Choc Fudge Reindeer Donuts!!!

Eve and I made these super cute festive donuts and honestly, I had no intention of sharing the recipe but once they were finished I figured why not?! Because:

1-YUM!

2- Fun!

3-They turned out to be so cute and SO DELICIOUS I just had to share them with you!

So, if you’re looking for a super simple, insanely delicious, fun, and festive, last-minute treat to make (& LBR eat) for Christmas (or just because, yum!) then look no further friend, these choc fudge reindeer donuts are EXACTLY what you need

Even if you’re not actively looking & I don’t think it matters the question fun, festive choc fudge donuts are always the answer!

Made with no refined flours or sugars using just a handful of ingredients that I bet you have on hand a ready & can be ready to devour in just 15 mins!

Healthified or not, I can’t think of a better way to start, end, or fill the day than with one (or 2) of these delicious little cuties!

Choc fudge Reindeer donuts

  • Cook Time: 10 mins
  • Persons: 6-9
  • Difficulty: Easy

  • Ingredients
  • For the donuts –
  • 2 eggs
  • 2 Tablespoons of vanilla yogurt
  • 2 Tablespoons of unsweetened vanilla almond milk
  • 1 teaspoon of vanilla
  • 3/4 cup almond flour
  • 2 Tablespoons of  Macro Mike white choc (or any flavour really) protein powder (see notes for subs)**
  • 1/4 cup cacao
  • 1/4 cup golden monk fruit sweetener – or coconut sugar / granulated sweetener of choice
  • 1 teaspoon of instant coffee
  • 1 teaspoon baking powder
  • A pinch of salt
  • For the chocolate glaze –
  • 1 C dark chocolate
  • 1/2 tsp instant espresso pwd – I use decaf I use the decaf to make them safe for Eve to eat, heaven knows that girls needs no added caffeine, she IS the energizer bunny!
  • For decorating –
  • 6-9 baby red currants (or cherries, dried cranberries or a m&m or red sprinkle)
  • 6-9 pretzels cut in half
  • 12-16 googly eye sprinkles
  1. Instructions
  2. Place all donut ingredients into a small bowl and stir until well combined.
  3. Spoon/pipe donut mix into your donut tray (I pour my batter into a ziplock bag & snip off the corner to pipe it in. Super accurate & way less messy this way! Click here to see a lil video demo) .
  4. Bake for 12-15 minutes until the tops spring back when lightly pressed.
  5. Set aside to cool while you make your frosting.
  6. Melt chocolate by your preferred method .
  7. Add instant espresso pwd and stir until well combined.
  8. Dip donuts into melted chocolate and place onto a lined baking tray (for easy clean up)
  9. Add decorations – pretzel antlers, berry noses & googly eyes  . . . for the eyes
  10. Enjoy xo

** You can sub 1/2 teaspoon of coconut flour in place of the protein powder but the taste & nutritional boost the protein pwd adds really takes these muffins to a whole new level!

I love Macro Mike plant based almond protein powder (have not tested any other brands ). Its gluten free, dairy free, sugar free, boosted with probiotics & truly tastes all kinds of incredible. Its hands down without question the smoothest, most delicious, elite tasting protein power (plant based/dairy free or otherwise!!) I have ever tried. At last, at last it’s here a last!!! MY BIRTHDAY WEEK!!!! No so fun in stage 4 lock-down but, sprinkles and donuts make everything better!

Light, fluffy, soft, tender (secretly healthy) strawberry infused, vanilla donuts finished with an optional (but not really) white chocolate glaze and alllll of the sprinkles!!!!

Healthy enough to serve for breakfast (with a big ol’ vat of coffee, of course) but indulgent enough to enjoy for a cheeky little late night treat (with a cup of chocolate chai for me please)!

Super simple to make using just a handful of ingredients that I bet you have on hand already and come together in 1 bowl with 1 spoon and can be ready to devour in just 20 minutes!

Gluten Free – Dairy free – Grain free – Refined sugar free –  Low Carb – Paleo –  Keto – Vegan friendly.

I don’t know what else to tell you, but clearly you need them in your life because, yum!  I mean it is my birthday (week) after all, it’d be rude not to.

1 bowl, 6ish ingredients and 20 minutes!

Let the celebrations begin!!!!!

