Lovely Lemon & Poppyseed muffins! A wonderful little palette cleanser after allllll the deliciously indulgent Christmas treats (I regret nothing ♥) !

To say I am obsessed with these adorable little muffins is a bit of an understatement. I may or may not have made them 3 x in 2 weeks (I totally did!) and each time I make them I feel like I fall more & more in love with them!

Subtly sweet, soft and tender with the perfect hit of light, fresh, zesty, lemony deliciousness!

Hear me when I say, you neeeeeed in on this.

Made with no refined flour or sugar using just a handful of ingredients that I bet you have on hand already and come together in 1 bowl with 1 spoon and can be ready to devour in less than 20 minutes!

Gluten free – Dairy free – Grain Free – Refined Sugar free – Low Carb  – Paleo – Keto – Vegan friendly – but most importantly they really are downright delicious and you need them in your life because, yum!

Super simple, seriously delicious and 100% worthy of their title.

Subtly sweet, soft, tender & bursting with deliciousness. They’re practically perfect in every way!

I hope you love them as much as I do which just in case you missed it, is A LOT!

FYI – these make THE PERFECT make-ahead grab & go breakfast  or morning/ afternoon treat for busy days! They are 100% freezer friendly so you can make a double, triple, quadruple batch now, then stash them in the freezer so they’re ready for the week , or just something to have on hand should unexpected visitors pop by. Look at you being all organized!

Lovely Lemon and Poppyseed Muffins

  • Cook Time: 15 mins
  • Persons: 6-9
  • Difficulty: Easy

  • Ingredients
  • 2 eggs – or flax eggs
  • 2 Tablespoons of vanilla yoghurt
  • 1 Tablespoon of lemon juice (from 1/2 a large lemon)
  • 1 teaspoon of lemon zest
  • 1 teaspoon of vanilla almond milk
  • 1 teaspoon of vanilla
  • 1 cup almond flour
  • 2 Tbsp  vanilla (or white chocolate) protein powder *
  • 1/4 cup of monk fruit sweetener**
  • – or granulated sweetener of choice
  • 1 teaspoon baking powder
  • 1/2 teaspoon of baking soda
  • A pinch of salt
  • 1 Tablespoon of poppy seeds
  • For the glaze which is technically optional but super delicious + life’s better frosted! –
  • Powdered monk fruit sweetener (or icing sugar)
  • A splash of milk (or water) – to desired consistency
  1. Instructions
  2. For the muffins ;
  3. Pre-heat oven to 175’C/350’F
  4. Line your muffin tray with paper cases then set aside.
  5. Place all muffin ingredients apart from the poppyseeds into a medium-size bowl and stir until well combined.
  6. Add poppyseeds and stir until just combined. Try not to overmix
  7. Spoon your batter into your prepared muffin tray.
  8. Bake for 12-15 minutes – until the top springs back when lightly pressed.
  9. Set aside to cool .
  10. For the Frosting :
  11. Sift icing sugar (not essential but ensures they’re no lumps in your frosting)
  12. Add milk (or water) 1 teaspoon at a time to reach desired consistency.
  13. Drizzle muffins
  14. Enjoy xo

Hey, Hi, Hellooooooo

I cant even believe its been almost 3 months since I last published a blog post!

I am so sorry for skipping out on you, things have been cah-razy up in here!

Since we last spoke my sweet little family and I have very quickly packed up our teeny, tiny apartment in Melbourne (which we managed to do in less than 2 days!!) and moved back to Sydney (where we were originally from / have lived our entire lives), successfully survived a mandatory 14 day stay in hotel quarantine (#covidnegative !!!), found a new apartment, unpacked, got Eve re-enrolled in school, set her up with all her supplies, sent spunky husband back to work, settled in, and now at last, I feel like I can breathe again!

What a ride!

Now, I have been posting bits and pieces over on Instagram and my plan now that we are safe and settled is to get this blog all up to date with all the delicious things I’ve been creating and sharing then start to create and post more regularly on here again!

Although my arm is still bothering me, I am thankfully getting treatment with my amazing physio and finally feel like it’s starting to heal and make some progress on the road to recovery. Although I am under strict instructions not to over do it so although I plan to post more regularly and get things here all up to date I do have to pace myself.

Workouts may be on hold for a few more weeks but as soon as I’m cleared to start training again, you better believe fit Fridays will be back and just as fun, if not more so, than ever!

OK, that’s enough waffling from me (MMmMMM waffles), on to the recipe deets . . .

Allow me to introduce you to your new fave snack . . .

Mocha fudge peanut butter cookie dough protein bites!

It’s everything I love in life all served up in one delicious little mouthful!

Chocolate = happiness

Coffee = soothes my soul.

