I know when it comes to choc-mint it’s one of those flavours that you either love it, or you really, REALLY don’t!

I personally am not a big choc mint fan but, come December, I do love a good peppermint mocha. Although It has to be heavy on the coffee, heavy on the chocolate with just a hint of minty freshness.

And let me tell you, these choc fudge lava brookies are pure magic.

They’re subtly sweet, super fudgy, seriously chocolaty  . . .

And then we have that dreamy little surprise inside . . .

You guys . . . how have I never made lava cookies before?

I guess I always thought they sounded a little fancy and beyond my skill level but when Eve suggested we stuff each mound of cookie dough with a square of dark chocolate . . . My girl is smart I tell you, she did me proud  . . . I mean, can you even  . . .

Super simple to make using just a handful of ingredients that I bet you have on hand already and come together in 1 bowl with 1 spoon and bake up to delicious, delectable, devourable perfection in just 8-10 short minutes but there is a catch . . .

The trick to getting the choc fudge lava cookie of Eve’s dreams is that you do have to chill the dough before baking . . . You can freeze for 30 minutes or refrigerate for 1-2 hours . . .

Will waiting be a little difficult? Possibly for some (some being Eve and I)!
Will it be worth it? Absolutely,  100%, without question, so, SO worth it!

NOTE – You can totally chill for longer than 1-2 hours, if it’s getting late here’s what I suggest you do, run to the kitchen, mix them up now, it will take 2 minutes. Tuck your fine self into bed have an amazing sleep, dreaming of the choc fudge lava cookies you’ll get to devour that very next morning.

Wake up, roll out of bed, wash your pretty face, stuff and roll your cookie dough, then in 8-10 minutes your early morning coffee drinking, cookie eating self will be totally high-five-ing your last nights self for putting in the (2 minutes) work to mix up and chill the dough for your fresh-faced self to enjoy this morning.

And yes, made primarily with egg and nut butter (and a cheeky pinch of espresso) means they are totally acceptable for breakfast consumption plus candy cane crumble = minty fresh breath so you don’t even to worry about brushing your teeth after . . . OK maybe not, please still brush your teeth, always, but the occasional cookie for breakfast in December is OK by me.

FYI – this topped with a scoop of vanilla bean ice cream would be an amazing make-ahead Christmas dessert too.

Super Fudgy {Flourless} Choc Mint Lava Cookies

  • Cook Time: 6-8 mins
  • Persons: 6-10
  • Difficulty: Easy

  • Ingredients
  • For the cookies;
  • 1 egg – or flax egg
  • 1/2 cup of almond butter – I use natural, unsalted.
  • 2 Tablespoons of maple syrup – I use sugar free / monk fruit
  • 2 Tablespoons of coconut oil
  • 1 teaspoon of vanilla
  • a few drops of peppermint extract (or 1 drop of peppermint oil or 1/4 teaspoon of peppermint stevia drops)
  • 3/4 cup of almond flour/meal
  • 1/4 cup of cacao
  • 1/4 cup of monk fruit sweetener or granulated sweetener of choice –
  • 1 teaspoon of baking soda
  • 1 pack of before you speak high performance instant espresso – I use the decaf mocha so safe for Eve to eat + makes the perfect bed time treat! You can also use 1/2 teaspoon of regular instant coffee or just leave it out if you don’t like that hint of espresso
  • 1 pinch of salt
  • 1-2 Tablespoons of unflavored collagen – optional – will not change the taste or texture but adds a hit of protein (which makes me feel better about eating them for breakfast) & is great for hair, skin, nails and gut health
  • For the lava centre;
  • 1 block (10-12 squares) good quality dark chocolate + extra for drizzling
  • Optional for serving;
  • Candy canes, crushed.
  1. Instructions
  2. Place all ingredients apart from chocolate & candy canes if using in to a small bowl and stir until smooth and well combined.
  3. Now comes the hard part – place your cookie dough in the freezer for 30 minutes to chill (or refrigerate for 1-2 hours or over night ) DO NOT SKIP THIS STEP this is what helps the cookies hold their shape while baking & gives them that epic fudgey brownie texture!
  4. Once your dough has chilled – and you’re ready to bake –
  5. Preheat your oven to 175’C / 350’F line a baking tray with baking/parchment paper (or a silpat mat) and set aside.
  6. Take 1 heaping Tablespoon of cookie dough.
  7. Flatten slightly in the palm of your hand.
  8. Place 1 square of chocolate in the centre of your cookie dough.
  9. Top with another Tablespoon of (slightly flattened) cookie dough.
  10. Fold/roll/pinch the edges of your cookie dough sandwich to seal and secure your piece of chocolate inside. It should look like a cute little ball.
  11. Place on to your prepared baking tray. Repeat until all cookie dough has been used.
  12. Bake for for 6-8 minutes until the edges feel just set. Note – they will still be extremely soft. That’s what you want. Trust me.
  13. DO NOT OVER BAKE – set them aside for 2-3 minutes to cool – they will be crispy on the outside and ooey, gooey, chocolate filled on the inside.
  14. Store in an air tight container, note if you refrigerate – the chocolate lava will solidify.
  15. Enjoy xo

