So, if you are looking for a simple but delicious, healthier, homemade version of traditional Anzac biscuits then look no further.

These Anzac biscuits are golden and crisp on the outside and deliciously chewy on the inside.

They are super simple to make, made with just a handful of ingredients that I bet you have on hand already and come together in about 20 minutes – even when you have little hands/helpers involved ♥

This recipe is a much loved family favorite and one that we traditionally make in honor of Anzac day each and every year. It’s a much loved classic that holds a special place in our hearts and hope you enjoy it as much as we do.

Healthy, homemade ANZAC biscuits

  • Cook Time: 15 mins
  • Persons: 6-10
  • Difficulty: Easy

  • Ingredients
  • 1/2 C rolled oats (Use gluten-free if sensitive, you could also sub quinoa flakes if you prefer to make paleo-friendly)
  • 1/3 C shredded (desiccated) coconut
  • 1/2 C  flour (use gluten-free if sensitive – paleo friends – sub almond flour – cassava flour or Bob’s Red Mills paleo baking blend )
  • 1/2 tsp Bicarbonate of soda – aka baking soda
  • 1/4 C monk fruit sweetener (I love using the golden for that hint of molasses/caramel – or coconut sugar or reg brown sugar)
  • 2 Tbsp butter/ghee or coconut oil
  • 1 Tbsp maple syrup – I use sugar free
  • 1 Tbsp boiling water
  1. Instructions
  2. Line a baking tray with baking/parchment paper (or a silpat mat) and set aside.
  3. Preheat oven to 150’C (300’F)
  4. Place oats, coconut, flour and sugar into a medium size bowl and stir to combine. Set aside.
  5. Place butter into a small saucepan over low heat, add maple syrup and allow to melt.
  6. Remove melted butter/maple syrup mix from heat and add baking soda, then boiling water and stir to combine and pour immediately into your oat/flour mix and stir to combine.
  7. Spoon a heaping scoop of batter into your hands and shape into rounds then place onto prepared baking sheet. Repeat until all batter has been used (we usually get 8-10).
  8. Bake for approx 8-10 minutes, until golden.
  9. Enjoy xo

No-Bake Anzac Biscuits {Vegan, Gluten Free & Paleo Friendly}
Makes approx 12 All natural, soft and chewy Anzac biscuits – no baking required!

Ingredients –

1/2 cup cashews (I used raw, unsalted)

1/2 cup almonds (I used raw, unsalted)

6 large medjool dates, pits removed

1 teaspoon of maple syrup

1/2 teaspoon of vanilla extract

3 Tablespoons of shredded coconut

a generous pinch of salt flakes

Method –

* Before you get started – If your dates are a little dry, I suggest you pop them into a small bowl or jug and pour over enough boiling water so they are completely submerged. Set aside for 5 minutes while you get your food processor out and gather up the rest of your ingredients and then when your ready simply pour out the water and proceed with the recipe as normal.

1 – Place cashews and almonds into your food processor/blender and pulse until the nuts break down to resemble a fine crumb, you want there to still be a few bigger chunks to give the biscuits some nice texture.

2 – Add dates, maple syrup, vanilla and salt then process until the mixture starts to come together into a sticky “dough”.

3 – Add coconut and pulse just to combine.

4 – Transfer the dough to a chopping board and press and roll into a nice and even log shape.

5 – Slice the dough onto 12 rounds and then roll and press each round into whatever size and thickness you would like your biscuits to be and set aside. Repeat until all “dough” has been used.

6 – Due to the soft nature of these biscuits it’s best to keep them in the fridge until your ready to serve as they can get soft and tacky in warm and humid conditions

* These biscuits will keep well stored in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.
