I have a problem . . .

A big, delicious (first world) problem . . .

If you follow along with me on Instagram what I am about to tell you will come as no great surprise . . .

I can’t stop eating allllll of the nut butters!

Well, that’s not entirely true, I probably could stop if I really wanted to but . . . I really, really don’t. Not even a little bit.

Peanut, hazelnut, almond . . . my love knows no bounds, it’s all good ♥♥♥

It’s the perfect, anytime snack.

Serve it with some cold crisp gala apple slices as a mid-morning snack, put a big ol’ spoonful in your afternoon smoothie, eat it straight up, by the spoonful direct from the jar or, as a cheeky little after-dinner treat with a deliciously indulgent chunk of dark chocolate, it’s seriously the best!

Safe to say I can’t stop, won’t stop with the snack, snack, snacking.

Which brings me to today’s “recipe”

I figure if I’m going to be eating my body weight in nut butter I might as well try to make some of my very own, right?

Simple, healthy, homemade salted vanilla almond butter FTW!

FYI – I am so, SO excited about this it’s not even funny!!!!!!!!!!! My kinda DIY!

First up I can not believe how easy it is to make. Just 3 ingredients and 10 mins in the blender and boomshakalocka = done!

Secondly, oh my deliciousness,

The taste, the smell . . . just you wait!

And thirdly – It’s totally customizable.

You want super smooth, extra creamy almond butter – just blend, blend, blend for a few extra minutes and you have yourself some all-natural, extra creamy, velvety smooth almond butter, just the way you like it – Easy!

Want extra chunky almond butter?! No problem, just pulse those almonds for a second or two, then take a couple of Tablespoons of those extra chunky. crispy, crunchy almond pieces out and set them aside while you blend, blend, blend. Then, once you have blended to your desired consistency, stir through those chunky monkeys and there you have it – healthy, homemade, extra chunky almond butter for the win!

So here’s what we’re gonna do –

We start off by giving our golden, delicious, nutrient-rich almonds a quick little toastin’ in the oven – toasting your almonds before blending helps to give your nut butter an incredibly rich and totally decadent depth of flavour – don’t skip this step, 5-10 minutes will make the world of difference to the flavour of your almond butter, trust me – it’s absolutely, 100% worth the few extra minutes. Just trust me ok?!

Now, once our almonds are nicely toasted, and your house smells like heaven, all you have to do it pop them into your food processor or blender, add a cheeky pinch of salt and a splash of vanilla then give them a good ol’ whizzaroo and boomshakalocka – done.

Initially, your almonds will get all chunky, then after a minute or two they will break down into a fine looking flour,

then the real magic happens, the heat and friction from all that blending will extract the natural oils from our almonds and in mere minutes, you will witness one of the most beautiful transformations of all time as your roasted almonds are whipped into a smooth and creamy, deliciously dreamy nut butter right before your pretty little eyes . . .

Now, depending on the kind of blender or food processor you have (and how smooth you like your nut butter to be) this can take anywhere between 5-15 mins.

For me and my magnificent magimix it took about 15 mins and that included stopping to snap a few pics along the way.

Once it’s your nut butter is ready it will be a little warm and slightly runny from all the blending you may be tempted to grab a straw and suck up that deliciousness straight from the bowl but try to resist the urge, or at least show a little restraint and just have a small sip or two because once it cools, those natural oils will start to solidify and it will firm up into that thick and creamy consistency we all know and love.

Something else I have noticed about my homemade almond butter is that it doesn’t seem to split?! You know that pesky oily pool of separation that occurs with most nut butters . . . I’m not exactly sure why it is that my homemade nut butters don’t seem to do that but, I do know that I am totally ok with it. No need to bother with all that pre-consumption stirring just grab a spoon and dive on in!

Creamy, dreamy toasted almonds blended with a cheeky pinch of salt and a subtly sweet hum of vanilla . . . tastes like heaven!

Thick, rich, smooth, creamy and simply divine!!!!!

Feel free to go ahead and use it as you would, business as usual – dive headfirst into the jar and eat your way out . . . or you be a little more refined and get yourself a spoon, do what you feel, no judgement here!

Now I’m not saying that you should, ( ← except I totally, sorta, kinda am) . . . grab yourself a block chunk of dark chocolate and add a generous spoonful of your freshly made, vanilla spiked almond butter . . .