Super Fudgy, Flourless, Dark Chocolate Sweet Potato Brownies
{Nut Free – Gluten Free – Dairy Free – Refined Sugar Free – Vegan – Keto – Paleo Friendly}

Makes 9 tiny but mighty, decadent, rich, deliciously indulgent, seriously chocolaty, super fudgey, secretly healthy, chocolate brownies.

Ingredients –

1 cup mashed sweet potato – I used 1 medium – keto friends feel free to sub 1/2 sweet potato/1/2  avocado

1/2 cup tahini

1 egg – vegan friends sub a flax/chia egg or your fave egg replacer

1/4 cup cacao*

1 Tablespoon of vanilla extract

3-4 Tablespoons of plant based sweetener of choice –  I use Nuiva – you can sub monk fruit  monk fruit sweetener or 1/4-1/2 cup of coconut sugar

1 teaspoon of instant espresso – optional this really helps enhance the richness of the chocolate

2 Tablespoons of filtered water

1/2 teaspoon sea salt

2-4 Tablespoons of your fave dark chocolate chopped – optional (but not really 😉 )

Optional add in’s;
2-4 scoops of  Vital proteins unflavored collagen peptides – Optional for gut healing goodness – vegan friends omit

2 teaspoons of maca – for hormone balance

* I’ve also made these VERY successfully using 1/4 cup of Perfect Keto Choc MCT oil powder in place of the cacao

Method –

1 – Pre-heat oven to 175’C/350’F

2 – Grease a small square baking dish  with coconut oil/ghee or baking/parchment paper and set aside.

3 – Place all ingredients apart from chocolate , if using,  into your food processor or blender and process until smooth, creamy & well combined. If your batter is a little thick, add a splash or two of almond milk (or milk of choice) 1 Tbsp at a time to reach a smoother consistency.

4 – Pour into your prepared baking dish  and bake for 12-15 minutes until the edges are set and a toothpick has just a few moist crumbs attached when inserted into the centre.

DO NOT OVER BAKE!!!

5 –  Cool – slice – devour!

For best results allow to cool completely before serving. I prefer mine chilled.

You guys I am so excited about this weeks test it out tuesday recipe! As soon as I saw the original recipe that Averie had posted last week over on her incredible blog, Averie Cooks I knew I had to make it asap!

Umm hello peanut butter and chocolate mini muffins, want. Need. Must have, like 5 mins ago!

Oh and you guys I have to tell you, I am feeling soooooo much better!

Still not 100% but those moments that had me feeling like I have been punched in the face a million times are wayyyyy less frequent!

Celebrate with me?

Come on, you know you wanna?!

We can do it by making some adorable little mini muffins.

Not just any mini muffins, how about we make some peanut butter, banana and choc chip mini muffins.

Just incase you need any more convincing here are a few reasons why I had to make these muffins asap –

1 – I always, always have at least five one manky over ripe bananas laying around on my kitchen counter waiting to be shown whose boss used

2 – These adorable little PB, Banana, Choc Chip mini muffins are flourless, I was intrigued, muffins you make with little more than peanut butter, banana, egg and a few choc chips. Seriously? Ugh and why does my auto correct always change “choc” to chic – annoying!!!!

