Why is it that even though they’re made with the same ingredients, festive treats taste way better than their regular shaped counterpart?

Case and point . . .

salted dark chocolate peanut butter (copycat Reese’s) eggs!

Lightly salted, vanilla spiked peanut butter truffles coated in a decadent, rich, cool, crisp layer of espresso-infused dark chocolate

And would you just look at how adorable they are!

So cute, right?!

And that filling . . .

hello dreamy!

Tell me you don’t want the Easter bunny to bring you a monster size bucket, I mean a sweet lil Easter basket, full of those delicious little cuties?!

Made with simple ingredients that I bet you have on hand already and can be ready to devour in less than 15 minutes!!

Honestly, I don’t know what more I need to tell you.

If you, like me, have a major soft spot for dark chocolate & nut butter (who doesn’t?!) then Easter/celebrating or not, you need these in your life like, yesterday!

Also, “eggs” + nut butter (& a cheeky hit of espresso) = totally acceptable for breakfast consumption.

You with me?! course you are, you’re cool like that!

Sugar Free – Gluten Free – Dairy Free – Grain Free – Low Carb – Vegan – Keto & Paleo Friendly (just sub almond butter, works like a charm)

Stop what you’re doing, this needs to happen, now!

  • 1/2 cup of peanut butter (or nut/seed butter of choice)

  • 2-3 Tablespoons of powdered sweetener or vanilla protein powder .
I do 1/2 protein pwd & 1/2 monk fruit icing sugar.
  • A pinch of flaky sea salt
  • Optional add-in;
  • 1 scoop of collagen – great for hair, skin, nails and gut health
  • For coating –

  • 1/2 tsp finely ground instant espresso pwd (reg or decaf) -technically optional but SO GOOD!
  1. Instructions
  2. Line a small tray (or plate) with baking/parchment paper and set aside.
  3. Place all filling ingredients into a small bowl and stir until well combined.
  4. Taking approximately 1 Tablespoon at a time (depending on how big or small you want your egg to be) roll them into balls, then gently pinch one end to create an egg shape then place your PB egg on to your prepared baking sheet.
  5. Repeat until all mixture has been used then place your PB egg laden tray into the fridge or freezer for 5-10 mins to chill while you prepare that dreamy chocolate coating.
  6. Melt chocolate by your preferred method.
  7. Removed chilled PB eggs from the fridge/freezer.
  8. Taking one PB egg at a time, place into melted chocolate, use 2 forks to gently toss/coat each egg, tapp off any excess melted chocolate and return to your lined tray.
  9. Repeat until all PB eggs have their deliciously indulgent, dark chocolate coating.
  10. Drizzle any remaining chocolate over your now coating PB eggs.
  11. Pop them back in to the fridge (or freezer) for 5-10 mins to set.
  12. Devour!

  14. Enjoy xo

Soft baked, choc fudge lava brookies for two (or just you)!

The perfect way to celebrate valentines, galentines, or just for those moments in life when you need, that’s right, I said NEED, a cookie or 2 but don’t want to bake, or can’t be trusted with ( ← we’ve all been there)  an entire batch of 12 – 24!

Soft, chewy, crispy on the edges, super, SUPER fudgy in the middle! THE PERFECT COOKIE (or should I say brookie?!) for any occasion or, simply just to help you crush those late night cookie cravings (please tell me I’m not the only one who has them pretty much every. single. night?!) but also, just because cookies/brookies are always a good idea! Am I right!? Oh, you know I am!

Just in case you’re not familiar with life-changing deliciousness that is the brookie  . . .  a brookie = soft-baked cookie meets suuuuuuper fudgy, rich chocolate brownie and yes, its just as incredible, if not more so, than you imagine. They even come complete with that signature, cosmic brownie crackle on top!!!!

This, right here, this single serve, super fudgy (secretly healthy), soft baked choc fudge lava brookie has taken my obsession with cookies, brownies and melty puddles of rich dark chocolate to a whollleeeee new level!

I mean the only thing better than a fresh from the oven, soft baked, ooey gooey brownie or choc chip cookie is a fresh from the oven, soft baked, ooey, gooey double choc fudge lava brookie! Who says you have to choose between brownies OR cookies?! I say lets have both!

You with me? of course you are, you’re cool like that!

Super simple, seriously delicious made with just a handful of ingredients that I bet you have on hand already and come together in one bowl, with one spoon, and can be ready to devour in a matter of minutes!

Annnndddd, they also happen to be secretly good for you!

Gluten Free – Dairy Free – Grain Free – Refined sugar free – Low Carb – Paleo – Keto – 100% Vegan friendly but most importantly they really are edible awesomeness personified and you need them in your life because, yum!