Finish with an extra cheeky pinch of salt and have yourself a little bite of heaven . . .

Healthy, Homemade Vanilla Almond Butter

  • Cook Time: 7 mins
  • Persons: 16+
  • Difficulty: Easy

  • Ingredients
  • 2 C raw almonds
  • 1 Tbsp vanilla
  • 1/2 tsp salt
  1. Instructions
  2. Preheat your oven to 175’C (350’F)
  3. Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) and pour your almonds on, making sure they are spread evenly – aka not crowded.
  4. Roast your almonds for 10 mins, until lightly roasted and slightly golden.
  5. Pour your roasted almonds into the bowl of your food processor or blender, add salt and process until smooth and creamy (or your desired consistency). Initially the almonds would grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrap down the sides of the bowl occasionally.
  6. Once you have blended to your desired consistency, add your vanilla then process again just to combine.
  7. Taste and adjust seasoning accordingly – add a little extra salt or more vanilla if you feel the need.
  8. Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that )

Golden Spiced Cashew Butter
{Sugar Free, Gluten Free, Dairy Free, Vegan, Keto & Paleo Friendly}

Makes approx 1 3/4 cups of all natural, quick and easy, creamy, dreamy, velvety smooth, subtly sweet, perfectly spiced, gloriously golden, healthy, homemade cashew butter

Ingredients –

2  cup of raw cashews – could sub  1 1/2 C store-bought natural cashew butter – just cashews & salt

1 Tablespoon of vanilla extract

1 teaspoon of ground turmeric

1 teaspoon of ground cinnamon

1/2 teaspoon of ginger

1/2 teaspoon of salt flakes (omit if using pre-made/store bought that has salt added already)

1/8 teaspoon of ground black pepper – this is important as the chemical compound in the black pepper is what helps and enables the body to absorb all of those incredible nutrients in the turmeric! You can’t taste the pepper, promise.

Optional add in-

2 scoops of collagen ( I ♥ nutra organics &   Vital proteins unflavored collagen peptides – or Further food you can use EMS10 to get 10% off any further food products ) –  for an extra dose of protein and gut healing goodness – omit if vegan

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) then add your cashews making sure they are spread evenly – aka not crowded.

3 – Roast your nuts for 5-7 minutes, until gloriously golden, deliciously fragrant and lightly toasted.

4 – Pour your golden, delicious toasted cashews into the bowl of your food processor or blender, add salt and process until smooth and creamy (or your desired consistency). Initially they would grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Once you have blended to your desired consistency add the vanilla and remaining spices and process until well combined.

Note – If you prefer a thinner/runnier nut butters feel free to add a drizzle of coconut oil (or even just water) 1 tablespoon at a time to reach desired consistency.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – but I highly doubt it will last that long! (← seriously, good luck with that 😉 )

Please tell me I’m not the only one who finds themselves craving certain foods and flavors around the holidays?!

I don’t know what it is, or why it happens but every year I find myself craving hazelnuts?!

Which, although it’s absolutely delicious, I do find kind of odd because any other time of year, hazelnuts are not one of my top choices when it comes to nuts?!

I’m typically more of a almond, cashew, Brazil nut kind of gal.

Don’t get me wrong I do love hazelnuts and don’t mind the occasional, monster sized, spoonful of nutella every now again (especially if we are talking about my healthy homemade, chocolate hazelnut almond butter) , I mean who doesn’t?! I’m only human after all  . . .

But, come Christmas and the holidays and I’m like cashew-who?! Gimmeeee alllll the hazelnuts?!

Case and point . . . last year we made these decadent little morsels aka – salted dark chocolate hazelnut almond butter cups (swoon)  then we had, chocolate hazelnut chia puddings (hello dreammmmmyy) and before that we made a chocolate hazelnut cream smoothie (want!!!) and don’t even get me started on my healthy, homemade chocolate espresso hazelnut almond butter (I wan’t to swim around in a vat of that stuff) . . .

