refined flours or sugars with just 3 real food ingredients that I bet you have on hand already.

They also happen to be naturally gluten free and paleo friendly and could easily be made vegan depending on what kind of chocolate chips you use but, most importantly, they are taste like an absolute dream!

They are decadent, rich and deliciously indulgent without being overly sweet.

Just quickly before you go, I used my healthy, homemade chocolate hazelnut almond butter to fill these babies and I strongly (STRONGLY) suggest you do the same but, that being said,  any kind will work here so feel free to sub in your favorite, just do yourself a favor and promise me you’ll make them!

Serve them simply as they are with a sprinkling of flaky sea salt or if you’re feeling fancy top them with a couple of extra hazelnuts.

However you choose to do it, you really can’t go wrong because, again, chocolate!!!!!

All natural, quick and easy, deliciously simple, seriously indulgent, decadent and rich, cool crisp, salted dark chocolate cups, stuffed with creamy, dreamy, healthy, homemade, chocolate hazelnut almond butter.

Healthy, Homemade, 3 Ingredient – Salted Dark Chocolate Hazelnut Almond Butter Cups {Vegan, Gluten Free & Paleo Friendly}

Makes 12-14 Deliciously simple, seriously indulgent, decadent and rich, salted dark chocolate cups stuffed with creamy, dreamy, chocolate hazelnut almond butter

Ingredients –

1/3 cup of healthy, homemade, chocolate hazelnut almond butter

*  You could always use a pre-made/store bought chocolate hazelnut butter in place of the homemade if you prefer – I suggest Mayver’sJustin’s or Buff Bake if you want to add a cheeky hit of protein

1/2 cup of good quality dark chocolate chips

1 Tablespoon of flaky sea salt

Method –

1 – Melt chocolate by your preferred method. I like to do mine broiler style by placing my chocolate in a small bowl  over a pot of simmering water.

2 – Use a teaspoon to drizzle some melted chocolate into a chocolate mold (or can use mini paper or silicone cupcake/muffin cases if you prefer) and spread to coat evenly. Don’t use all your chocolate, remember you want to save about 1/4 of it to spread on top once our chocolate cups are filled.

3 – Place your chocolate cups in the fridge or freezer to set.

4 – Once set, remove  your chocolate cups from the fridge or freezer, fill each chocolate cup with a spoonful of your chocolate hazelnut almond butter, then use the back of your spoon carefully smooth out the top and firmly but gently press the filling down into the chocolate cups.

5 – Once all your cups are filled with creamy, dreamy chocolate hazelnut almond butter, top with a little extra chocolate, smooth it all the way to the edges to the filling is completely covered then sprinkle with salt  and place them back into the fridge (or freezer) to set.

These delicious little cups will keep well in the fridge for several weeks but can also be stored in the freezer for 3-6 months!