Also, primarily made with nut butter and a cheeky hit of espresso = totally acceptable for breakfast consumption + a big ol’ vat of coffee, of course.

Crispy on the edges, soft and chewy in the middle and literally oozing with rich, chocolaty awesomeness when you bite on!

Go, go, get em!

Click here for some step-by-step pics & to cook along with me ♥

Double Choc Fudge Lava Brookies for two

  • Cook Time: 6-8 mins
  • Persons: 1-2
  • Difficulty: Easy

  • Ingredients
  • 1/4 C almond flour
  • 1 tbsp cacao
  • 1 tbsp almond butter
  • 1 tbsp maple syrup
  • 1 tbsp monk fruit sweetener – or granulated sweetener of choice
  • 1/2 tsp instant espresso pwd) – opt but helps enhance the richness of the chocolate
  • 1 tsp vanilla extract
  • Dark choc (chips or chopped) measure with your heart
  • 1/2 tsp baking soda
  • a BIG pinch of salt
  • 1 scp collagen – opt but great for an extra hit of protein + hair, skin, nails & gut health.
  1. Instructions
  2. Place all ingredients apart from the chopped chocolate into a small bowl and stir to combine
  3. Add chocolate and stir to combine.
  4. Pop the bowl into the freezer for 10 mins (or you can refrigerate for 30 mins up to 2-3 days).
Note – if you prefer a thinner, flatter, crispier cookie, you can skip this step but I find freezing the dough for a few minutes helps the cookies hold their shape better through the cooking process and I personally LOVE my cookies on the thicker side #youdoyou
  5. When you’re ready to get your cookie on, remove the bowl from the freezer or fridge.
  6. Scoop and roll your cookies into desired shape and size and place them onto a lined baking tray.
  7. Bake @ 175’C / 350′ F for smaller cookies bake for 6-8 minutes – medium-sized cookies bake for 8- 10 minutes – large cookies bake for 10-12 minutes and if you’re making one monster size cookie bake for 12-15 minutes.
NOTE – at this time they will still feel soft. DO NOT OVERBAKE YOUR COOKIES!!!! Sorry for yelling but this is very important! Once your cook time is up, remove them from the oven and set them aside for 3-5 minutes to cool and set.
Trussssttttt me. I would never steer you wrong. Your trust and patience will pay off because now you’re cookies will have set and the edges will be crispy and the middle will be ooey, gooey and all kinds of wonderful.
  8. Enjoy xo

Strawberry Bounty Bites

  • Prep Time: 10 mins - Chill time - 30 mins - 1 hour
  • Difficulty: Easy

  • Ingredients
  • For the strawberry coconut bars:

  • 1 C desiccated coconut

  • 1/4 C coconut cream – thick part only* see note

  • 1/3 C strawberries, hulled & roughly chopped

  • 2 Tbsp maple syrup – I use sugar free – more or less to taste

  • 2 tsp vanilla

  • a pinch of salt

  • 1 scoop vanilla protein powder – technically opt but I love the extra flavour, nutritional boost + pre/pro-biotics it brings – brand recs & cheeky discount below**

  • For the chocolate coating:

  • 1/2 C dark chocolate chips or roughly chopped

  • 1/4-1/2 tsp finely ground instant espresso*** – optional but SO good!

  1. Instructions
  2. Line a small tray (or plate) with baking/parchment paper & set aside.
  3. Place all ingredients for the strawberry bounty bars into your food processor & pulse or process until combined.
  4. Now, you have two options here . . .
Option A – spoon your strawberry coconut mixture into a silicone mould (I used a small rectangular silicone ice cube tray that I just bought at woolworths but any kind of silicone chocolate mould would work) make sure you press the mixture firmly down into fill the mould and use the back of your spoon to smooth/level out the tops.Gently tap the filled mould on to the counter top a few times to help remove any pesky little air bubbles that may be hiding in the middle of your bars and place them in to the freezer for an hour or two to set.
Option B – If you don’t have (or want to buy) an ice cube tray or chocolate mould you can  just use your hands to roll the mixture into balls or form little log shapes like the more traditional bounty shape we know & love..
  5. Place your rolled balls (or logs) your prepared baking tray (or plate) and place it in to the freezer for an hour or two to set.
  6. Once your strawberry coconut bars are set, leave them in the freezer while you prepare your chocolate for coating.
  7. Melt chocolate by your preferred method. Remember to add the finely ground instant espresso powder if using.
  8. Taking one bar (or ball or log) at a time, dip the bottom half of each strawberry coconut bite into your melted chocolate.Let any excess chocolate drip off the bottom (pro tip – gently scrape the base on the side of the bowl your melted chocolate is in so it’s nice & smooth) then place on your prepared baking tray.
  9. Drizzle any remaining chocolate over the top of your berry-licious bounty bites.
  10. Enjoy xo

Notes –

These blissful bites of deliciousness are best kept in the fridge & should keep well in an air tight container for 1-2 weeks (but I doubt they will last that long because , yum! ) or you can freeze for up to 3 months.