Vanilla Hazelnut Almond Butter
{Vegan, Dairy Free, Sugar Free, Keto & Paleo Friendly}
Makes approx 2 cups of All natural, quick and easy, subtly sweet, deliciously nutty, seriously, creamy, lightly salted, vanilla spiked, hazelnut-almond butter

Ingredients –

1 cup of raw almonds

1 cup of raw skinless hazelnuts

1 Tablespoon of vanilla extract or 10-12 drops of Vanilla Cream Stevia – I use Sweet Leaf Stevia

1/2 teaspoon of salt flakes

1 scoop of Vital proteins unflavored collagen peptides optional for an extra boost of protein and gut healing goodness

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) and pour your almonds and hazelnuts on, making sure they are spread evenly – aka not crowded.
3 – Roast your nuts for 10 minutes, until lightly roasted and slightly golden.

If you are unable to get skinless hazelnuts simply roast them on a separate tray and once they are roasted, place on a clean dry hand towel and fold it in half. Rub it gently between your hands and the skins should come loose. Once the hazelnuts have shed their skins, discard the skins and proceed with the recipe as normal.

4 – Pour your roasted almonds and hazelnuts into the bowl of your food processor or blender and process until smooth and creamy (or your desired consistency). Initially the almonds would grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Once you have blended to your desired consistency, add your salt and vanilla then process until combined.

6 – Taste and adjust seasoning accordingly – add a little extra salt or more vanilla (or stevia)  if you feel the need and if you prefer a thinner consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that 😉 )

Just when I thought my nut butter obsession couldn’t get any bigger this happens . . .

Not only is it insanely, and I mean I N S A N E L Y, delicious (think subtly sweet, velvety smooth, deliciously buttery and perfectly spiced with a gentle heart and belly warming hum of cinnamon and ginger) but, it’s also packs a serious and I mean S E R I O U S, nutritional punch thanks to the addition of our tantalizing, super food ingredient, turmeric.

I know, I know what you’re thinking . . . turmeric in almond butter  . . . Em, is that really necessary?!

I say, YES!!!!

Ok maybe it’s not totally necessary but, I guarantee that it is all kinds of delicious, seriously nutritious – one taste and you will be fully on board.

Trust me.

Have I ever steered you wrong?!

I wouldn’t do such a thing. Only the best of the best for my sweet, internet BFF (that’s you 😘 )

I honestly believe that this turmeric and ginger spiced, almond butter that we’re making today really is the best of the best.

I hate to toot my own horn but I really think I may have out done myself with this latest nut butter creation . . . it’s definitely next level! An absolute game changer. (toot, toot)

Plus, did you know that turmeric is rich in antioxidants, it’s a natural anti-inflammatory, it’s great for digestion and heart health, will help stabilize blood sugar, lower your risk of diabetes, improve brain function and boost your immunity!  💛💛💛

Just in case you need an excuses to eat more nut butter . . . all in the name of good health, I got you covered 😘😘😘

For those of you who are concerned that this super hero, super spread may have a weird/funky, taste I assure you the turmeric goes completely undetected.

Apart from the coloring . . .

I’ll admit, it does have an “interesting” glow about it but, personally I kinda dig the 80’s, retro, neon, golden hue. Don’t you?!

Regardless of how you feel about it’s appearance, one taste and you will be head over heels in love with this all natural, anti-inflammatory, super-charged, super-hero, super-spread I just know it!

The addition of cinnamon and ginger adds a magical touch of perfectly spiced sweetness that marries so beautifully with our buttery almonds. It kinds of tastes like Christmas in a cup which is all kinds of awesome if you ask me.

No weird additives or unpronounceable ingredients – just almonds, vanilla, a sprinkling of heart warming spices and cheeky pinch of salt is all you need! ❤❤❤

And, once you’ve roasted those golden delicious, nutrient rich almonds you’re divine little jar of edible awesomeness comes together in a matter of minutes!

Turmeric and Ginger Spiced Almond Butter
{Vegan, Gluten Free & Paleo Friendly}

Makes approx 1 3/4 cups All natural, quick and easy, creamy, dreamy, velvety smooth, subtly sweet, perfectly spiced, gloriously golden, healthy, homemade, turmeric and ginger spiced almond butter

Ingredients –

2  cup of raw almonds

1 Tablespoon of vanilla extract or 10-12 drops of Vanilla Cream Stevia – I use Sweet Leaf Stevia

1 teaspoon of ground turmeric

1 teaspoon of ground cinnamon

1/2 teaspoon of ginger

1/2 teaspoon of salt flakes

1/8 teaspoon of ground black pepper – this is important as the chemical compound in the black pepper is what helps and enables the body to absorb all of those incredible nutrients in the turmeric! You can’t taste the pepper, promise.

