{DATE FREE} Mix & Make Golden Spiced Bliss Bites

Makes approximately 16 subtly sweet, deliciously buttery, perfectly spiced bites of blissful deliciousness.

Ingredients –

1/2 cup almond butter

1-2 Tablespoons of maple syrup (or honey) – more or less to desired level of sweetness

1 teaspoon of vanilla extract

1/2 teaspoon of turmeric

1/2 teaspoon of ground cinnamon

1/4 teaspoon of ground ginger

1/4 teaspoon of ground nutmeg

1/4 teaspoon of ground cardamom

1/4 teaspoon of ground cloves

1/4 teaspoon of ground black pepper – this is important as the chemical compound in the black pepper is what helps and enables the body to absorb all of those incredible nutrients in the turmeric! You can’t taste the pepper, promise.

A pinch of salt

1/4 cup of coconut flour – or protein powder – see below *

2-3 Tablespoons of almond milk (or filtered water)

Optional add ins –

1 teaspoon of maca powder – For hormone balance

2 scoops of collagen ( I ♥  Vital proteins unflavored collagen peptides ) –  for gut healing goodness

* 1-2 scoops of protein powder (vanilla or unflavored would work best in this recipe) – for extra protein – I use Proganics Vanilla whey – you can use EMS10 to get 10% off

1-2 Tbsp Hemp seeds – Plant based protein, omega 3’s, vitamins, minerals & essential amino acids – I love My Hemple –  EMSWAN10 = 10% off

Optional for serving –

Cacao

Finely shredded coconut

Method –

1 – Place all ingredients into a medium size bowl and stir to combine.

Note – If the mixture is a little dry add a little extra milk or water until it comes together

2 – Taste and adjust to desired level of spice and sweetness – adding a little extra maple syrup/honey or vanilla and extra cinnamon if desired.

3 – Using your hands, roll approx 1 small Tablespoons worth of dough into bite size balls then set aside
 – FYI – I like to make my bites on the smaller side. You would probably need 3 of mine to make up one of those golf ball size bites you buy at cafe’s or in stores.

4 – If you are going to coat your bliss bites simply place your cacao & coconut into a small bowls or zip lock bags and gently press/shake until nicely coated.

No Bake {Date Free} Chai Spiced Blondie Bites with Raw Dark Chocolate Espresso Frosting

{Vegan, Gluten Free, Dairy Free, Sugar Free, Keto & Paleo Friendly}

Makes approx 16 –  All natural, quick and easy, subtly sweet, deliciously buttery, soft and chewy, perfectly spiced, DATE FREE blondie bites – no baking required!!!

Ingredients –

2 Tablespoons of Almond Butter
2 Tablespoons of coconut butter( or coconut oil/ghee)
2 teaspoons of vanilla
1 Tablespoon of healthy, homemade chai spice mix – more or less to taste – I like mine spicy so feel free to adjust accordingly
1/3 cup of almond flour
1 Tablespoon of coconut flour
1 pinch of salt
1 Tablespoon of almond milk (or milk of choice)

For a sweeter blondie – add 1 teaspoon of honey or maple syrup

Optional add-ins ;
1 teaspoon of maca – for hormone balance
1-2 scoops of Vital proteins unflavored collagen peptides optional for an extra boost of protein and gut healing goodness – omit if vegan (or sub marine collage if pescatarian)
1 scp protein powder – for extra protein – I use Proganics Vanilla whey – you can use EMS10 to get 10% off

For the “optional” Dark Chocolate Espresso Ganache  –

1/2 cup (solid) coconut cream – to get this I opened a can of coconut cream and let it sit, uncovered, in the fridge overnight then scooped the solid creamy portion from the top (use the liquid in smoothies or just drink it) – you can skip this step and scoop the cream straight from the can but I find it’s more luscious and creamy if you chill it over night first – either way it’s delicious.
1/2 cup dark chocolate
1 teaspoon of vanilla
1/2-1 teaspoon of espresso – depending on how strong you like it
1 pinch of salt

Method –

Step 1 – the night before – Open a can of coconut cream and let it sit, uncovered, in the fridge overnight this will allow the cream to separate from the water. When you’re ready to go scoop the solid creamy portion from the top (use the liquid in smoothies or just drink it or freeze into ice cubes for later use)

2 – Line a mini cupcake tray with paper cases and set aside (or you could line a mini loaf pan or baking dish if you prefer)

3 – Place all blondie ingredients into a bowl and stir to combine.