Note / tips:

*Tip to get the thickest, creamiest coconut cream – open your can of coconut cream & let is sit, uncovered, in the fridge overnight. Then, the next morning when you’re ready to make your beautiful bounty bars you just scrape of the super creamy top layer. You can use the remaining liquid to make smoothies – I pop then in an ice cube tray & freeze for future use.

** I love Macro Mike plant based almond protein powder (have not tested any other kind/brand in this recipe). Its gluten free, dairy free, sugar free, boosted with probiotics & truly tastes all kinds of incredible. Its hands down without question the smoothest, most delicious, elite tasting protein power (plant based/dairy free or otherwise!!) I have ever tried. And I have tried A LOT!  Use AMB-EM to get a cheeky discount of you want to try it ♥

*** I use before you speak coffee high performance instant coffee – not only is it insanely delicious but its also boosted with Marine Collagen, Silica, Camu Camu, Proline, MCT & Biotin. It’s such a great way to add some extra nourishment into your every day coffee routine. EMS10 = 10% off if you want to try it & believe me, you really do!

6 ingredient {low carb – gluten free} dark chocolate peanut butter s’mores!!!!

Because 1, YUM!

And, 2 – Is it even the Fourth of July if we don’t have some festive treats?!

I know American Independence day is not something we celebrate here in Australia but, an excuse to make (& let’s be real, EAT) some fun and festive treats, I am here for it!

You with me?! Of course, you are, you’re cool like that!

Let me tell you, these dark chocolate peanut butter s’mores are 100% worth celebrating anytime you make them! Pleeeeaaaasssssse let it be today!

Subtly sweet, deliciously buttery, crisp and crunchy peanut butter cookies slathered with a layer of espresso-infused dark chocolate then topped with ooey, gooey, roasty, toasty marshmallows!

And yes, if you’re not into espresso you can absolutely leave it out, they will still be all kinds of incredible without that hint of espresso, just not quite as magical in my opinion but, you do you baby xo

Now, a word or warning . . . as simple as they are to make (hello just 6 basic pantry staples!! 4 to make the cookies & 2 more to put your low carb, gluten free s’mores together) they are dangerously addictive! Or is it addicting?! I can never decide?! Either way, they are super yum but the real warning I wanted to give here is that they are also, kind of messy to eat but also, very VERY #worthit

Super simple, seriously delicious they come together in 1 bowl with 1 spoon and can be ready to devour in less than 20 mins!!!

Gluten Free – Dairy free – Grain free – Refined sugar free –  Low Carb – Paleo –  Keto – Vegan friendly.

1 bowl + 6 ingredients . . . .

The only thing that’s left to decide is 1 marshmallow or 2?!

Make mine a double pls, HBU ?

Enjoy xo

6 ingredient {Low Carb - Gluten Free} Dark Chocolate Peanut Butter S'mores

  • Cook Time: 15 mins
  • Persons: 6
  • Difficulty: Easy

  • Ingredients
  • For the cookies –
  • 3/4 C peanut butter
  • 1/2 C monk fruit sweetener (or granulated sweetener of choice)
  • 1 egg – or your fave egg replacer
  • 1 Tbsp tapioca (arrowroot) starch
  • For the filling;
  • 1 block dark chocolate
  • 1 sachet decaf mocha before you speak coffee – technically opt but makes them 10 x more magical
  • 6-12 marshmallows – depending on size and how mallow-y you want your filling
  1. Instructions
  2. Mix cookie ingredients
  3. Shape
  4. Bake @ 175’C/350’F for 6-8 mins
    * note – they will be soft, let them sit, untouched for 2-3 mins and they will firm up  & get nice & crunchy as they cool. Trust xo
  5. While your cookies cool and set, melt choc & espresso pwd
  6. Top the smooth/ underside of each cookie with a dollop of melted choc
  7. Add a marshmallow (or 2)
  8. Pop back in the oven / under the grill or just in the air fryer (which is what I did) for 3-5 mins until the marshmallow is puffed & toasted to your liking
  9. Top with another cookie
  10. Devour!
    * careful, those roasty, toasty marshmallows are hot, hot, HOT!!

