So I’m going to be totally lame and talk about the fact that I can not, for the life of me, believe that it’s October already?!

I mean seriously?!

How?!

When did that happen?!

Well according to the calendar I guess it happened 18 days ago but still . . . where has this year gone?!

October . . . already?!

I just can’t seem to wrap my head around it?!

And I’m not really sure how I feel about it?!

I mean Christmas is my all time fave but I’m having some mixed emotions because this time of year is when we usually take our annual Swanston Family Vaycay to our beloved home away from home, Denver, Colorado.

And as excited as I am to dig in and get all kinds of festive fun happening up in here I’m having a hard time because my heart is aching for fall. Cool crisp mornings, fresh mountain air and pumpkin spiced everything!!!!!

There is something truly magical about that humble looking, ombre’ beige, spice blend that not only tastes all kinds of incredible but it truly makes my heart all kinds of happy.

The smell alone has me feeling all of those warm, fuzzy Christmas-y feels!

Now, here in Australia for some reason we haven’t yet discovered the joy that is well, pumpkin spiced anything so what’s a girl to do when her heart aches for fall, and pumpkin spiced everything yet sadly there is no vaycay or pumpkin spiced anything on the cards?! Or is it in the cards!? Either way, it ain’t happening!

So what’s a girl to do?!

She gets creative in the kitchen and comes up with her own deliciously simple, quick and easy, healthy homemade {sugar free} pumpkin spice mix that’s what!

Problem, solved.

Well apart from the whole vacation thing but let’s not get into that!

Today’s recipe is one that is super quick and easy to prepare made with just a handful of ingredients that I bet you have tucked away in the back of your spice cabinet, ready and waiting, simply begging to be transformed into one purely magical, heart-warming spice blend.

Ahhh I love this spice mix so, SO much – it really is like a little jar of happiness.

Don’t you just love the way food, both taste and smell, has the ability to magically transport you to another time and another place and bring back the most incredible memories and feelings that are so strong, it’s as though you could almost reach out and hug them?!

Well that’s what this spice mix does for me?!

One smell and I am whisked away to my beloved home away from home, enjoying quality time with my nearest and dearest, holding a steaming cup of perfectly spiced coffee in my hands, feeling the cool crisp mountain air on the back of my neck as I gaze fondly at the most miraculous looking snow capped mountains you ever did see.

This healthy, homemade pumpkin spice mix brings together all those familiar, nostalgic tastes and smells that come to mind when I think of Christmas (and Thanksgiving and well just all things fall for my American friends).

Cinnamon, ginger, nutmeg, cloves, allspice and a pinch of cardamon – it’s chai spice meets gingerbread spice. . . doesn’t it just make you feel all warm and fuzzy even just reading that combination of spices all together in one delicious little sentence?!

The smell alone is enough to transport me to another time and another place where the air is crisp, the mountains are capped with snow and everything just seems to sparkle.

All you have to do is throw together a handful of spices and you’re ready to go!

Healthy, homemade Pumpkin Spice Mix

  • Prep Time: 2 mins
  • Persons: 16+
  • Difficulty: Easy

  • Ingredients
  • 2 Tbsp ground cinnamon
  • 2 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp ground all spice
  • 1/2 tsp ground cloves
  • 1 pinch ground cardamom – optional
  1. Instructions
  2. Place all ingredients into a small bowl or glass jar (or even just a zip lock bag would work)  and stir (or shake) to combine.
  3. Store in a sealed, air tight container (or ziplock bag). Should keep well for up to 3 months

Made with simple ingredients that I bet you have on hand already and can be ready to devour in less than 15 minutes!!

Honestly, I don’t know what more I need to tell you.

If you, like me, have a major soft spot for dark chocolate & nut butter (who doesn’t?!) then Easter/celebrating or not, you need these in your life like, yesterday!

Also, “eggs” + nut butter (& a cheeky hit of espresso) = totally acceptable for breakfast consumption.