Peanut butter and cookie dough bars = the glue that holds my body together!

Put them all together and you get pure magic and that my friends is EXACTLY what we have here!

It’s cookie dough meets, mocha fudge meets, peanut butter cup and I am 100% here for it!

Subtly sweet, deliciously buttery soft and chewy (protein packed) peanut butter cookie dough encased in a cool, crisp layer of espresso infused dark chocolate.

Gluten free – Dairy free – Grain Free – Refined sugar free – Vegan – Paleo and Keto friendly.

1 bowl + 3 ingredients and 10 mins!!

Stop what you’re doing, this needs to happen, now!

Peanut Butter Cookie Dough Protein Bites

Makes 5 bites of blissful deliciousness.

Ingredients –

For the cookie dough filling –

1 x PranaOn peanut butter cookie dough protein bar (I order online PranaOn
– use EMMA10 to get 10% off) – DIY cookie dough recipe below .

For the choc cups – .

1/2 blk dark choc (1/4 C once melted)

1 sachet of Before you speak coffee’s adrenal reset decaf mocha – discount code = EMS10
can sub 1 tsp of decaf (or reg) instant espresso .

1 tsp coconut oil – optional .

Method –

1 – Cut your protein bar into 4 or 5 pieces depending on how big you want to make your cups

2 – Roll into balls and set aside

3 – Melt choc by your preferred method

4 – Add espresso and coconut oil (if using)

5 – Spoon 2 teaspoons  of your melted chocolate into mini cupcake cases

6 – Freeze for 5

7 – Once your choc is set, remove from the freezer and gently press your cookie dough ball in to the chocolate base .

8 – Top with remaining melted choc

9 – Sprinkle with pink salt if you want – you do!

10 – Pop back in to the freezer for 5 to set

11 – Devour!

Keep refrigerated – can be frozen

For the DIY – peanut butter cookie dough –

Ingredients –

1/4 cup of peanut butter (or nut/seed butter of choice)

* You could also sub powdered peanut (or almond) butter + enough water to make a desired nut butter consistency

1/2 teaspoon of vanilla – more or less to taste

1 Tablespoon of vanilla protein powder  – can sub coconut flour for non protein version

A sprinkling of choc chips – as many or few as your heart desires

A pinch of flaky sea salt

1 scoop of collagen – optional for gut healing goodness

Method –

1 – Place it all in a bowl and stir until well combined.

{Vegan, Gluten Free & Paleo Friendly}

Makes approx 4 cups of all natural, quick and easy, crisp and crunchy, deliciously buttery, sweet and chewy, healthy, homemade summer berry snack mix

Ingredients –

1 cup raw almonds

1 cup raw cashews

1/2 cup macadamia nuts

2 Tablespoons of sunflower seeds

2 Tablespoons of pepitas (or pumpkin seeds)

1/4 cup dried cranberries

1/4 cup dried blueberries

1/4 cup dried goji berries

1/2 cup finely shredded coconut

Method –

1 – Place all ingredients into a bowl (or large ziplock bag) and stir (or shake) to combine.

2 – Store in an airtight container

So, I thought I would go through the archives and pick out some of my favorite quick and easy, deliciously simple, seriously flavorful, lightened up meals to help kick start the New Year.

Below is a collection of 78 (!!!)  of my families favorite eats.

You guys, it was so hard to narrow it down to just 78!!!

I honestly could have listed hundreds of recipes but I didn’t want to overwhelm you with options.

But, I wanted to make sure I included a little something for everyone – so 78 it is!

We have – breakfast, mains, sides, snacks, smoothies and shakes as well as a handful of sweets ans treats – because it’s all about balance baby!

Most of the recipes included are made with no refined flours or sugars using just a handful of real food ingredients that I bet you have on hand already and come together in around 30 minutes.

Most of them also happen to be naturally gluten free and paleo friendly and many. if not all, are easily adaptable to fit special dietary needs or be made Whole 30 compliant.

Please tell me I am not the only one having one of “those” weeks?

I keep knocking my poorly finger, my “baby” is still sick, the rain won’t stop and I feel like I’m starting to lose my mind . . .

help me?!

I honestly wasn’t sure I was going to have a recipe to share with you today because well, I just couldn’t seem to get it together and I’m not one of those organised food bloggers who has months of recipes planned, photographed scheduled  ready to post ahead of time.

And then sometimes life throws you a bone . . . like today I got this massive craving for something salty . . . and crispy, and crunchy  and a little bit cheesy. But did you see the weather?! Um hello raining cats and dogs ! No way was I going out in that cah-razy weather to get myself a crispy, crunchy, cheesy little snack.

Not.

A.

Chance.