*NOTE – if you want to go all in and make your own gluten-free marshmallows here are two amazing looking recipes by two of my all time fave ladies –

Steph Gaudreau has a dreamy-looking recipe for chocolate marshmallows (her recipe is actually choc mint but you could skip the mint) which she adapted from The urban poserOG recipe here! Double choc peanut butter s’mores sound like a VERY good time to me!

And the amazing Danielle Walker @ against all grain has an incredible classic style {gluten free} marshmallow recipe here if you want to keep things more traditional.

Question of the day –

Would you rather . . . classic- style rustic camping or are you more a glamping (aka nice cozy hotel) person?!
the reason I ask is when I think s’mores I think summertime camping (even though camping is not something I’ve ever really done, its what they do in the movies so . . . that’s where my mind goes . . . you too?

And please for the love of all that is good in this world when you do make your 6 ingredient {low carb – gluten free} dark chocolate peanut butter s’mores (or any of the recipes you find on this blog of mine) don’t forget to take a pic and share it either on the Facebook page, or you can just tag me on Instagram ( I’m @emsswanston ). Low carb – sugar-free swirled strawberry cream cake = the prefect treat to make and eat for Valentines, Galentines or just because yum!

Subtly sweet, light and fluffy vanilla spiked sponge cake swirled with tart-sweet {homemade cheats} strawberry jam and frosted with lashings of lightly sweetened freshly whipped cream!  This cake is nothing short of delicious. Every bite is swirled with fresh berries, hints of vanilla and fluffy whipped cream! You are going to LOVVEEEEE it!

Truth be told, Ive been holding on to this recipe for months (but really, years) now. Ever since Eve was little, every year for her birthday without fail, she always requests one thing . . . strawberry sheet cake with alllll of the whipped cream! My girl knows what she wants and let me tell you, she has very good taste!

It’s deliciously simple, incredibly flavourful and if summer had a signature sheet cake, this would be it!

It’s light, fresh, and just downright delicious and it also happens to be secretly good for you! Made with no refined flours or sugars using just a handful of ingredients that I bet you have on hand already and can be ready to devour within the hour!

Healthy enough to serve for breakfast with a big ol’ vat of coffee, of course, but indulgent enough to celebrate just about any occasion! + a champagne toast if you feel so inclined!

Gluten Free – Dairy free (if you want) – Grain free – Refined Sugar free –  Low Carb – Paleo – Keto Vegan friendly !

I hope you love as much as we do. Which is A LOT!

Just bake, frost, and enjoy! If you’re a visual learner, click here for some step-by-step video + pics/ to cook along with me.

From me and mine to you and yours, I hope you love it as much as we do which is A LOT!

Swirled Strawberry Cream Cake

  • Cook Time: 1 hour
  • Persons: 4-6
  • Difficulty: Easy

  • Ingredients
  • For the vanilla sheet cake:
  • 2 eggs – or flax eggs
  • 2 Tablespoons of vanilla yogurt
  • 2 Tablespoons of unsweetened vanilla almond milk
  • 1 Tablespoon of vanilla
  • 1 cup almond flour
  • 1 teaspoon of coconut flour
  • 1/4 cup monk fruit sweetener (or granulated sweetener of choice)
  • 1 teaspoon baking powder
  • 1/2 teaspoon of baking soda
  • A pinch of salt
  • For the strawberry swirl:
  • 1 cup of strawberries, roughly chopped
  • 1 teaspoon of monk fruit sweetener (or granulated sweetener of choice)
  • A squeeze of lemon juice (about 1/2 a tsp)
  • For the frosting –
  • 1 cup of whipping cream (coconut or regular) – can also use cream cheese or vanilla Greek yogurt

  1. Instructions
  2. For the strawberry sauce –
  3. Add the strawberries, sweetener and lemon juice to a medium-size saucepan over high heat.
  4. Bring the mixture to a boil, once boiling use a potato masher or fork to break down and mash the berries. Continue to cook for 5-8 minutes or until the sauce has reduced and thickened by 1/3.
  5. Remove from the heat and set aside to cool. It will continue to thicken as it cools.
  6. For the cake:
  7. Pre-heat your oven to 175/C/350/F and line/grease your baking tray pan with baking/parchment paper and set aside.
  8. Place all of your cake ingredients into a medium-size bowl and stir to combine.
  9. Pour into your prepared baking tray.
  10. Take about 1/4 cup of the strawberry sauce and dollop it by the teaspoon randomly over the top of the cake.
  11. Use a knife (or toothpick) to lightly swirl the sauce around, don’t over mix it.
  12. Bake for 20-30 minutes until the top springs back when lightly pressed and the cake is set. If you feel the cake is browning too quickly just cover with some foil to prevent it from burning.
  13. Set aside to cool while you make your whipped cream.
Note – as the cake cools, the strawberry sauce will sink down into the cake leaving luscious, sunken swirls of sweet strawberry sauce. It’s incredible! You will LOVE it!
  14. To frost the cake, top with 1/3 of your whipped cream, then drizzle over the extra Tablespoon of strawberry sauce, you can swirl it through the cream with a toothpick, add the remaining cream, and smooth to the edges.
  15. Slice.
  16. Enjoy xo

Choc Fudge Reindeer Donuts!!!