Copycat Reese's {Dark Chocolate Peanut Butter} Eggs

  • Prep Time: 20 mins
  • Persons: 8-14
  • Difficulty: Easy

  • Ingredients
  • For the peanut butter filling –
  • 1/2 cup of peanut butter (or nut/seed butter of choice)
  • 1 teaspoon of vanilla – more or less to taste
  • 2-3 Tablespoons of powdered sweetener or vanilla protein powder .
    I do 1/2 protein pwd & 1/2 monk fruit icing sugar.
  • A pinch of flaky sea salt
  • Optional add-in;
  • 1 scoop of collagen – great for hair, skin, nails and gut health
  • For coating –
  • 1 cup of dark chocolate
  • 1/2 tsp finely ground instant espresso pwd (reg or decaf) -technically optional but SO GOOD!
  1. Instructions
  2. Line a small tray (or plate) with baking/parchment paper and set aside.
  3. Place all filling ingredients into a small bowl and stir until well combined.
  4. Taking approximately 1 Tablespoon at a time (depending on how big or small you want your egg to be) roll them into balls, then gently pinch one end to create an egg shape then place your PB egg on to your prepared baking sheet.
  5. Repeat until all mixture has been used then place your PB egg laden tray into the fridge or freezer for 5-10 mins to chill while you prepare that dreamy chocolate coating.
  6. Melt chocolate by your preferred method.
  7. Removed chilled PB eggs from the fridge/freezer.
  8. Taking one PB egg at a time, place into melted chocolate, use 2 forks to gently toss/coat each egg, tapp off any excess melted chocolate and return to your lined tray.
  9. Repeat until all PB eggs have their deliciously indulgent, dark chocolate coating.
  10. Drizzle any remaining chocolate over your now coating PB eggs.
  11. Pop them back in to the fridge (or freezer) for 5-10 mins to set.
  12. Devour!
  13. These delicious little eggs will keep well in the fridge for several weeks but can also be stored in the freezer for 3-6 months!

{Small batch} Flourless choc chip almond butter blondies

Perfect for those moments when you need a blondie (or 2) but don’t want to bake, or can’t be trusted with ( ← tell me I’m not the only one?!), an entire batch of 12-24.

Subtly sweet, deliciously buttery, crispy on the top, super fudgy in middle and chock full of choc chips

They’re ooey, gooey & all kinds of wonderful and yes, you NEED them!

Made with no refined flours or sugars using just a handful of ingredients that I bet you have on hand already & come together in 1 bowl, with 1 spoon, ready to devour in just 20 mins!

Feel free to double-triple-quadruple the batch if you’re feeding a crowd (or have the self control of a saint) – just make sure you adjust the bake time accordingly – and although they taste ah-maze-zing cold and re-heat like an absolute dream – they’re so quick and easy to make and I think you and I can both agree that nothing quite compares to that new, new, freshly baked, ooey, gooey goodness.

Also, made primarily with eggs & nut butter = totally acceptable for breakfast consumption. Living our best working from home, schooling from home, lockdown lives up in here!

If you do one more thing today, please let it be making these!

{Small Batch} Flourless Salted Choc Chip Almond Butter Blondies Gluten Free - Dairy free - Grain free - Refined sugar free - Low carb - Paleo - Keto & Vegan friendly - www.betterwithcake.com

Small Batch Flourless Choc Chip Almond Butter Blondies

  • Cook Time: 15-20 mins
  • Persons: 4-9
  • Difficulty: Easy

  • Ingredients
  • 1 egg – vegan friends sub 1 flax egg or you fave egg replacer
  • 1/2 cup almond butter – I use 99th monkey – natural, smooth & unsalted
  • 1/4 cup of monk fruit sweetener ( or granulated sweetener of choice) I use the brown sugar alternative @ lakanto
  • 1 Tablespoon of coconut oil, melted and cooled
  • 1 Tablespoon of maple syrup – I use sugar free
  • 1 teaspoon of vanilla extract
  • 1 Tablespoon of coconut flour
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt + extra for sprinkling
  • Good quality dark chocolate , roughly chopped – measure with your heart
  • 1 scoop of collagen – optional but adds a hit of protein and is great for hair, skin, nails and gut health
  1. Instructions
  2. Pre-heat oven to 175’C/350’F
  3. Line a small baking dish  (or mini loaf pan) with baking / parchment paper and set aside
  4. In a medium size bowl, lightly whisk your egg.
  5. Add all remaining ingredients , except chocolate,  and stir to combine.
  6. Fold through chocolate.
  7. Bake for 15-20 minutes, until the top is golden and a tooth pick has just a few crumbs attached when inserted into the middle. DO NOT OVERBAKE!
  8. Allow to cool for 5-10 minutes (if you can) – sprinkle with salt.
  9. Slice
  10. Devour!

