In our house, at Christmas time, I don’t think there is anything that is as highly anticipated as the making of these pies.

Well, apart from opening gifts on Christmas morning !

Calendars are marked, count downs are set  and on December 1st – the pestering requests begin.

I know, I know this recipe is a little more work than I usually like to do as there is some dough chilling and rolling involved ( no pre-baking though ) which is probably one reason that I only make them once a year but hear me when I say, apart from a little exercise in patience they are super, super easy to make and 100% worth it.

Subtly sweet, deliciously buttery, light, crisp pastry stuffed with a jammy, sweet, perfectly spiced fruit filling that truly is incredible!

I like to make a batch on Christmas Eve, ready to enjoy with our little lady, after dinner, while we read the night before Christmas before tucking her in to bed (and my marathon wrapping session begins) and of course we make sure we have enough to leave out for Santa.

Serve them simply as they are, add a dusting of powdered sugar and a nice cold class of milk, a nice cup of tea, coffee, hot chocolate or warm beverage of choice.

Add a dollop of cream, custard and/or ice cream – or a combination of all three, after all, it is Christmas.

Super simple, super delicious, healthy, homemade fruit mince pies.

Healthy, Homemade Fruit Mince Pies {Gluten Free - Grain Free - Refined Sugar Free - Paleo Friendly} - www.betterwithcake.com

  • Cook Time: 30 mins
  • Persons: 12-24
  • Difficulty: Easy

  1. Instructions
  2. Sift flour, sugar and your pinch of salt into a large bowl.
  3. Add chopped butter/ghee, crumble together until mixture resembles coarse (but fine) bread crumbs. You can use a food processor if you like but I prefer to use my hands. There is something satisfying about crumbling the butter into the flour and getting your hands good and dirty….its almost therapeutic…..don’t you think??
  4. Add in your egg yolk and 1 Tbsp of water.
  5. Using a butter knife cut the egg yolk and water into the mixture until it comes together to start to form a sticky dough
  6. Add 2 more tablespoons of water and use your hand to mix it and press into a soft dough. If you need to add the extra tablespoon of water go for it. I think it depends a lot on the weather, sometimes I need it…sometimes I don’t….
  7. Wrap dough in cling wrap and refrigerate for 20-30 mins.
  8. When your ready to bake, remove dough from the fridge and preheat oven to 175’C (350’F)
  9. Cut off a section of your dough
  10. Roll out the dough into a nice, thin late (approx 1-2mm)
  11. Cut out your pie base, collect scraps and wrap back in cling wrap so dough doesn’t dry out while you fill your pies.
  12. Carefully put your pie base into (a lightly greased) muffin tray
  13. Fill with fruit mince – set aside
  14. Roll another thin layer of pie dough and cut out your lids – You can use any shape cutter you want, I like stars 🙂
  15. Carefully place the lids and gently press edges to seal top to bottom.
  16. Lightly brush with egg white and bake for 20-30 mins. Until golden brown and fruit filling is bubbling deliciously.
  17. Allow pies to cool in the tray for 5 mins then transfer to wire rack to cool
  18. Once cooled dust with powdered sugar if desired.
  19. Enjoy xoxo

Dark Chocolate PB & J Crunch Bites
{Sugar Free – Gluten Free – Dairy Free – Vegan & Paleo Friendly}
Makes approx 9 secretly healthy, seriously chocolatey, crisp and crunchy, peanut butter infused, berry-licious bites of deliciousness

Ingredients –

For the slice ;

1/4 cup dark chocolate

1/4 cup Peanut butter ( or nut/seed butter of choice )
(Powdered peanut butter works too)

1/4 cup freeze dried strawberries, crushed

1 1/2 cup puffed rice cereal or cereal of choice –  I also love to use these crispie comets by love grown

Optional for topping –

2-4 Tbsp (1/4-1/2 a black) of dark chocolate

Flakey sea salt

Method –

1 – Line a small loaf pan or baking dish with parchment paper and set aside.

Note – You could also make them single serve so you don’t have to bother slicing – simple line a muffin tray with paper cases and spoon the mixture into each case instead of making one big slice. Do what you feel 🙂

2 – Place rice cereal and crushed berries into a large bowl and stir to combine. Set aside.