Eve and I made these super cute festive donuts and honestly, I had no intention of sharing the recipe but once they were finished I figured why not?! Because:

1-YUM!

2- Fun!

3-They turned out to be so cute and SO DELICIOUS I just had to share them with you!

So, if you’re looking for a super simple, insanely delicious, fun, and festive, last-minute treat to make (& LBR eat) for Christmas (or just because, yum!) then look no further friend, these choc fudge reindeer donuts are EXACTLY what you need

Even if you’re not actively looking & I don’t think it matters the question fun, festive choc fudge donuts are always the answer!

Made with no refined flours or sugars using just a handful of ingredients that I bet you have on hand a ready & can be ready to devour in just 15 mins!

Healthified or not, I can’t think of a better way to start, end, or fill the day than with one (or 2) of these delicious little cuties!

You in?! Of course you are, you’re cool like that!

1 bowl + 15 mins (for my visual learners, click here for step-by-step pics + my fave donut making hack & to cook along with me  Let me know if you have any questions. Anytime.

Choc fudge Reindeer donuts

  • Cook Time: 10 mins
  • Persons: 6-9
  • Difficulty: Easy

  • Ingredients
  • For the donuts –
  • 2 eggs
  • 2 Tablespoons of vanilla yogurt
  • 2 Tablespoons of unsweetened vanilla almond milk
  • 1 teaspoon of vanilla
  • 3/4 cup almond flour
  • 2 Tablespoons of  Macro Mike white choc (or any flavour really) protein powder (see notes for subs)**
  • 1/4 cup cacao
  • 1/4 cup golden monk fruit sweetener – or coconut sugar / granulated sweetener of choice
  • 1 teaspoon of instant coffee
  • 1 teaspoon baking powder
  • A pinch of salt
  • For the chocolate glaze –
  • 1 C dark chocolate
  • 1/2 tsp instant espresso pwd – I use decaf I use the decaf to make them safe for Eve to eat, heaven knows that girls needs no added caffeine, she IS the energizer bunny!
  • For decorating –
  • 6-9 baby red currants (or cherries, dried cranberries or a m&m or red sprinkle)
  • 6-9 pretzels cut in half
  • 12-16 googly eye sprinkles
  1. Instructions
  2. Place all donut ingredients into a small bowl and stir until well combined.
  3. Spoon/pipe donut mix into your donut tray (I pour my batter into a ziplock bag & snip off the corner to pipe it in. Super accurate & way less messy this way! Click here to see a lil video demo) .
  4. Bake for 12-15 minutes until the tops spring back when lightly pressed.
  5. Set aside to cool while you make your frosting.
  6. Melt chocolate by your preferred method .
  7. Add instant espresso pwd and stir until well combined.
  8. Dip donuts into melted chocolate and place onto a lined baking tray (for easy clean up)
  9. Add decorations – pretzel antlers, berry noses & googly eyes  . . . for the eyes
  10. Enjoy xo

** You can sub 1/2 teaspoon of coconut flour in place of the protein powder but the taste & nutritional boost the protein pwd adds really takes these muffins to a whole new level!

I love Macro Mike plant based almond protein powder (have not tested any other brands ). Use AMB-EM to get a cheeky discount of you want to try it & believe me, you do!

Sweet dreams are made of these . . .

Super fudgy, flourless, salted dark chocolate rocky road brownies!!!!!!!

And yes, all the exclamation points are 100% required, plus maybe a few more!!!!!!!

My friends at Naked Harvest Supplements have just launched a new rocky road flavor of their magical moon mylk (the OG moon mylk has absolutely changed my life!) and I can’t think of a better way to celebrate them with a super fudgy, rich chocolate rocky road brownie!!

I know, I know, when you think of celebration treats you (and by you I mean, me) usually go for cake, cupcakes or even donuts which are all wonderful in their own right but IMO (today, anyway) I’m thinking brownies are >>>

And these deliciously indulgent, yet secretly healthy, rocky road brownies are greater than all!

Dare I say better than a box mix!

And I don’t just mean because they’re made with wholesome, “better for you” ingredients, I mean because they truly taste all kinds of incredible!