    Note – These blondies can be kept refrigerated for 5-7 days or frozen for 3-6 months.

    To re-heat simple thaw to room temp, pop them in the oven ,  on low for 5- 10 mins until heated through, or just microwave for 30 seconds or so.

Healthy Shamrock Shake

  • Prep Time: 2 mins
  • Persons: 1
  • Difficulty: Easy

  • Ingredients
  • 1/2 C vanilla yogurt
  • 1/2 C unsweetened vanilla almond milk (or milk of choice ) – more or less to desired consistency
  • 1/2 tsp matcha powder
  • 1 Tbsp cashew butter
  • 1/2 tsp vanilla
  • a few drops of peppermint extract  – a little goes a long way!
  • 1/2 C frozen zucchini – makes it extra thick – you cant taste it , promise!
  • A pinch of pink salt
  • 1/4-1/2  cup of ice – more or less to desired consistency
  • * If you like a sweet brew, add 1/2-1 teaspoon of monk fruit sweetener (or sweetener of choice) to taste
  • A handful of ice
  • Best served with a dollop of whip, a cheeky shaving of dark choc & a crushed (GF) oreo!
  • Optional add ins;
  • A handful of spinach + 1/4 of an avocado for healthy fats and extra fibre!
  • 1 Tbsp melted sugar free dark chocolate sauce to swirl your glass with happiness
  • 1-2 scoops of collagen – for gut healing goodness
  • 1 scoop protein powder – for extra protein – vanilla works best in this recipe imo*
  1. Instructions
  2. Place all ingredients into your blender and process until smooth, creamy, and well combined.
  3. Pour into a chilled glass or mason jar then top with toppings of choice.
  4. Enjoy xo

The hardest part about making these bars is waiting for them to set.

Hello – healthy {DATE FREE} gingerbread Twix bars!!!!!!!!!!!!!!!!!!

The perfect make-ahead treat for Christmas, that’s if they last until then that is!

Gluten free – Dairy free – Grain Free – Refined sugar free – Low carb – Vegan – Keto and Paleo friendly.

All natural, quick and easy, deliciously buttery, perfectly spiced,  secretly healthy (date free) gingerbread Twix bars!

Date Free - Gingerbread Twix Bars

  • Time: 40-60 mins
  • Persons: 10+
  • Difficulty: Easy

  • Ingredients
  • For the shortbread base –
  • 1/4 cup (do not pack) coconut flour
  • 1/4 cup almond meal
  • 1/4 cup of coconut oil, melted
  • 1/4 cup of maple syrup (I use sugar free/monk fruit maple)
  • 1 teaspoon of vanilla
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of ground ginger
  • 1 pinch each of nutmeg, all spice, cardamom and cloves
  • 1 pinch of salt
  • For the salted caramel filling –
  • 1/2 cup almond butter
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup (I use sugar free)
  • 1 teaspoon of vanilla
  • A generous pinch of salt
  • For the chocolate coating –
  • 1/4 cup of good quality dark chocolate – double this if you want to completely coat your twix bars
  • 1/2-1 teaspoon of instant espresso – optional – I use 1 x sachet of decaf mocha before you speak coffee – EMS10 = 10% off if you want to try it
  • 1 teaspoon of coconut oil
  • A pinch of salt + extra for serving
  1. Instructions
  2. Pre-heat oven to 175’C/350’F.
  3. Line a small rimmed baking dish or loaf pan with non-stick parchment paper and set aside.
  4. Place all ingredients for the base into a small bowl and stir until well combined.
  5. Press shortbread base in to your prepared baking dish (or loaf pan) and press down into one nice smooth even layer.
  6. Bake for 10-12 mins til the edges are golden & base has set. NOTE – it will still be slightly soft to the touch, it firms up as it cools.
  7. Set aside to cool.
  8. Place all ingredients for your almond butter caramel in to a small bowl and stir until smooth, creamy and well combined.
  9. Pour your salted caramel almond butter filling over your shortbread base and smooth in to a nice, even layer.
  10. Place in the freezer to set – should be ready in 15-20 minutes.
  11. Melt together chocolate, coconut oil and espresso (if using) by your preferred method – I like to do mine double broiler style, by placing the chocolate in to a bowl then sitting it on a small sauce pan filled with about 2 cm of water, let the water  simmer , without touching the bottom of the bowl, stir the chocolate occasionally until completed melted.
  12. Now – you have 2 options here -1 – which is the option I chose – I sliced the chilled/set twix bars then drizzled the tops of each bar with melted chocolate, repeating until all bars with crowned with chocolate, then drizzled the remaining melted chocolate over the top to make a pretty pattern.2 – You can simply pour your melted chocolate on to the base, then slice it as a whole. If you choose to take this option, be warned the chocolate layer can crack as you slice it. I suggest heating the blade of your knife with boiling water before slicing, the heat makes slicing easier (and the chocolate is less likely to crack as much) as the heated blade will melt the chocolate layers as you press to slice.Just make sure you wipe any excess water off the blade before slicing.
  13. Enjoy xo