3 – Melt chocolate by your preferred method – I like to do mine on the stove, double broiler style but a microwave will work just fine too.

4 – Once your chocolate is nice and melted, stir in your peanut butter.

5 – Pour dreamy, chocolate peanut butter mix over your rice/berries and stir to combine.

6 – Spoon slice mix into your prepared tray and use a spoon to spread and smooth it out into one nice even layer, pressing gently but firmly as you go.

7 – Melt and pour remaining chocolate over your slice mix, sprinkle with sea salt and place it in the fridge or freezer to set.

8 – Slice and devour!

Please note, this slice is super crunchy and may crumble a little as you cut it up, I personally love that rustic look plus any shards that fly off = bonus chef snacks 😉 #worthit

Chocolate Hazelnut Cashew Butter
{Sugar Free – Dairy Free – Gluten Free – Vegan – Keto & Paleo Friendly}
Makes approx 2 cups of all natural, quick and easy, decadent, rich, seriously chocolaty,   deliciously dreamy, secretly healthy, subtly sweet, buttery smooth chocolate hazelnut cashew butter

Ingredients –

1/2 cup of raw skinless hazelnuts

1/2 cup raw cashews

1 cup of raw almonds

1 heaping Tablespoon of cacao

1 Tablespoon of vanilla extract or 10-12 drops of Vanilla Cream Stevia – I use Sweet Leaf Stevia

1/2 teaspoon of salt flakes

1/2 teaspoon of instant espresso – optional but recommended – it helps to enhance the flavor and richness of the cacao

1 scoop of Vital proteins unflavored collagen peptides optional for an extra boost of protein and gut healing goodness

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) and pour your almonds and hazelnuts on, making sure they are spread evenly – aka not crowded.

3 – Roast your nuts for 10 minutes, until lightly roasted and slightly golden.

If you are unable to get skinless hazelnuts simply roast them on a separate tray and once they are roasted, place on a clean dry hand towel and fold it in half. Rub it gently between your hands and the skins should come loose. Once the hazelnuts have shed their skins, discard the skins and proceed with the recipe as normal.

4 – Pour your roasted nuts into the bowl of your food processor or blender and process until smooth and creamy (or your desired consistency). Initially they will grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Once you have blended to your desired consistency, add your cacao, salt, vanilla along with the collagen and espresso, if using, then process until combined.

6 – Taste and adjust seasoning accordingly – add a little extra salt or more vanilla (or stevia)  if you feel the need and if you prefer a thinner consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that 😉 )

Although, I feel like calling it a fudge is a little misleading . . .

Not only is it no where near as sweet or rich as your traditional fudge. In fact, this dark chocolate tahini fudge is barely sweet at all – it’s deep, dark, deliciously nutty with just a hint of sweetness.

It’s not quite fudge, it’s not quite nut butter, it’s not quite a sauce or a ganache – although, at the same time, it’s kind of a combination of alllll of those deliciously wonderful things with a seriously healthy twist.

It also happens to be vegan, gluten free, dairy free, refined sugar free, nut free, keto & paleo friendly!

This recipe is one that I have been working on for a good few months now – it was inspired by Mary, The Paleo Chef’s – Phat Fudge recipe (which you can find here) that Mary created to   give her clients; long lasting sustained energy, memory, focus, combat inflammation and act as a natural thermogenic in replacement for those weird little gel packs that are laden with all kinds of sugars and weird unpronounceable chemicals and ingredients ( #nothanks ) which I guess is why I called fudge.

I picked up a couple of packets of Phat fudge when I was traveling last year and immediately fell in love with it.

So, when I stumbled across Mary’s recipe I thought it would be fun to play around with come up with my own version (yes, that really is my idea of fun) and after months, and months of testing and tasting and testing and tasting and testing and tasting I finally feel like I nailed it.

And, I can testify to the fact that it does, in fact, give you (well me) long lasting, sustained energy, increased memory, improved focus and helps combat inflammation! I, personally, have seen and felt improvements in all of these areas since having it on the regular and I bet you will too!