4 – Press approx 1 heaping Tablespoon of blondie mix into each cupcake case, use a spoon (or just your fingers) to firmly press it down so it’s nice and flat – or you can press it in to a loaf pan/baking dish then slice and serve.

4 – Pop it into the fridge for 20 mins (or freezer for 5) until firm.

For the ganache –

1 – Melt chocolate by your preferred method – I like to do mine on the stove, double broiler style but a microwave will work just fine too.

2 – Add espresso, vanilla, salt & stir to combine.

3 – Add the coconut cream to your espresso infused chocolate and stir until well combined.

4 – To serve – spread your blondie bites with ganache sprinkle with sea salt & an extra dusting of chai if desired.

Note – this bites are best  kept refrigerated and served chilled. They  will keep well refrigerated for 7-10 days ,although I highly doubt it will last that long, and can be frozen for 3-6 months.

Honestly, as far as recipes go it doesn’t get much easier than this  . . .

1 – First we toast our nuts – which is actually optional but highly recommended – I’ve made these fudge bites with both toasted and un-toasted and either way they are super yummy but , toasting the nuts first makes them next level delicious, if you ask me it’s worth the extra 5-10 minutes, but you do you!

2 – Throw em’ into your food processor or blender with some nut butter, coconut oil, vanilla and spices

Pretty sure we have all previously agreed that a drizzle of chocolate (or chocolate in any way, shape of form) really does just make everything better . . .

6 ingredients, 10 minutes in the making . . .

Date Free Chai Spiced Nut Butter Fudge Bites
{Sugar Free – Gluten Free – Dairy Free – Low Carb – Vegan – Keto – Paleo }

Makes approx 16 subtly sweet, deliciously buttery, perfectly spiced fudge bites

Ingredients –

1 1/4 Cups of mixed nuts – I used a mix of cashews, almonds, pecans, hazelnuts, walnuts & Brazil nuts.

3 Tablespoons of your fave nut/seed butter

2 Tablespoons of coconut butter/oil

2 teaspoons of vanilla

2 teaspoons of chai spice mix or;

1 Tablespoon of coconut flour

Optional add-ins ;
1 teaspoon of maca – for hormone balance

1-2 scoops of Vital proteins unflavored collagen peptides – for an extra boost of protein and gut healing goodness
1 scp protein powder – for extra protein (vanilla or unflavored would work best in this recipe) – I use Proganics Vanilla whey – you can use EMS10 to get 10% off

Up to 1 Tablespoon of MCT oil – brain boosting energy

Optional for serving –
Good quality dark chocolate
Flaky sea salt

Method –

1 – Optional step – toast nuts for 5-10mins 175’C/350’F – or throw them into a dry frypan/skillet and shake frequently for 5-10 mins until fragrant

2 – Place all ingredients into your food processor and blend until it comes together to form a dough ( 🚫 keep an eye on it, if you blend for to long you’ll end up with nut butter which, will still be delicious but, is not what we want to make these amaze-balls)

* Note – if you feel like your batter is a little dry add a splash or two of almond, 1 teaspoon at a time to reach desired/rollable consistency.

You may also want to pop them in the fridge to chill for 5 minutes before rolling, this makes them a little easier to shape.

3 – Roll into balls (I got 16 using 1 Tbsp for each) and freeze for 30-45 mins until firm

4 – Once set, drizzle with melted chocolate and sprinkle with a flaky sea salt, if using

5 – Devour!

These bad boys are need to be kept refrigerated – I actually keep (and eat) mine in the freezer – they will keep well in an airtight container or stasher bag for 3-6 months, if not longer!

In all honesty, I have been wanting to make this recipe for quite sometime now but, for some reason or another I just hadn’t quite got around to it. But, I figured with St Patrick’s Day coming up this weekend (you know, because they’re green?! #anyexcuse) plus, I somehow managed to have a spare 5 minutes AND everything I needed within arms reach, now was the perfect time!