Note – Bars are best stored in an air tight container in the fridge (can also be frozen)

Say hello to my current and your soon to be, new fave snack obsession . . . No bake choc chip peanut butter protein bars – aka a perfect bar copy cat!!!!

If you follow along on Instagram you may recall that earlier this year spunky husband took me on a surprise vaycay to my home away from home, my beloved happy place, Denver, Colorado. While we were there, we were reunited with one of our fave snacks of all time. The choc chip peanut butter perfect bar! It has been 5 years since we last got to have one and honestly, I had forgotten how incredible they are. If you’re lucky enough to have had the life changing deliciousness that is the choc chip peanut butter perfect bar you already know how amazing they are and how gripping the obsession can be.

They are truly all kinds of incredible, I’m talking dangerously addictive . . . or is it addicting?! I can never decide . . . anyway . . . we were well and truly obsessed . . .

So, when we returned home to the land where perfect bars do not exist *waahhhh* (and the withdrawal had kicked in) my mission was clear . . . a copy cat version must be created. And, well, I don’t want to toot my own horn or anything but (after a few failed attempts) I absolutely nailed it!

These choc chip peanut butter protein bars are just as good, if not, dare I say?! , better than the original . . . the taste, the texture (not the mention the super budget friendly price point) exceeded all of my expectations! They really are well, perfect.

They taste like your eating straight up dessert (think peanut butter cups but in bar form!) and are without question the perfect snack to keep you (and your belly) happy, thriving & crushing your to-do list, all week long!

Made with just a handful of simple, real food ingredients that I bet you have on hand already and come together in one bowl with one spoon (no baking required!!!) and can be ready to devour in just a matter of minutes!

Super simple, I N S A N E L Y delicious and get bonus points in my book because they also happen to be secretly good for you! Im talking gluten free, dairy free, grain free, sugar free, low carb, paleo, keto & 100% vegan friendly – not that anyone would know. I mean, did you hear me up there . . . secretly healthy dark chocolate peanut butter cups but in bar form?! hello deliciousness!!!!!! And yes, all the exclamation points are 100% required plus maybe a few more!!!!!!!!!!!!!!!!!!!!!!!!!!

Honestly, I don’t know what more there is to tell you . . .

1 bowl + 7 ingredients & 15 mins . . . stop what you’re doing, this needs to happen now . . .

{Sugar Free} Choc Chip Peanut Butter Protein Bars

  • Prep Time: 5 mins
  • Difficulty: Easy

  • Ingredients
  • 1/4 C (30g) protein powder – I use Macro Mike’s vanilla buttercream almond protein or the caramelized white choc *
  • 3/4 C (100G) almond flour
  • 1 Tbsp monk fruit sweetener**
  • 1/2 tsp pumpkin spice – opt but SO good!
  • 2/3 C (85G) smooth peanut butter (the natural kind – just peanuts & salt)***
  • 2 Tbsp maple syrup – I use sugar free/monk fruit maple
  • 1 tsp vanilla
  • 1-2 Tbsp unsweetened almond milk – or water – just enough to bring the “dough” together
  • Dark choc – chips or chopped – measure with your heart
  • A pinch of flakey sea salt
  1. Instructions
  2. Line a small square baking dish (I used a 5 x 5 inch) or loaf pan with baking/parchment and set aside.
  3. Place all ingredients (except for the chocolate & milk / water) in to a medium size bowl and stir until well combined.
  4. add milk or water 1 tsp at a time (as needed) just enough to bring the dough together.
  5. Press dough into your prepared baking dish or loaf pan and flatten with silicone spatula, spoon or even just your hands pressing down in a nice even layer & making sure its smoothed all the way to the edges.
  6. Add chocolate chips + sea salt the press again to make sure they hold firm into the top of the dough.
  7. Place in freezer for 15-20 mins to set
  8. Once set, cut into bars and they’re ready to go!
  9. Store in airtight container in the fridge.
  10. Enjoy xo