1 scoop of vital proteins collagen peptides – optional

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) then add your almonds making sure they are spread evenly – aka not crowded.

3 – Roast your nuts for 7-10 minutes, until gloriously golden, deliciously fragrant and lightly toasted.

4 – Pour your golden, delicious roasted almonds into the bowl of your food processor or blender, add salt and process until smooth and creamy (or your desired consistency). Initially the almonds would grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Once you have blended to your desired consistency add the vanilla and remainig spices and process until well combined.

Note – If you prefer a thinner/runnier nut butters feel free to add a drizzle of coconut oil (1 tablespoon at a time) to reach desired consistency.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – but I highly doubt it will last that long! (← seriously, good luck with that 😉 )

So . . .

Deliciously simple, decadent, rich, healthy, homemade mocha chia spiced almond butter . . .

You guys . . .

So much deliciousness your pretty little head may just explode!!!!

Gloriously golden, nutrient rich almonds are oven roasted then blended with a splash of vanilla, a cheeky pinch of salt, a combination of chai inspired spices (think cinnamon, nutmeg, cardamom and cloves) , a sprinkling of cacao and a gentle hum espresso.

I know I say it about all the nut butters that we make but you guys . . . this mocha chai spiced almond butter is so insanely delicious that one taste and life as you know it will be changed forever!

The subtle sweetness of vanilla combined with those creamy, dreamy, buttery almonds, that  heart warming hum of chai inspired spices, the decadent, richness of the cacao and that gentle hum of espresso . . .

You guys . . . I can’t even . . .

It’s decadent and rich, subtly sweet, deliciously indulgent, seriously chocolaty and simply divine!

For the coffee haters out there;

1 – Tell me again why we’re friends?! Just kidding, kinda, you know I love you 😘😘😘

2 – Please don’t be put of by the fact that this almond butter has espresso in it. I personally don’t think it has a strong coffee flavor (although you could certainly ramp things up if you wanted) the coffee seems to just enhance the richness of the chocolate more than anything.

Trust me, that leetle touch of espresso brings an element of depth and richness to this little jar of heaven that takes our latest batch of healthy, homemade almond butter to a whole new level!

Healthy, Homemade Mocha Chai Spiced Almond Butter
{Vegan, Gluten Free & Paleo Friendly}

Makes approx 1 1/2 heaping cups of all natural, quick and easy, creamy, dreamy, decadent, rich, delicious, nutritious, perfectly spiced, espresso infused, healthy, homemade chocolate, chai spiced almond butter

Ingredients –

2 cup of raw almonds

1 Tablespoon of vanilla extract (or 8-10 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

1 Tablespoon cacao

1 teaspoon of instant espresso

1 teaspoon of ground cinnamon

1/4 teaspoon of ground nutmeg

1/4 teaspoon of cloves

1/4 teaspoon of cardamom

1/2 teaspoon of salt flakes

Method –

1 – Preheat your oven to 175’C (350’F)

6 – Taste and adjust seasoning accordingly – add a little extra salt or more vanilla/cinnamon/spices if you feel the need and, if you prefer a thinner/more runny consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that 😉 )

So, here we are with our very first nut butter recipe of 2017 where one delicious obsession inspires another . . .

Deliciously simple, healthy, homemade, salted maple pecan almond butter!!!!

Deliciously buttery pecans and almonds are oven roasted then blended with a splash of vanilla, a drizzle of maple syrup and a cheeky little pinch of salt to bring you your very own subtly sweet, lightly salted, gloriously golden, velvety smooth, creamy jar of heaven.

I can’t even!

I don’t even know how it’s possible that something so simple can taste SO good!

But it is and it does.

Believe me, I checked, not once, not twice but several times over.

So many times in fact that I had to re-make the recipe just so I could take some photos for you!

Talk about taking one for the team 😋😋😋

The things I do for you 😉

Anyways, I checked, and checked and checked again and yep – it really is absolute awesomeness personified!

I don’t know what it is but this batch latest batch of almond butter is certainly different from all the ones we’ve made in the past.

It’s smoother, creamier, richer, more indulgent and decadent yet somehow at the same time manages to feel lighter?! I don’t know how it’s even possible but it really is even more awesome than those that have come before it!

