Simply throw your ingredients into your blender or food processor and let it do the work for you.

All natural, quick and easy, perfectly spiced, light and tender, melt in the mouth banana muffins that are packed with sweet, juicy pineapple pieces and finished with a tart and tangy coconut yogurt “frosting” ;

Hummingbird Muffins with Coconut Yogurt Frosting – {Low Carb, GlutenFree & Paleo Friendly}
Makes approx 10 – All natural, quick and easy, subtly sweet, melt in your mouth, banana infused muffins

Ingredients –

3 eggs

2 manky over-ripe bananas

1/2 cup pineapple, finely chopped (fresh or canned will work)

1 Tablespoon of vanilla extract

1 Tablespoon maple syrup

1 Tablespoon of coconut oil, melted and cooled

1 Tablespoon of warm water

1/4 cup coconut flour

1/2 teaspoon of ground cinnamon

1 teaspoon baking powder

1/2 teaspoon of baking soda

A pinch of salt

1 scoop of Vital proteins unflavored collagen peptides optional for an extra boost of protein and gut healing goodness

Optional but recommended for serving –

1/4 cup Coconut Yogurt

Dried pineapple

Coconut chips

Method –

1 – Preheat oven to 175’C (350’F) – Line a muffin tray with paper cases and set aside.

2 – Place eggs, banana, vanilla, maple syrup, coconut oil and water into your food processor or blender and process until well combined.

3 – Add your coconut flour, cinnamon, baking powder, baking soda and salt and process again until well combine.

4 – Add your chopped pineapple and stir to combine.

5 – Spoon the batter into your prepared muffin tray and bake for 10-12 minutes. When they are ready the tops will be deliciously golden and should be firm to the touch yet spring back a little when lightly pressed, a tooth pick should come out clean or have just a few crumbs attached when inserted into the center.

6 – Allow to cool for 5 minutes in the muffin tray, then transfer to a wire rack to cool completely – That is if you can resist inhaling the entire batch as you transfer each delicious little muffin from muffin tray to cooling rack that is. Note – this will be an extremely difficult task. You have been warned.

To serve –

Top with coconut yogurt, dried pineapple and coconut chips if desired – yum!

Sunshine and happiness all served up in one delicious little mouthful.

Lemon Chia Mini Muffins with Whipped Vanilla Coconut Cream {Low Carb, Grain Free & Paleo Friendly} - www.betterwithcake.com

Lemon Chia Mini Muffins with Whipped Vanilla Coconut Cream
Makes approx 24 all natural, super light, subtly sweet, melt in the mouth, lemon and chia-licious mini muffins generously frosted with our light and fluffy, creamy, dreamy whipped vanilla coconut cream

Ingredients –

3 eggs

2 teaspoons of lemon extract

2 teaspoons of vanilla extract

1 Tablespoon maple syrup

1 Tablespoon of coconut oil, melted and cooled

1 Tablespoon of warm water

1/4 cup coconut flour

1 teaspoon baking powder

1/2 teaspoon of baking soda

1 Tablespoon of freshly grated lemon zest

1 Tablespoon of Chia seeds

For the Frosting –
Don’t forget you will need to crack that can of coconut cream open and set it in the fridge the night before you want to get your coconut cream on

The cream from 1 can of coconut cream – I had approx 1/2 cup

1 teaspoon  of vanilla extract

Optional but recommended for serving –

A few extra cheeky chia seeds

Your fave sprinkles

Method –

1 – Preheat oven to 175’C (350’F) – Line a mini muffin tray with paper cases and set aside.

2 – Place eggs, maple syrup, coconut oil, water and your vanilla and lemon extract into your food processor or blender and process until well combined. Or you could just pop them in a bowl and whisk by hand if you prefer, Im just lazy 😉

3 – Add your coconut flour, baking powder, baking soda and salt and process again until well combine.

4 – Add your lemon zest and chia seeds and stir to combine.

5 – Spoon the batter into your prepared muffing tray (I used approx 1 x heaping teaspoon for each muffin) and bake for 8-10 mins until cook through. The tops will be deliciously golden and should be firm yet spring back a little when lightly pressed and a tooth pick should come out clean or have just a few crumbs attached when inserted into the centre.

6 – Allow to cool for 5 mins in the muffin tray, then transfer to a wire rack to cool completely

To make the frosting –

1 – The night before you want to make your coconut cream you will need to open the can and place it in the fridge overnight.

Overnight the cream will separate and solidify at the top of the can leaving the coconut water at the bottom of the can.