* I big puffy heart LOVE Macro Mike plant based almond protein powder (have not tested any other brand in this recipe). Its gluten free, dairy free, sugar free, boosted with probiotics & truly tastes all kinds of incredible. Its hands down without question the smoothest, most delicious, elite tasting protein powder (plant based/dairy free or otherwise!!) I have ever tried. And I have tried A LOT!

** technically optional but it really does elevate the flavour of the bars (and your life by extension)! I use this golden blend which adds a hint of caramel like regular brown sugar does. It’s truly magical & 100% worth it! but regular monk fruit or your preferred granulated sweetener will work just fine too xo

*** can sub almond butter but will change the taste slightly. Still delicious just not as punchy or peanut buttery (obvs)

I’m trying to think of something fun to tell you, a funny story, an interesting fact, some witty caption but honestly, I got nothing. All I can think about is how obsessed I am with these inside-out, sugar-free, dark chocolate peanut butter cups and I am SO excited for you to make (and LBR, EAT) them but also, Im super sad I ate mine already!

Here me when I say, these inside-out, sugar-free, dark chocolate peanut butter cup fudge bites are going to turn your world upside down, or maybe I should say, inside out?! . . . coz they’re inside out peanut butter cups not upside down . . . *sigh* I told you I got nothing . . .

Super simple, INSANELY delicious, and yes, you need, that’s right I said NEED on (or 10).

A few tips on how to make (and store) your deliciously indulgent, sugar-free, dark chocolate peanut butter cups :

Tip # 1 –  Choose a super smooth (but additive-free) nut butter. The kind I used was just peanuts and salt . . . the smoother the better because you want that outer layer to be silky smooth. If you use a crunchier / less smooth nut butter I’m sure your sugar-free dark chocolate peanut butter cups will still be just as delicious but nowhere near as aesthetically pleasing . . . I know, I know, we should never judge a book (or peanut butter cup) by its cover because it’s what’s on the inside that counts and I wholeheartedly agree with that statement (and FYI – I, personally, generally prefer a super crunchy peanut butter) but in this case, smooth is best.

Tip # 2 – Make sure your chocolate filling has cooled to (at least) room temp before you try to fill your peanut butter cups or the heat from the chocolate will cause your peanut butter cups to melt. If this happens, not a big deal, just continue to fill and chill . . . they will still be edible and just as delicious but again, not as aesthetically pleasing.

Tips for storing your sugar-free dark chocolate inside out peanut butter cups:

They must be kept chilled! Because they’re inside out and the peanut butter “cup” doesn’t set as firmly as a traditional chocolate cup would they have a more fudge-like texture and if you leave them sitting out, especially in this warmer weather, they will melt. Still delicious just very messy is all.

Ok, I think that’s it from me . . .