Strawberry Cream Funfetti Donuts

Makes 6

Ingredients –

2 eggs

2 Tablespoons of vanilla yoghurt

2 Tablespoons of unsweetened vanilla almond milk

1 Tablespoon of before you speak coffee sugar free vanilla creamer – or regular vanilla
The creamer makes them extra fluffy – use EMS10 to get a discount if you want to try it

1 cup almond flour

1/3 cup freeze dried strawberries, crushed

1 teaspoon of coconut flour

1/4 cup monk fruit sweetener – I use Lakanto

1 teaspoon baking powder

1/2 teaspoon of baking soda

A pinch of salt

For the frosting –

1 block of white chocolate – I used Loving earth

For the pink tint I added this gypsy rose latte mix by Knowrish well – amazing ingredients and super yum!

SPRINKLES!!!!!!!!!

Method –

For the donuts ;

1 – Pre-heat oven to 175’C/350’F

2 – Grease your donut pan (or muffin tray) then set aside.

3 – Place all donut ingredients apart from the freeze dried strawberries in to a medium size bowl and stir until well combined.

4 – Add freeze dried strawberries and stir to combine.

5 – Pipe (or spoon) your donut mix in to your prepared donut (or muffin) tray. I like to pour the mixture in to a zip lock bag , snip of the corner and pipe it in to the tray. I find it a lot easier (and way less messy) to do it this way.

6 – Bake for 10-12 minutes (or 15-20 if doing muffins) until the top springs back when lightly pressed.

7 – Set aside to cool while you make your glaze.

While your donuts are cooling prepare the frosting –

1 – Melt chocolate by your preferred method

2 – Stir in latte mix (or colouring of choice)

3 – Dip donuts in to melted chocolate and sprinkle with sprinkles.

4 – Devour!

Just popping in to deliver you a bonus recipe because guys, these donuts are SO life changing delicious that I just couldn’t keep them from you!

Light, fluffy, soft, tender (secretly healthy) deliciously buttery, cinnamon spiced donuts infused with sweet juicy strawberries finished with the dreamiest white chocolate frosting !

These donuts are something I wanted to make for a realllllly long time but for some reason or another, I just never got around to it.

Well, this past weekend, living my best ISO life, I decided it was time and you guys . . .

They turned out SO good! So much better than I ever imagined and I’m sad I waited so long to make them!

Eve and spunky husband have even gone as far as declaring them to be one of the best things I have ever made! Ever! I’m talking up there with my gingerbread twix bars!!!

And would you look at how pretty they are?!

Honestly, I don’t know what else to tell you, clearly you need them in your life, ASAP!

Healthy enough to serve for breakfast (with a big ol’ vat of coffee, of course) but indulgent enough to enjoy for a cheeky little late night treat (with a cup of moon mylk for me please)! Who’s in??!

Chocolate glazed snickerdoodle donuts = the perfect way to make your day just a little bit sweeter.

Light, fluffy,  soft and tender, subtly sweet, perfectly spiced and just all kinds of wonderful!

Something that you may or may not know about me is that I LOVEEEEE donuts!

I remember growing up, when I was finally was allowed to walk to school by myself, each week I would try to save some of my pocket money and leave for school a few minutes early just so I could swing by this cute little bakery and pick up a freshly baked, fluro frosted, pretty pink donut (with extra sprinkles) to eat as I finished my walk to school. It was heaven!

And, one of my first jobs was actually at a cafe/donut shop in our local mall! I loved making and frosting (and eating) all the donuts!And boy did I eat allllll of the donuts. And then some!

These days I don’t buy donuts very often because a good gluten free donut can be a little hard to come by. And, since we’ve moved to Melbourne and being isolated (but safe) at home, we don’t know our way around just yet and a lot of the go-to recommended places are not currently open for business.

So, whats a girl to do  . . . she heads to the kitchen and whips up a batch and you guys, these donuts . . . exceeded all of my expectations!

I’ve made donuts before but not like this. These donuts are next level deliciousness I tell you and even spunky husband and Eve agreed. Hands down, without question, the best donuts I’ve ever made! Ever!

And that glaze. Made with a mix of dark chocolate and nut butter . . . it’s everything I love in life all served up on one delicious donut!

So rich, so chocolaty (with a cheeky hint of espresso if you’re feeling it), paired with those light as air, cinnamon spiced, snickerdoodle donuts and finished a deliciously buttery, crisp and crunchy cookie crumble . . .

My life is now complete.

Wait eating these, while drinking coffee = life complete!

Donuts + espresso infused chocolate + nut butter AND a cookie crunch! OOooO yes!

Made with just 6 ingredients that I bet you have on hand already and come together in 1 bowl with 1 spoon and can be ready to devour in around 20 minutes!