They are decadent, rich, perfectly sweet, and seriously, and I mean SERIOUSLY chocolaty!

Crispy on the top, chewy on the edges and super, SUPER fudgy in the middle! Just as a good brownie should be!

But, they also pack a nutritional punch thanks to the magical moon mylk mix they’re boosted with:
Ashwagandha – to help calm the nervous system
Magnesium – helps ease muscle soreness & relax the mind
L-Tryptophan – an essential amino acid that helps release serotonin to promote more restful sleep
Zinc – helps the metabolism of Melatonin which is a key hormone for healthy sleep.
Passion-Flower –  can help reduce anxiety, insomnia, and certain forms of pain because it may increase levels of GABA which helps regulate your mood.

So, if you’re looking for an excuse to eat more brownies then look no further friend, I got you

And yes you can absolutely make these without the rocky road moon mylk mixture and I promise they will still be “get out of town” delicious just not quite as magical and you dont get all the nutritional benefits but either way I guarantee my secretly healthy, super fudgy, dark chocolate rocky road brownies will absolutely rock your world! But if you do want to try the rocky road moon mylk mix (and hear me when I say, you really do, its seriously delicious!) you can use XOEM to get 15% off.

It’s everything you love about a cozy cup of hot chocolate, complete with puffy pink marshmallows (because you and I both know pink is the greatest marshmallow of all time, right!) but in the form of brownies. Because why just have a traditional hot chocolate (or plain ol’ rocky road) when we can have brownies?!

Made with no refined flours or sugar using just a handful of ingredients that I bet you have on hand and can be  ready to devour in less than 30 minutes!

Crispy on the top, chewy on the edges and super, SUPER fudgy in the middle and don’t even get me started on the cheats dark chocolate ganache . . . heeellloooooooooo

Gluten Free – Dairy free – Grain free – Refined sugar free –  Low carb – Paleo –  Keto &  Vegan friendly !

1 bowl + 20 mins – you are going to LOVE them!

Super Fudgy Rocky Road Brownies

  • Cook Time: 20 mins
  • Persons: 8-16
  • Difficulty: Easy

  • Ingredients
  • 2 eggs – or flax eggs
  • 1 C almond butter
  • 4 Tbsp maple syrup
  • 1 tsp vanilla
  • 1/2 cup monk fruit sweetener (or coconut sugar)
  • 2 Tbsp cacao
  • 2 Tbsp Naked Harvest Rocky Road Moon Mylk pwd – XOEM = 15 % off
You can sub more cacao but they wont be quite as magical or rocky road-ish
  • 1/2-1 tsp instant espresso – I use decaf
  • 1/4 tsp baking soda
  • Dark chocolate – chips or chopped – measure with your heart
  • A pinch of salt
  • Optional add ins –
  • Collagen – adds a hit pf protein & great for hair, skin, nails & gut health
  • For the frosting –
  • 1/3 C coconut (or regular ) cream
  • 1/2 cup dark chocolate + 1-2 extra Tbsp for drizzling, if you want
  • 1/2 tsp instant espresso (opt – I use decaf)
  • 1 Tbsp almond butter
  • a pinch of salt
  • Marshmallows
  • Peanuts &/or almonds
  1. Instructions
  2. Pre-heat oven to 175’C/350’F
  3. Line a small baking dish  (or mini loaf pan) with baking / parchment paper and set aside.
  4. In a medium-size bowl, lightly whisk your egg, vanilla, maple syrup, and almond butter until smooth, creamy, and well combined.
  5. Add all remaining ingredients and stir to combine.
  6. Bake for 15-20  minutes (I like mine at 17 minutes), until just set, the top should spring back when lightly pressed and a toothpick should have just a few crumbs attached when inserted into the middle. DO NOT OVER BAKE! Sorry for yelling, but it’s important!
  7. While your brownies are baking prepare your frosting –
  8. Add the chopped chocolate, almond butter and espresso pwd (if using) into a bowl.
  9. Heat the cream in a saucepan over low heat just until bubbles appear around the edges and it’s warm.
  10. Pour the cream over the chocolate and let it sit for 30 seconds, then stir continuously until it’s smooth. Let it cool slightly until it thickens and is spreadable without dripping.
  11. Spread on the cooled brownies.
  12. Add your toppings.
  13. Slice.
  14. Devour!

It’s that time again, time for another round of fit Friday fun!!!!

And boy are we going to have some fun today!

Today I’m sharing a short, sharp lower body workout that you can do anywhere, anytime in just 20 minutes , with or without equipment, totally your call.