2 – Once your cream has done its thing overnight scoop out the cream and place it into the bowl of your stand mixer or a medium size bowl – keep the coconut water to use in smoothies or just drink it as is – yum.

3 – Add vanilla and whisk until thick and creamy, it will look very much like regular whipped cream, only slightly thicker.

4 – Taste and add a little extra vanilla if you prefer.

5 – Store in the fridge until ready to use. FYI – if you’re not going to be using it right away and do set it in fridge for later use, be prepared for it to firm up quite a bit. But, never fear, simply let it sit at room temp for 5 mins and give it a good stir and it will be creamy, dreamy and ready to use as you wish 🙂

To serve –

Dollop a heaping spoonful of your coconut cream on to each muffin, sprinkle with some extra cheeky chia seeds and/or your fave sprinkles and voila’ – your work here is done.

Store in the fridge until ready to serve – frosting should keep well refrigerated for up to 1 weeks (if it lasts that long) and the muffins will stay fresh, covered or in an air tight container for up to a week, leftovers can be frozen (unfrosted) for up to 3 months.

Zucchini Noodles with Avocado Pesto

Just incase you forgot, it’s Mother’s day this Sunday.

Spunky husband will be at work on the big day so, for me it will just be business as usual. We will do a little something to celebrate on the saturday instead I’m sure, so don’t you worry your pretty little head about me missing out 😉

I do have a nice morning planned with my own mama. A coffee date at our fave local cafe followed by a nice walk to my mama’s favourite art store.

Whatever you have planned, I have you mother’s day lunch (or dinner) sorted.

We are going to have ourselves some all natural, super simple, insanely delicious Zucchini Noodles with Avocado Pesto.

Have you made zucchini noodles before?

I love them!

Zucchini Noodles with Avocado Pesto

Zucchini noodles are light yet hearty and I love how you can have a big ol’ bowlful and feel totally satisfied without feeling weighed down.

They are also sturdy enough to carry even a hearty, meaty, bolognese type sauce if that’s what your little heart desires. These zucchini noodles are  so versatile.

You can serve them raw (which is how I prepared them today) or simply toss them in a frypan with a little coconut (or olive oil) and gently stir until heated through, boomshakalocka. Done!

I love how they manage to hold a nice little bite, kinda like al’dente’ pasta.

These zucchini noodles are not only low carb, they also happen to be vegan, gluten free and paleo friendly.

Zucchini Noodles with Avocado Pesto

Healthy, hearty zucchini noodles are combined with our smooth, creamy, zesty, cheesy avocado pesto. It’s healthy, (guilt free) comfort food at it’s finest! Then, we throw in some baby tomatoes for a little extra freshness and oh my deliciousness! So good I can’t even tell you. The slightly tart, sweet, acidity of those baby tomatoes just cuts through the rich, creamy, zesty, cheesy avocado pesto with absolute perfection. 

Simple, healthy but oh so flavoursome!

A few months back I picked up this super funky little veggie twister which is so easy to use and makes the prettiest little vegetable ribbons but, if you don’t happen to have one of these babies, or something similar, you can simply use your trusty ol’ veggie peeler to slice those glorious little zucchini’s into pretty little ribbons. Then simply stir through your glorious avocado pesto, a handful of fresh, baby tomatoes and your done!

So simple, so healthy, seriously delicious and a little bit special.

The perfect way to spoil your mama this Mothers day. So easy to prepare, even the most inexperienced of “chefs” and the  littlest of hands can get involved.

Make them, Eat them, Love them

Zucchini Noodles with Avocado Pesto

Zucchini Noodles with Avocado Pesto
This recipe serves 1-2 simply multiply to feed the masses

Ingredients –

2 Zucchini, rinsed and dried

2-4 Tablespoons of Avocado Pesto (could sub for plain old pesto if you prefer)

1/2 cup of baby tomatoes, halved.

Salt and pepper

Freshly grated parmesan to serve

Method –

1 – Use your veggie twister/spiralizer to turn your zucchini into noodles. If you don’t can one simply use your veggie peeler to create ribbons, stopping when your reach the seeds.

2 – Place your pretty little pile of zucchini noodles into a large bowl, season with salt and pepper, add your pesto and gently stir to combine. If you have trouble string your pesto through because it’s a little thick, simply add a Tablespoon of warm water to the mix. This will help to loosen things up a little and should allow you to stir that glorious pesto through with ease.

3 – Add tomatoes and gently toss to combine. If you want to serve warm, place a little coconut (or olive oil) into a large pot/fry pan and gently stir until heated through.

4 – To serve, transfer directly to your mouth to individual plates/bowls and sprinkle with a little extra, freshly grated parmesan.