{Baked – Grain Free}
Chocolate Glazed Snickerdoodle Donuts

Makes 6

Ingredients –

2 eggs

2 Tablespoons of vanilla yoghurt

1 teaspoon of vanilla

1 cup of almond flour

1 teaspoon of coconut flour

1/4 cup monk fruit sweetener – or coconut sugar / granulated sweetener of choice

1 teaspoon of cinnamon – I use cinnamon spice Before you speak coffee because I love the extra flavour it brings with the hint of turmeric and espresso – use EMS10 to get 10% off if you want to try it – believe me, you do!

1 teaspoon baking powder

1/2 teaspoon of baking soda

A pinch of salt

For the glaze –

1 cup of dark chocolate (chips or chopped)

1 (heaping) Tablespoon of smooth almond butter – I used The Almond Farmers dreamy choc fudge almond butter 

1/2 teaspoon of instant espresso – optional

For serving –

2-3 cookies, crushed.

Method –

1 – Pre-heat oven to 175’C/350’F

2 – Grease your donut pan (or muffin tray) then set aside.

3 – Place all donut ingredients in to a small bowl and stir until well combined.

4 – Pipe (or spoon) your donut mix in to your prepared donut (or muffin) tray

5 – Bake for 10-12 minutes (or 15-20 if doing muffins) until the tops spring back when lightly pressed.

6 – Set aside to cool while you make your glaze.

To make the glaze –

7 – Melt chocolate your preferred method, add espresso (if using) and almond butter them stir until smooth creamy and well combined.

8 – Once melted, dip each donut in to melted chocolate and place onto a wire rack (glaze side up) and repeat until all donuts have been glazed.

9 – Sprinkle with a crushed cookie – optional but SO GOOD!

10 – Devour!

I’ve made donuts before but not like this. This recipe is magic, even if I do say so myself!

These donuts are light and fluffy,  soft and tender, subtly sweet, seriously and I mean SERIOUSLY chocolaty, with the perfect hum (or loud rev if you prefer) of espresso.

I find that hint of espresso helps to balance out the sweetness and really enhance the richness of the cacao.

Plus, coffee and donuts go together like the peanut butter and jelly, or cookies and cream , chalk and cheese . . . wait, that’s not right?! How about the moon and the stars ?! That’s better.

I mean coffee and donuts, name a more iconic duo . . . I’ll wait . . . see , you can’t they’re the perfect match!

And that glaze . . . with those crunchy cacao nibs and that flaky sea salt . . .

{Baked} Choc Chip Mocha Donuts with Salted Dark Chocolate Espresso Glaze

Makes 9 light and fluffy, super fudgey, deliciously indulgent, espresso infused, seriously chocolatey, secretly healthy donuts

Ingredients –

1 egg – vegan friends sub flax egg

1/2 cup vanilla almond milk

2 Tablespoons of  coconut oil, melted

1 Tablespoon of vanilla

1 teaspoon of apple cider vinegar

1/4 cup cacao

2/3 cup plain flour ( I use Bob’s Red Mill Natural Foods 1:1 GF flour or Otto’s Naturals – Cassava Flour to keep them gluten/grain free – you can use almond flour/meal but they won’t be as light/fluffy)

1/2 cup natural monk fruit sweetener – sub coconut sugar

2 teaspoons of baking powder

1 teaspoon of baking soda

1 Tablespoon of instant espresso

1/2 teaspoon of salt + extra for serving

A pinch of ground cinnamon

Dark chocolate , roughly chopped – as much or as little as you like

For the glaze –

1 block (1/2 C) dark chocolate

1 Tablespoon of coconut oil

1 teaspoon of instant espresso

For serving –

Cacao nibs

Flaky sea salt

Method –

1 – Pre-heat oven to 175’C/350’F

2 – Grease your donut pan (or muffin tray) then set aside.

3 – In a medium size bowl, whisk together, egg, milk, vanilla, coconut oil and apple cider vinegar and espresso.

4 – Sift in flour, sugar, cacao, baking powder and baking soda into your egg mix and stir to combine.

5 – Add salt and fold through your chopped chocolate.

6 – Pipe (or spoon) into your prepared donut (or muffin) tray

7 – Bake for 10-12 minutes until the tops spring back when lightly pressed and a toothpick has just a few crumbs attached when inserted in to the thickest part.

8 – Set aside to cool while you make your glaze.

To make the glaze –

9 – Place chocolate, coconut oil and instant espresso into a bowl (or rimmed plate) and melt by your preferred method.

10 – Once melted, dip each donut in to melted chocolate/espresso mix and place onto a wire rack (glaze side up) and repeat until all donuts have been glazed.

11 – Sprinkle with cacao nibs and sea salt.

12 – Devour!