You guys know how how much I love, love, love my lower body workouts, The lower body is where your powerhouse muscles are (I’m looking at you quads, glutes and hamstrings) which means you get a serious bang for your workout butt, I mean buck!

What do you do for fun?! IDK, Squats?! - www.betterwithcake.com

So, here’s what we are going to do – click here to see exercise demos/workout with me

♦ Squat
♦ Step up
♦ Reverse lunge – or any variation you like – I do reverse because my knees prefer them
♦ Lunge pulse
♦ Single leg toe touch – or reach if you can’t touch your toes just yet
♦ Single leg bench (or chair) squat
♦ Jump squat – or pulse if you’re not into jumping

Aim to do 10 reps of each exercise (count reps per leg) then repeat the entire sequence for a total of 3 rounds (or as many rounds as pretty in 20 minutes), resting as needed. Sound good?

Nothing overly complicated, basic movements done with good form for a short but effective total body workout that will have you feeling strong, energized, and ready to take on the rest of your day!

Now, for those of you who are just getting started or may not have access to a gym of any kind of weights you can absolutely do with workout without any added weight, and let me tell you, you will be feeling it.

Not even kidding, this was me the day my first attempt at this workout –

Leg day waddle - www.betterwithcake.com

Just because you’re “only” using your body weight as resistance does not make this an easy workout. Your quads and glutes will be burning by the final round and you will definitely be feeling the effects of it tomorrow I assure you.

Game of Thrones Leg Day Meme - www.betterwithcake.com

You have been warned!

For our fully functioning/more advanced lifters who might be looking to make things a little more challenging – grab yourself a weapon of choice – a set of dumbbells, a barbell, kettlebells, your EmPack, some resistance bands, or any combination you like. Make sure you choose something appropriate for your strength but, don’t be afraid to challenge yourself.

Although, we want quality not quantity, always! Never compromise your form, ever! If your form starts to fail you’re done, got it?

Take your time, concentrate, focus and breathe through each and every exercise. You are strong, you are amazing, you have big energy! You’ve totally got this!

Magic happen outside your comfort zone - www.betterwithcake.com

And, because nothing makes a workout challenge more fun than getting a (virtual) buddy to join you. Why not grab your BFF or a family member or your fave workmate and have them join you, power in numbers baby!

Don’t forget to come back and let me know how you did once you’re done. Either leave me a message in the comments below, or you can give me a shout on the Facebook page or tag me (@EmSwanston) on Twitter , or Instagram (@emsswanston) . I mean it, I wanna hear how you did!

Ok, enough chit chat time to work –

– 20 minute –
At Home – Lower Body Workout

As always make sure you are nice an warm before you start your workout – Run on the spot, do jumping jacks, jump rope, dance around your living room, anything to get you warm then it’s time to get serious.

Finish with a nice little cool down and stretch, maybe take a walk #socialdistancing or something anything to help bring your heart rate down. Finish with a few of your fave stretches. Please don’t skip the stretch people, its like dessert for the body.

Now for this week’s smoothie recipe . . .

How does a nice, tall, subtly sweet, perfectly spiced, deliciously indulgent, secretly healthy, sugar-free chocolate hazelnut chai latte sound?!

So good, right?!

Chocolate = happiness

Chai soothes my soul

Nut butter is the glue that holds my body together.

Put them all together and you get pure magic and that’s E X A C T L Y what we have here!

It’s pretty much tastes like your drinking chai while eating spoonful after spoonful of Nutella (please tell me I’m not the only one who does this?!) and I am here for it!

Made with no added sugar, packed with protein, and loaded with gut-healing goodness, not that anyone would ever know! I won’t tell if you don’t!

Subtly sweet, seriously chocolaty, perfectly spiced, and just all kinds of wonderful!

Next level deliciousness I tell you! You are going to LOVE it!

And, not only does our delicious, nutritious, smoothie taste like straight-up heaven in a cup but, it also happens to be Dairy free (if you want),  BANANA FREE, DATE FREE, sugar free, Low Carb, Vegan, Keto and Paleo friendly!

It really is simply divine, the perfect way to treat yo’ self on this fabulous Friday – or anytime because, yummmmm.

Enjoy xo

{Sugar-Free} Dark Chocolate Cashew Butter – AKA Heaven in a jar

Homemade banana bread is so lockdown 2020, in lockdown 2021 homemade nut butter is where it at!

Come to think of it, this slathered on a THICC slice of banana bread would be truly magical! This weekend Ima make that happen! Anyhoo . . .

Decadent & rich, but not too rich, subtly sweet, seriously chocolaty, velvety smooth, simply, divine!!