Sugar-Free Dark Chocolate Inside Out Peanut Butter Cup Fudge Bites

  • Cook Time: 5 mins
  • Persons: 12
  • Difficulty: Easy

  • Ingredients
  • For the peanut butter “cups”
  • 1/2 C super smooth peanut (or almond) butter
  • 2  Tbsp melted coconut oil
  • 2 Tbsp sugar-free maple syrup
  • A big pinch of salt
  • For the choc ganache filling –
  • 1/2 C chocolate chips
  • 1/4 C canned coconut milk
  • 1/2 tsp of finely ground instant espresso – optional but really helps enhance the richness of the chocolate + makes the cups, & your life by extension 10 x more magical
  • 1 scp unflavoured collagen – optional for an extra hit of protein (which makes me feel better about eating them for breakfast) + it’s great for hair, skin, nails & gut health!
  1. Instructions
  2. Line a 12 cup mini muffin tray with paper cases and set aside.
  3. Melt together peanut butter, maple syrup, and coconut oil – you can do this in a saucepan on the stove or in 30-second increments in the microwave. You want to make sure the mixture is semi-liquid/ smooth and pourable.
  4. Place a teaspoon or 2 of your melted peanut butter mixture into the bottom of each cupcake liner and use the back of the spoon to smooth it around and up the sides until it’s evenly coated.
  5. Place in the freezer for 5-10 mins while you make your luscious chocolate filling . . .
  6. Melt chocolate by your preferred method, then stir in your espresso powder (if using) and coconut milk until smooth and creamy.
  7. Set aside for 2-3 mins to cool to room temp so you don’t melt your peanut butter cups when you try to fill them
  8. Once your chocolate mixture has cooled and your peanut butter cups are set, place a tablespoon or so of the chocolate filling into each peanut butter cup, filling it about 3/4 of the way, use the back of the spoon to smooth it down and to the edges.
  9. Repeat until all peanut butter cups are filled.
  10. Spoon the remaining peanut butter mixture over the top, re-melt if you need, and smooth it to the side to cover the dreamy chocolate centre.
  11. Pop them back in the freezer for 2-3 mins to set.
  12. Enjoy xo

Best kept refrigerated, can also be frozen

Let me tell you, these low carb – sugar free – birthday cake protein bites = the sneaky snack you never knew you always needed!

1 bowl + 7 ingredients & 10 mins . . .

Birthday Cake Protein Bites

  • Prep Time: 10 mins
  • Difficulty: Easy

  • Ingredients
  • 1/2 C almond flour
  • 4 tbsp cashew butter
  • 1 tbsp maple syrup – or sticky sweetener of choice (I use sugar free – more or less to taste)
  • 1 tsp vanilla
  • 2 Tbsp vanilla buttercream (or white chocolate) almond protein
  • a  pinch of flakey sea salt
  • a splash of water – as needed – go easy, start with 1/4 tsp at a time – just enough to bring it together to form a dough
  • SPRINKLESSSSSSSSSS – measure with your heart
  1. Instructions
  2. Place all ingredients except for your sprinkles into a small bowl and stir to combine then set aside.
  3. Scoop and roll your into desired shape and size.Set aside
  4. Caaarrreeefulllllly pour your sprinkles in (or on) to a small bowl or rimmed plate (when I say carefully I mean carefully – those things will ricochet all over your kitchen floor & you will be stepping on them / curing me for months . . . so pls be careful) .
  5. Roll your birthday cake protein bites in your bowl/ plate of sprinkles, gentle press them as you rotate to make sure the sprinkles stick.
  6. Enjoy xo

Notes –

* These blissful bites of deliciousness are best kept in the fridge & should keep well in an air tight container for 1-2 weeks (but I doubt they will last that long because , yum! ) or you can freeze for up to 3 months.

** I love Macro Mike plant based almond protein powder (have not tested any other kind/brand in this recipe). Its gluten free, dairy free, sugar free, boosted with probiotics & truly tastes all kinds of incredible. I don’t know what it is about that combination of spices, it just makes me feel all the fun and festive feels (just in case you didn’t know, Christmas is my absolute favourite) and warms me down to the depths of my soul.

Maybe it’s because gingerbread is not something we have everyday. The acceptable window for gingerbread consumption is just a few short weeks, really just the month of December, so I think that helps to make it extra special.

Speaking of extra special . . .

You guys, these gingerbread muffins . . . where do I begin ?!

Aptly named the best ever/ my absolute fave because they really truly are. By December 4th and I may have made them 3 times already . . . Im sorry it took so long for me to share them with you, life has been cah-razy, I know you get it . . . but, one bite of these light, fluffy, perfectly spiced gingerbread muffins and all will be forgiven . . .

Yes, they really are THAT good!

Soft, tender, subtly sweet, perfectly spiced and just all kinds of wonderful.

Made with just a handful of ingredients that I bet you have on hand already and can be ready to devour in less than 20 minutes!

Serve them simple as they are, drizzle with a traditional powdered sugar glaze or a little melted coconut butter. Extra cinnamon for me please!

Or you totally serve them with this whipped vanilla cream cheese frosting, or this espresso cream cheese frosting or even this dark chocolate espresso ganache – or make a platter with some of each! ← this will be happening!!

However you choose to do it you really can’t go wrong!