3 Ingredient Dark Chocolate Matcha Coconut Butter Cups
{Vegan, Gluten Free, Dairy Free, Sugar Free, Keto & Paleo Friendly}

Makes 8-10 Deliciously simple, subtly sweet, buttery smooth, seriously indulgent, matcha infused, dark chocolate, coconut butter cups that are as nutritious as they are delicious! Something you’ll really want to sink your teeth into

Ingredients –

1/2 cup of your fave dark chocolate (or you can make your own)

3 Tablespoons of coconut butter , melted and cooled

1 teaspoon of matcha green tea powder

1 teaspoon of vanilla (or 4-6 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

A pinch of salt

1 scoop of  Vital proteins unflavored collagen peptides – optional for an extra dose of protein and gut healing goodness

Method –

1 – Melt the chocolate by your preferred method. I like to place my chocolate onto a small plate or bowl and sit it over a pot of gently simmering water, stirring occasionally until nice and melted.

2 – Once melted, use a teaspoon to drizzle some melted chocolate into a chocolate mold (or can use mini paper or silicone cupcake/muffin cases if you prefer) and spread to coat evenly. Don’t use all your chocolate, remember you want to save about 1/4 of it to spread on top once your chocolate cups are filled.

3 – Place your chocolate cups in the fridge or freezer to set.

4 – While your chocolate cups are setting, place your malted coconut butter in to  a small bowl add the matcha and vanilla and stir to combine.

Once that’s done your chocolate cups should be set, ready to be filled.

5 – Fill each chocolate cup with about a teaspoon of your matcha coconut butter, use the back of your spoon carefully press down and smooth it out – gently but firmly  pressing down as you go.

Repeat until all your chocolate cups have been filled.

6 – Once filled, drizzle each cup with a little of your left over chocolate, then pop them back into the fridge (or freezer) to set.

7 – To serve, sprinkle with a touch of flakey, pink Himalayan sea salt and enjoy.

These delicious little cups are best stored in the fridge or freezer will keep well in a sealed, airtight container the fridge for several weeks (if they last that long, mine never do!)  but, they can also be stored in the freezer for at least 3-6 months!

3 Ingredient Dark Chocolate Strawberry Coconut Butter Fudge Bites
{Vegan, Gluten Free, Sugar Free, Keto & Paleo Friendly}

Makes 10-12 Deliciously simple, subtly sweet, buttery smooth, seriously indulgent, dark chocolate strawberry coconut butter fudge bites that you’ll really want to sink your teeth into

Ingredients –

1 cup of coconut butter – or you can make your own simply by blending 1 1/2 cups of unsweetened coconut flakes

1/2 cup of freeze dried strawberries

1 Tablespoon of cacao

1 teaspoon of vanilla (or 4-6 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

A pinch of salt

Optional –  1 vital proteins collagen peptides (use the code NHN329 to get 10% off )

Method –

1 – Place 1/2 a cup of your coconut butter, plus 2 drops of vanilla stevia (or 1/2 tsp of vanilla extract) into a bowl, add cacao and collagen, if using, stir to combine.

If you find your coconut butter is a little to solid to work with, you can melt/soften it by placing it in a microwave for 15-20 seconds or place the bowl over a pot of simmering water for a minute or two.

2 – Use a teaspoon to scoop your chocolate coconut butter into a chocolate mold (or you can just use mini paper or silicone cupcake/muffin cases if you prefer) and gently tap on the counter to help smooth out the fudge into a nice even layer and remove any air bubbles.

Note – You can use all the chocolate coconut butter here or save a 1/4 of it to spread on top to finished your fudge. Totally up to you – I like to have some with chocolate on top and some without.

3 – Place in the fridge or freezer to set.

4 – Now onto the strawberry layer.

Place your freeze dried strawberries into a food processor or blender and process into a fine powder (or you can just crumble them up by hand)

5 – Place 1/4 cup of the remaining coconut butter into a small bowl, add 1-2 drops of vanilla stevia (or 1/4 tsp of vanilla) and your strawberry powder and stir to combine.

6 – Now, take your chocolate fudge out of the fridge or freezer (they should be nice and set by now), top each chocolate cup with 1/2 a tsp of your strawberry coconut butter, then use the back of your spoon carefully smooth out the top and firmly but gently press the filling down into the chocolate cups.

7 – Once all your cups are topped with their pretty pink strawberry coconut butter, you need to pop them back into the fridge or freeze for 5 mins to set before adding that final, vanilla layer.

8 – While your strawberry layer is firming up, stir remaining 1-2 drops of stevia (or 1/4 tsp vanilla) into the last of the coconut butter and stir to combine.

9 – Spoon 1/2 a tsp of vanilla coconut butter on top of each strawberry layer and voila’ done. Unless you want to add a final chocolate layer . . . then you’ll need to repeat the chill-spread process one last time.