Even if I do say so myself.

As far as nut butters go this salted maple pecan almond butter is definitely next level!

Maybe it’s the different oils in the pecans, I honestly don’t know but, whatever the reason I’m sure not complaining!

This maple pecan almond butter really is divine!

It’s deliciously buttery, subtly sweet, lightly salted, velvety smooth and I am head over heels in love!

I mean would you just look at it?!

That color!!!!!!!

That texture!!!!

Those flecks of vanilla!!!!

So much deliciousness in one pretty little jar! 😍😍😍

4 ingredients, 10 minutes in the making – stop what you’re doing, this needs to happen now!

Once you have your jar of subtly sweet, velvety smooth, creamy, dreamy, maple pecan almond butter ready and waiting in your hot little hand, go ahead and use it as you would, business as usual – dive head first into the jar and eat your way out . . .

or you be a little more refined and get yourself a spoon . . . do what you feel, no judgement here 😉

Sometimes the natural sugars in the maple syrup can cause the nuts to solidify slight and they may look like they have siezed but do not panic, just keep blending and they will come good (aka creamy, dreamy and silky smooth), promise.

6 – Taste and adjust seasoning accordingly – add a little extra salt or more vanilla or maple syrup if you feel the need and, if you prefer a thinner consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that 😉 )

I mean, I want them to be detailed enough so that when you look at the title you know exactly what it is that you’re getting. Well, unless it’s one of those recipes where I try to sneak in foods or ingredients that people think they don’t like – I’m such a trickster.

Naming this recipe may have been one of my biggest challenges yet!

I even did a quick google search to see what else was out there and would you believe, as far as I could see, no one has ever made an espresso infused, pumpkin spiced almond butter before?!

I couldn’t!

Although, I must admit this recipe came about as a deliciously happy little accident.

You see, there I was, standing in the kitchen, minding my own business, drinking my coffee and enjoying a few cheeky spoonfuls of my healthy, homemade pumpkin spiced almond butter, as you do, and it hit me . . . why not combine these two incredible flavors into one delicious little jar of awesomeness!

And, um . . .  guys, this espresso infused, pumpkin spiced almond butter is exactly that, a little jar of awesomeness you can call your very own.

Creamy, dreamy, vanilla spiked almond butter with heart warming hum of your favorite holiday spices and gentle hint of espresso . . .

As always our healthy, homemade almond butter is made with no refined flours or sugars, using just a handful of real food ingredients that I bet you have on hand already and it could not be easier to make!

Golden, delicious, nutrient rich almonds are lightly toasted then combined with a splash of vanilla, a spoonful of espresso, a sprinkling of our fun and festive, healthy, homemade pumpkin spice mix (which is a combination of all your favorite holiday spices – think cinnamon, ginger, all spice, nutmeg, cloves & cardamon – it’s pretty much Christmas in a cup!) and a cheeky pinch of salt.

Once you’ve roasted those golden delicious, nutrient rich almonds you’re divine little jar or perfectly spiced, espresso infused almond butter comes together in under 10 minutes!

And, it also happens to be vegan, gluten free and paleo friendly but, most importantly, it’s insanely (and I mean I-N-S-A-N-E-L-Y) delicious and you need it in your life like, yesterday!

Seriously, stop what you’re doing. This needs to happen now!

Here’s how you do it –

Start off by giving our golden, delicious, nutrient rich almonds a quick little roast in the oven – toasting our nuts before we blend our butter helps to give it a more decadent and rich depth of flavor – please don’t skip this step. Yes it’s an extra 5-10 minutes but, trust me – it’s absolutely, 100% worth it!

Now, once our almonds are nicely toasted, and your house smells like heaven, all you have to do is toss those golden nuggets of deliciousness into your food processor or blender and you’re pretty much done!

Initially your nuts will get all chunky, then after a minute or two they will break down into a fine looking flour, then the real magic happens, the heat and friction from all that blending will extract the natural oils from our almonds and in a matter of minutes,

Espresso Infused Pumpkin Spiced Almond Butter
{Vegan, Gluten Free & Paleo Friendly}
Makes approx 1 1/2 heaping cups of all natural, quick and easy, creamy, dreamy, delicious, nutritious, espresso infused, perfectly spiced, healthy, homemade almond butter

Ingredients –

2 cup of raw almonds

1 Tablespoon of vanilla bean extract

1 teaspoon of instant espresso

1 teaspoon of healthy, homemade pumpkin spice mix

1/2 teaspoon of salt flakes

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) and pour on your almonds, making sure they are spread evenly – aka not crowded.