And just when you thought you couldn’t love them anymore, this recipes makes just 6-9 delicious little muffins so it’s perfect for those moments when you’re craving a slice of gingerbread (or 2) but don’t want to bother baking, or can’t be trusted with (←we’ve all been there) an entire loaf (or batch of 12-24)

And, these babies are 100% freezer friendly so you can totally get a head of the game, and make them now, pull them out of the freezer on Christmas Eve, Christmas brunch, sorted!

1 bowl + 7 ingredients ( a handful of spices) and 20 minutes and you too could be devouring this deliciousness!

Healthy Gingerbread Muffins

  • Cook Time:20 mins
  • Persons: 6-9
  • Difficulty: Easy

  • Ingredients
  • For the muffins –
  • 2 eggs – or flax eggs
  • 2 Tbsp vanilla yogurt
  • 1 Tbsp vanilla
  • 1 Tbsp maple syrup – I use sugar-free/ monk fruit maple
  • 1 Tbsp almond milk – or milk of choice
  • 1 Tbsp vanilla
  • 1/4 C monk fruit sweetener – I use golden to give that hint of caramel like reg brown sugar does
  • 1 C almond flour
  • 2 Tbsp  caramel protein powder *
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp further food turmeric tonic – optional but adds extra spice & some anti-inflammatory goodness!
  • A pinch each of nutmeg, cardamom & cloves – I used my 1/8th tsp
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • A pinch of salt
  • 2 Tbsp unflavoured collagen – opt but adds a hit of protein & is great for hair, skin, nails & gut health!
  • For the glaze –
  • For the glaze –
  • 1/2 cup of powdered monk fruit sweetener – or powdered/icing sugar
  • 1-2 Tablespoons of almond milk or water – to desired consistency
  1. Instructions
  2. For the muffins ;
  3. Preheat oven to 175’C (350’F)
  4. Line (or grease and flour) a muffin tray with paper cases and set aside
  5. In a medium bowlmis your muffin ingredients until well combined.
  6. Spoon into prepared muffin tray and bake for 12-15 mins until tops spring back when gently pressed and a toothpick has just a few crumbs attached when inserted into the center
  7. Allow to cool in the tray for a few minutes before transferring to a wire rack to cool completely
  8. While your cupcakes are cooling prepare the frosting –
  9.  Place all ingredients for the glaze into a bowl and stir to combine. Sometimes it helps to sift the powdered sugar first so it’s not lumpy or hard work to make it smooth
  10. Drizzle glaze onto your muffins.

Im going to keep this short and sweet for you today because who wants to listen to (or read) my ramblings when there are caramel peanut butter crunch bars to be enjoyed!

A few weeks ago I was wandering (and by wandering I mean rushing) through the supermarket and something new caught my eye and stopped me dead in my tracks! Nestle’ had just released a new crispy snickers bar!?  The snickers crisper!  “Crisp rice, milk chocolate, caramel and peanuts. Now this is crispy satisfaction.”

Naturally I had to try one. It was good but not amazing, I certainly was not 100% satisfied. Don’t get me wrong. It was good, just not as life changing as I hoped it would be.

After just one bite and my mission was clear!

I had to recreate this epic sounding deliciousness, so it really did satisfy. Ummmm you guys, totally nailed it!

Allow me to introduce you to a new and improved snack that really will satisfy!

No bake, mix & make, raw, DATE FREE, caramel peanut butter crunch bars!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

And yes, the excessive amount of exclamation points are 100% necessary!

Plus maybe a few more !!!!!!!!!!!!!!!!!!!!

My copycat snickers crispers turned out way better than the original. And I don’t just mean because they’re made with more wholesome, “better for you” ingredients. My healthier, homemade version has a punchier, peanut butter flavour and also, dark chocolate always wins!

They really do taste out of this world incredible!

Light and crispy base, swirled with a punchy, date free, peanut butter caramel and lightly salted peanuts topped with another dreamy layer of smooth, rich, caramel all nestled under a layer of espresso infused dark chocolate.

OoooOOO mama!

And yes, the espresso in the chocolate coating is totally optional but I find it really helps balance out the sweetness of all the caramel but, if you’re not a coffee lover like me then tell me why we’re friends again?! Just kidding, more for me. Love you ♥  . . . feel free to leave it out , I absolutely love it but, you do you boo.