These delicious little cups are best stored in the fridge or freezer will keep well in a sealed, airtight container the fridge for several weeks (if they last that long, mine never do!)  but, they can also be stored in the freezer for 3-6 months!

Ahhh you guys I am so, SO excited to share this recipe with you today because;

1 – Hello chocolate,

need I say more?!

2 – Making my own chocolate fudge is something I’ve been wanting to do for a long, long, loooonnnngggg time but, for some reason I built it up in my mind to be this be complicated ordeal that required specialist equipment (think Bunsen burners, thermometers, protective eye equipment and lab coats) but you guys . . . I could not have been more wrong!

Making your own chocolate fudge is so ridiculously easy, I’m kicking myself for not trying it sooner.

Honestly, the hardest part about making this fudge is having the patience to wait for it to set! That in itself just takes 10-15 minutes if you pop it in the freezer but still, #thestruggleisreal

Trust me, as far as recipes go, it doesn’t get much easier than this!

Just 5 ingredients – cacao butter, cacao, tahini, vanilla, a pinch of salt and sprinkling of instant espresso which which is totally optional (but highly recommended). I find adding a touch of espresso really helps to elevate, enhance and intensify the richness of the chocolate 🙌🏻🙌🏻🙌🏻

5 minutes in the making –  melt, stir, set, eat!

Yes, it really is that easy!

No reason to be scared or intimidated in the slightest, you can (and should!!) totally do this!  👏🏻👏🏻👏🏻

Now, I should warn you . . . this deliciously simple, secretly healthy dark chocolate fudge that we’re making today is not for the faint of heart, it’s decadent and rich, deliciously indulgent and seriously, and I mean
S E R I O U S L Y, intensely chocolaty.

A dark chocolate lovers dream!

For those of you who prefer your chocolate on the sweeter side feel free to bump up the amount of vanilla you use, or you could go ahead and add in a drizzle of maple syrup or honey if you prefer – the trick is to taste as you go and customize as needed.

That’s another thing I love about making your own homemade treats – not only is it a lot better for you ( our fudge is made with no refined flours, sugars, weird fillers or unpronounceable ingredients)  and it’s 100% customizable.

Don’t like tahini  you crazy thing use in sunbutter (sunflower seed butter) instead?! Or, feel free to go ahead and sub in your fave nut butter – I bet almond, cashew or macadamia butter would work really well here in place of the tahini but keep in mind it would no longer be nut free and, it would also alter the flavor. I have no doubt it would still be absolutely delicious, just different is all. (I personally love that subtle, sweet nuttiness that tahini leaves lingering on your palate) but play around, have some fun and make it just the way you like it!

And, not only is our dark chocolate fudge much healthier and totally customizable but, I think our healthy, homemade fudge tastes a million times better than just about anything you’d buy from the store.

One taste and I think you’ll agree.

Just in case you need a little more convincing . . . this deliciously simple, dark chocolate fudge we’re making is not only seriously yummy but, it’s also packed with nutritional value!

Dark Chocolate Tahini Fudge Bites
{Dairy Free – Sugar Free – Gluten Free –
Vegan – Keto & Paleo}

Makes approx 16 deliciously indulgent, decadent and rich, seriously chocolaty, tiny but mighty, dark chocolate tahini fudge bites.

Ingredients –

1/4 cup cacao butter

1/4 cup cacao

1/4 cup tahini

2 teaspoons of vanilla extract (or 10-12 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

1/4 teaspoon instant espresso – optional but recommended

1-2 scoops of Vital proteins unflavored collagen peptides – optional for an extra boost of protein and gut healing goodness

1 pinch of salt + extra for serving

Method –

1 – Place cacao butter into a medium size bowl and melt by your preferred method. I like to do mine on the stove top, double boiler style, by placing the bowl on top of saucepan filled with just a few inches of water.

2 – Once your cacao butter has melted, add remaining ingredients and stir until smooth and well combined.

3 – Pour (or spoon) your melted fudge mixture into a chocolate mould tray (or you could just place some paper cupcake cases on to a baking sheet, or use a mini muffin tray instead)

4 – Place into the fridge or freezer to set.

5 – Once set, sprinkle with a little sea salt and voila’

Note – These beauties are best stored in the fridge (or freezer) as they tend to soften in warmer temperatures