One spoonful of this epic deliciousness & the worries of the world melt away as you lose yourself in the jar of edible awesomeness that you just created!

Not even kidding!

And, not only does it taste like straight-up heaven in a jar but, it also packs a nutritional punch!

♥ Rich in antioxidants
♥ High Magnesium &
♥ Heart healthy fats
♥ If you add in the optional collagen it’s also packed with protein & loaded with gut healing goodness!

So if you, like me, are looking for an excuse to eat more nut butter then look no further friend, I got you !

Gluten free – Dairy free – Grain Free –  Sugar free – Low Carb  – Paleo – Keto –  Vegan – 100% whole 30 friendly!

4 Ingredients + 10 minutes in the making

The only thing that’s left to decide is, how will you eat yours?!

Straight up by the spoonful (my fave!), with fruit, on toast, on chocolate?!

Tell me . . . details pls . . .

Stop what you’re doing, this needs to happen, now!

Sugar Free Dark Chocolate Cashew Butter

  • Prep Time: 10 mins
  • Difficulty: Easy

  • Ingredients
  • 2 cup of raw cashews (last time I made it I did 1 C cashews & 1 C almonds & it was amazing!) – youi could sub 1 1/2 cups of store-bought natural cashew butter – just cashews & salt
  • 1-2 Tablespoons of cacao depending on how rich and chocolaty you want it
start with 1 – taste and adjust if desired
  • 1 Tablespoon of vanilla  extract
  • 1/2 teaspoon of instant espresso (I use 1 sachet of decaf mocha before you spoeak coffee – EMS10 – 10% off) optional but helps enhance the richness of the choc
  • 1/2 teaspoon of salt flakes – omit if using store-bought/salted cashew butter
  • Optional add in;
  • 1 Tablespoon of collagen – I ♥  before you speak coffees collagen complex (choc or vanilla)   EMS10 = 1% off if you want to try  –  adds an extra hit of protein & is great for hair, skin, nails & gut health
  1. Instructions
  2. Optional but highly recommended – Preheat your oven to 175’C (350’F)
  3. Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) and pour on your cashews, making sure they are spread evenly – aka not crowded.
  4. Roast your cashews for 5-7minutes, until lightly toasted and deliciously golden.
  5. Pour your roasted cashews into the bowl of your food processor or blender and process until smooth and creamy (or your desired consistency). Initially the almonds will grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.
  6. Once you have blended to your desired consistency, add your salt, cacao, vanilla ,  espresso pwd (if using)and collagen (if using) process until well combined.
  7. Taste and adjust accordingly – add a little extra salt or more vanilla/cacao if you feel the need and, if you prefer a thinner/more runny consistency feel free to add a drizzle of coconut or MCT oil to thin it out
  8.  Store in an airtight container. It should keep well for up to 2 weeks – if it lasts that long! ← seriously, good luck with that , mine never does!
  9. Enjoy xo

Today I’m sharing a short, sharp tummy toning workout that you can do anytime, anywhere in just 10 minutes , no equipment required – what do you say, are you in?

Nothing complicated, basic movements done with good form for a short but effective workout that will leave you feeling strong, energized and ready to take on the rest of your day.

We will do – 7 of my favorite exercises to focus on tightening, toning and strengthening your core click here to see a demo of each exercise/ workout with me  – ;

♦ Sit Up
♦ Reverse crunch
♦ Heel Tap
♦ Plank with hip dip
♦ Up & Down plank
♦ Russian twists

Aim to do 10 reps of each exercise (count reps per side for dips, taps, up down plank & twists) ) and repeat the entire sequence for a total of 3-4 rounds – resting as needed.

*BONUS BURNOUT ROUND*

If you have time (& are feeling up to it – grab a timer, get into a plank position & hold it, for as long as possible, with good form!

Remember, we want quality not quantity, always! Never compromise your form, ever! If your form starts to fail your done, got it?

Take your time, concentrate, focus and breathe through each and every exercise. You are strong, you are amazing, you have big energy! You’ve totally got this!

And because nothing makes a workout challenge more fun than getting a virtual / social distance buddy to join you.

Ok enough chit chat time to work –

10 minute Abs

As always make sure you are nice an warm before you start your workout – Run on the spot, do jumping jacks, jump rope, dance around your living room, anything to get you warm then it’s time to get serious.

Finish with a nice little cool down and stretch, maybe take a walk or something anything to help bring your heart rate down. Finish with a few of your fave stretches. Please don’t skip the stretch people, its like dessert for the body.

Now for our smoothie recipe . . .

How does a nice tall, subtly sweet, deliciously indulgent,  secretly healthy, seriously chocolaty, choc fudge cookie dough crunch shake sound?