We can’t have anyone missing out on this . . .

Secretly healthy, copycat snickers crispers made with just 5 ingredients that I bet you have on hand already and come together in 1 bowl with 1 spoon and can be ready to devour in about 30 minutes!!!!

Honestly, the hardest part about making these bars is waiting for them to set.

Will waiting be difficult? Possibly, for some – some people being me. Please tell me I’m not the only one?!

But, will it be worth it?

Absolutely, 100% without question, oh so worth it!

See layer, upon, layer, upon layer of deliciousness?!

if you do one thing today (or at least add it to tomorrows to do list, please let it be making these copycat snickers bars, they really are edible awesomeness personified and you need them in your life because, yummmmmm!

Caramel Peanut Butter Crunch Bars aka - Snickers Crisper Copycat!

  • Prep Time: 10 mins - Chill time 20 mins
  • Persons: 10-20
  • Difficulty: Easy

  • Ingredients
  • For the crispy caramel base –
  • 1/2 cup peanut butter –  (or almond butter for paleo – Tahini would be great for a nut free option)
  • 1/4 cup liquid coconut oil
  • 1/4 cup maple syrup – I use sugar free, monk fruit maple
  • 1 scoop (4 Tbsp/ 40g) Macro Mikes plant based, peanut protein*
  • 1 teaspoon of vanilla
  • A generous pinch of salt
  • 1/4 cup peanuts – (or almonds for paleo – can also omit ) – roughly chopped.
  • 1 1/2 cups of puffed rice cereal – Keto friends if you can’t get a low carb cereal you could just use alll of the peanuts instead.
  • For the peanut butter caramel layer –
  • 1/4 cup peanut butter (or almond butter for paleo – Tahini would be great for a nut free option)
  • 2 Tablespoons of liquid coconut oil
  • 2 Tablespoons of maple syrup*
  • 1/2 teaspoon of vanilla
  • A generous pinch of salt
  • For the chocolate coating –
  • 1/4 cup of good quality dark chocolate – use 1 cup if you want to completely coat your crispy snickers bars
  • 1 teaspoon of coconut oil
  • 1/2 teaspoon of instant espresso
  • A pinch of salt + extra for serving
  1. Instructions
  2.  Line a small rimmed baking dish or loaf pan with non-stick parchment paper and set aside.
  3. Place all ingredients for the base apart from the puffed rice cereal and peanuts (if using) in to a small bowl and stir until well combined.
  4. Add puffed rice cereal and peanuts then stir to combine.
  5. Press base in to your prepared baking dish (or loaf pan) and press in to one nice smooth even layer.
  6. Set aside.
  7. Place all ingredients for your peanut butter caramel in to the bowl, stir until smooth, creamy and well combined & pour over your crispy base and smooth to the edges.
  8. Place in the freezer to set – This should take about 15-20 minutes .
  9. While your base is setting, melt together chocolate , coconut oil and instant espresso (if using) by your preferred method – I like to do mine double broiler style, by placing the chocolate in to a bowl then sitting it on a small sauce pan filled with about 2 cm of water, let the water  simmer , without touching the bottom of the bowl, stir the chocolate occasionally until completed melted.
  10. Now – you have 2 options here –

    1 – Which is the option I choose – Slice your chilled/set crispy snickers bars then drizzled the tops of each bar with melted chocolate, repeating until all bars with crowned with chocolate, then drizzled the remaining melted chocolate over the top to make a pretty pattern.

    2 – You can simply pour your melted chocolate on to the base, then slice it as a whole. If you choose to take this option, be warned the chocolate layer can crack as you slice it. I suggest heating the blade of your knife with boiling water before slicing, the heat makes slicing easier (and the chocolate is less likely to crack as much) as the heated blade will melt the chocolate layers as you press to slice.

    Just make sure you wipe any excess water off the blade before slicing.

  11. Devour!

    Bars are best stored in an air tight container in the fridge (can also be frozen)

*** I use Macro Mike’s new, limited edition peanut protein (which gives me major  PB x caramilk vibes & it might just be my new fave!) but, reg vanilla or the white chocolate would work great here too you could also just leave it out but, all proteins are plant based, gluten free, dairy free, sugar free, boosted with probiotics & truly tastes all kinds of incredible.