So what’s a girl to do?!

Garlic and Parmesan {Oven Baked} Kale Chips

She goes digging through her fridge and pantry to see what she can conjure up in the comfort of her own home thats what.

And that my friend is how todays recipe was born.

Light and crispy, melt in your mouth, garlic infused, cheesy little chips that come together in less than 20 minutes and also happen to be totally healthy?!

Yes, yes just yes!

I love the way those curly little leaves just hold onto so much flavour.

Little pockets of cheese get all crisp and golden brown and tucked away discreetly in-between those pretty little ruffles.

Then when you shove a handful into your mouth and bite on in to that crispy, crunchy, pretty little chip . . .

Garlic and Parmesan {Oven Baked} Kale Chips

I gotta tell you I am feeling pretty pleased with myself right now.

A delicious little chip that will not only satisfy the most intense crispy, crunchy, salty, cheesy craving . . . but they also happen to be all kinds of healthy and come together in less than 20 mins.

That’s what I call a win my friend.

Garlic and Parmesan {Oven Baked} Kale Chips

I mean come on now, look at all that flavour!?

And I haven’t forgotten about my vegan and paleo (or lactose/dairy free) friends, If for whatever reason you can’t do the parmesan simply sprinkle over a little nooch (aka – nutritional yeast) and boomshakalocka, cheesy craving sat-is-fied!

Seriously . . . can not, will not stop with the kale chips!

All natural, totally healthy, crispy, crunchy, garlic infused, cheesy bites of deliciousness.

Make them, eat them, love them

Garlic and Parmesan {Oven Baked} Kale Chips

Garlic and Parmesan {Oven Baked} Kale Chips
Makes approx 2 heaping cups of light and crispy, seriously addicting garlicky, cheesy kale chips

Ingredients –

2 cups (firmly packed) of  kale, washed and dried

1 Tablespoon of freshly grated parmesan  (or nutritional yeast)

1/8 teaspoon of garlic powder

1/8 teaspoon of onion powder

1 teaspoon of coconut oil, melted and cooled

salt and pepper to taste

Method –

1 – Preheat oven to 120′C (250′F). Line a large baking tray (or 2) with baking/parchment paper and set aside.

2 – Remove the middle stalk from the kale leaves and cut into smaller pieces (the size you want your chips) and place into a large bowl.

3 – Add oil, garlic and onion powder along with a good pinch of salt and pepper and your freshly grated parmesan (icd using nutritional yeast, sprinkle it over once your chips are baked)  then toss to coat, gentle massaging all that incredible flavour into those pretty little leaves as you go.

5 – Place kale leaves in a single layer on your prepared baking tray.

6 – Bake for 10-12 mins or until slightly browned and nice and crispy. (Sprinkle over your nutritional yeast if using)

7 – Devour Serve immediately or, store in an airtight container (or even just a large ziploack bag) for up to 2 weeks (as if they will last that long;))

Oven Baked Kale Chips

Let me introduce you to my new favourite snack.

Light and crispy, oven baked, perfectly seasoned kale chips!

I am sad to say that until this past weekend I had not!

Sad because of all those years that I could have, should have been inhaling devouring enjoying those light, crispy, perfectly seasoned delicious little kale chips . . . lost.

It’s just so very sad!

But don’t you worry, I’m totally making up for lost time.

You guys these chips are insanely delicious! Like, “where are you been all my life?” delicious!

And so outrageously simple to make. Just 3 ingredients, 15 mins in the oven and boomshakalocka, you are on your way to snack town my friend!

If you have had kale chips before you will be well aware of how incredibly light they are. They are wafer thin and crispy as all get out! You pop a handful one in your mouth and you get this delicious little crunch and then, like magic they just melt away.

I can’t even really explain it so you’ll just have to trust me on this one. Or go make some and experience the magical deliciousness for yourself. Actually you better make a double batch because the first batch, like magic has a tendency to just disappear?! No idea how that keeps happening 😉

And you know what else? These all natural, oven baked, crispy, crunchy kale chips also happen to be totally healthy. Like seriously healthy.

Did you know –

– Kale is a known anti-inflammatory, which helps to fight against arthritis, asthma and autoimmune disorders.

– Kale is also high in vitamin A which is great for your eyes and skin, it’s also super high in fibre, folate and magnesium!

– Kale is high in iron, and vitamin C which in itself is a powerful combination. Did you know that your body absorbs iron more easily when paired with vitamin C? Well now you do 😉

– Kale is also rich in antioxidants such as carotenoids and flavonoids which are proven to help protect us against various cancers.

Oven Baked Kale Chips

Oven Baked Kale
Scaled down, and re-written in my own words as appears in Pete Evans – Healthy Every Day