Ok so flourless mini muffins means these bad boys are grain free my friend which means that even though sweet sister of mine isn’t actually here for me to need to cater to her special dietary requirements I could totally share this recipe with her . . . I love that! I may or may not have totally eaten like 6 of these on her behalf. Totally taking one for the team, I’m good like that.

3 – I recently learned that November is National Peanut Butter Month! Yes really, it’s like totally a thing, did you know? I had no idea but Laurie said it so it must be true.

4 – I just got my hands on a fresh jar of chocolate PB2 which I was just dying to crack into and making these mini muffins would provide the perfect excuse. Not that I really need an excuse to bust into a jar of chocolate peanut butter (←um hello chocolate peanut butter – totally necessary all of the time no excuse necessary) but hey, whatever you have to tell yourself to get these mini muffins baking already right?!

Right! So let’s make some mini muffins already!

Oh wait, I forget to mention we make these muffins by simply throwing a few ingredients into a blender, stirring through some choc chips then we bake and boomshakalocka, done! Freshly baked, flourless peanut butter, banana, choc chip mini muffins made from scratch, start to finish ready in less than 20 mins. Yes please!

You guys . . . these muffins . . . out-rage-ous!

So chocolately.

So fudgey.

So insanely delicious and dangerously easy to eat, it’s lucky they also happen to be all kinds of healthy.

They are a slightly different texture than your regular run of the mill mini muffin because they are made with no flour and all. Think more fudgey, less cakey.

Sweetened simply with banana, maple syrup and vanilla extract so there are also no refined sugars added. These super moist (←sorry) mini muffins are not only super fudgey, intensely chocolaty and all kinds of delicious, they are also all natural baby.

When Averie mentioned that although these muffins are sweetened with banana you couldn’t tell I gotta be honest, I didn’t really believe her. Surely there would be a lingering, residual banana flavoured aftertaste. Something. Anything. But you know what . . . I got nothin’.

My little lady didn’t notice, spunky husband didn’t pick it. All we got was chocolate, peanut butter goodness. Not that it would be a bad thing to taste the banana. I love banana and of course banana, PB and chocolate is always a winning combination but I just thought you should know.

Averie was totally right. You would never know there was banana in there so if you have any banana haters in your house, totally feed them these. They will never know mwahahahaha. Sorry, you know how much I love to sneakily feed people food they think they hate. I have issue I know. We all have our things right?!

These mini muffins are also packed with protein from the egg and peanut butter, or chocolate PB2 in my case,  oh and let’s not forget all those delicious little antioxidants from the dark chocolate chips – umm hello, winning!!!!

You need these in your life! And when you follow the recipe I share below these delicious little mini muffins clock in at a measly 33 calories a piece.

Super fudgey, insanely chocolatey, peanut butter flavoured mini muffins that are all natural, packed with protein and studded with delicious little bites of antioxidant rich dark chocolate chips at a minuscule 33 calories a piece, what are you waiting for?!

Flourless Peanut Butter Banana Choc Chip Mini Muffins
Slightly adapted from this recipe shared by the incredible Averie of Averie Cooks
Makes 24 mini muffins

Ingredients –

I medium size over ripe banana

1 egg

1/2 cup (8 Tablespoons) of Chocolate PB2, mixed with 6 Tablespoons of water (can sub for 1/2 cup of your fave peanut butter)

2 teaspoons of vanilla extract

3 Tablespoons of maple syrup

1 teaspoon of coconut oil, melted and cooled.

1/4 teaspoon of baking soda

pinch of salt flakes

3 Tablespoons of dark chocolate chips, roughly chopped.

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Prepare your mini muffin tray either buy lightly greasing the tray or lining with pale cases . . . I would have lined with paper cases but I was all out.

3 – Place all ingredients except for your chocolate chips into a blender or food processor and blend/process until smooth.

4 – Stir in 3/4 of your chocolate chips and spoon batter into your prepared mini muffin tray and sprinkle with remaining chocolate chips.

5 – Bake for 8-10 mins until the tops spring back when lightly pressed and a tooth pick has just a few crumbs attached when inserted into the centre.

6 – Allow to cool in the tray for 5-10 mins before transferring to a wire rack to cool completely . . . if you can wait that long 😉