3 – Roast your almonds for 10 minutes, until lightly toasted and deliciously golden.

4 – Pour your roasted almonds into the bowl of your food processor or blender and process until smooth and creamy (or your desired consistency). Initially the almonds wil grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Once you have blended to your desired consistency, add your vanilla, instant espresso, pumpkin spice and salt then process until well combined.

6 – Taste and adjust seasoning accordingly – add a little extra salt or more vanilla or pumpkin spice if you feel the need and, if you prefer a thinner/more runny consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that 😉 )

Chai Spiced Almond Butter {Vegan, Gluten Free & Paleo Friendly}
Makes approx 1 1/2 heaping cups of all natural, quick and easy, creamy, dreamy, delicious, nutritious, perfectly spiced, healthy, homemade almond butter chai inspired almond butter.

Ingredients –

2 cup of raw almonds

1 Tablespoon of vanilla bean extract

1 teaspoon of ground cinnamon

1/4 teaspoon of ground nutmeg

1/4 teaspoon of cloves

1/4 teaspoon of cardamom

1/2 teaspoon of salt flakes

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) and pour on your almonds, making sure they are spread evenly – aka not crowded.

3 – Roast your almonds for 10 minutes, until lightly toasted and deliciously golden.

4 – Pour your roasted almonds into the bowl of your food processor or blender and process until smooth and creamy (or your desired consistency). Initially the almonds wil grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Once you have blended to your desired consistency, add your vanilla, salt and spices then process until well combined.

6 – Taste and adjust seasoning accordingly – add a little extra salt or more vanilla/cinnamon/spices if you feel the need and, if you prefer a thinner/more runny consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that 😉 )

Cinnamon spiced almond butter.

This little jar of heaven was inspired by a much loved American classic cookie . . . the good ol’ snickerdoodle!

Side note – I was going to title this recipe snickerdoodle almond butter because;

1 – Snickerdoodle is so fun to say (seriously, try and say it without cracking a smile) and;

2 – Those classic cookies (which I recently learned are my sisters all time fave) were the inspiration behind today’s recipe but . . . snickerdoodles are not something we have here in Australia (so sad 🙁 ) so I was worried my fellow Australian’s may not get the affiliation and the last thing I want to do is make anyone feel left out of the loop so, I decided to go with cinnamon spiced almond butter instead. Not sure why I felt the need to tell you that but there you have it 🙂

Just quickly, for those of us who are unfamiliar with the awesomeness that is the snickerdoodle let me get you all caught up, a snickerdoodle is basically a trusty old sugar/butter cookie that has been spiced up with a dash of cinnamon.

So simple but so good!

Now, those of you who follow along on Facebook or Instagram already know how excited I am about this latest batch of almond butter.

I may or may not have eaten a more than intended on my initial tasting because I just could not get over how delicious it was.

Surely something so simple couldn’t possibly be so, SO outrageously delicious?!

But nope, I checked, and checked and checked again with spoonful, after spoonful, after delicious little spoonful and sure enough – it is possible!

You guys . . . this stuff is so good it’s kind of ridiculous, I know you’re going to love, love, love it!

As always our healthy, homemade almond butter is made with no refined flours or sugars, using just a handful of real food ingredients that I bet you have on hand already and once you’ve roasted those golden delicious, nutrient rich almonds you’re divine little jar or cinnamon spiced almond butter comes together in under 10 minutes!

Start off by giving our golden, delicious, nutrient rich almonds a quick little roast in the oven – toasting our nuts before we blend our butter helps to give it a more decadent and rich depth of flavor – please don’t skip this step. Yes it’s an extra 5-10 minutes but, trust me – it’s absolutely, 100% worth it!

Now, once our almonds are nicely toasted, and your house smells like heaven, all you have to do is toss those golden nuggets of delicious into your food processor or blender and you’re pretty much done!

Initially your nuts will get all chunky, then after a minute or two they will break down into a fine looking flour, then the real magic happens, the heat and friction from all that blending will extract the natural oils from our almonds and in a matter of minutes,