Eat it by the spoonful, add it to your coffee, blend it into smoothies, pour it into chocolate moulds or cupcake cases, pop it in the freezer and made legit super-food freezer fudge, these cupcakes with it, heat and drizzle it on cookies, carrot/banana bread (👈🏻 official recipe coming soon  ), avocado toast, baked sweet potatoes . . . driz, driz, drizzalllllll on alllll of the things!

Dark Chocolate Tahini Fudge

{Vegan, Dairy Free, Gluten Free, Sugar Free, Nut Free Keto & Paleo Friendly}
Makes approx 2 cups of All natural, quick and easy, subtly sweet, deliciously indulgent, seriously chocolatey, dark chocolate fudge – aka awesome-sauce

Ingredients –

1 cup of coconut butter

1 cup of tahini – I used black

1/4 cup cacao

1 Tablespoon of turmeric

1 Tablespoon of ground espresso – optional (I use coffee grounds – it adds an amazing texture – Im sure you could add instant espresso here also just cut back to 1/2-1 tsp you wont get the same textural element but you will get the nice hum of espresso)

2 teaspoons of cinnamon

2 teaspoons maca – optional but recommended for a touch of sweetness and hormone balance

2 teaspoons of maple syrup

1 teaspoon of vanilla extract or 4-6 drops of Vanilla Cream Stevia – I use Sweet Leaf Stevia

1/2 teaspoon of ground ginger

1/8 teaspoon of cayenne pepper

A pink salt flakes

Optional extra super-food add-ins;

“Jing” – To support adrenals

Lion’s Mane – To help improve brain function

Cordyceps – To increase energy

Chaga – To boost immunity

Reishi – To help relieve anxiety & calm both body & mind

1-2 scoops of  Vital proteins unflavored collagen peptides – optional for an extra dose of protein and gut healing goodness

Method –

1 – Place coconut butter and tahini into a large bowl and stir to combine. Depending on how firm your coconut butter if you may need to heat it so so it melts to a more stir-able consistency.

2 – Add all remaining ingredients and stir until well combined.
3 – Taste and adjust seasoning accordingly – add a little extra spice, more vanilla/stevia or maple syurp if you feel the need.

4 – Store in a sealed airtight container. No need to refrigerate – and FYI – this little pot of awesomeness should keep well for a good few months – if it lasts that long! (← seriously, good luck with that 😉 )

I mean it is my birthday month after all which gives me just the excuse I needed (as if I really need one?!) to make a brand new, insanely delicious, seriously indulgent, yet secretly healthy, nut butter obsession to share with you.

And ummmmmm this right here . . .

This little jar of heaven aka – chocolate pistachio almond butter . . .

It’s the gift that keeps on giving!

It’s decadent and rich, subtly sweet, velvety smooth, seriously creamy, deliciously indulgent and simply divine.

Something about the subtle, slightly savory, flavor profile of those pretty little oven roasted pistachio’s combined with our buttery almonds, a sweet splash of vanilla, the decadent, richness of our cacao and that cheeky pinch of salt . . .

I mean, I thought the original, salted pistachio almond butter we made was all kinds of awesome (which it really, REALLY is!) but, this chocolate version is next level!

I think we can all agree that a touch of chocolate just makes everything better, am I right?!

Oh you know I am!

And this right here, this chocolate pistachio almond butter we’re making . . . is in a world of it’s own!

It’s thick and creamy, deliciously buttery, subtly sweet, seriously chocolatey, lightly salted and well, like you,  all kinds of incredible!

Honestly, I don’t know what else to tell you . . .

Ahhhhh I’m just so excited for you to try it because I know you are going to just love, love, love it!

It’s chocolate and nut butter, two of my greatest loves combined, what’s not to love?!

As always our healthy, homemade almond butter is made with no refined flours or sugars, using just a handful of real food ingredients that I bet you have on hand already.

No weird preservatives, additives, fillers, hidden sugars or unpronounceable ingredients here people –  just almonds, pistachios, vanilla, cacao, a cheeky pinch of salt and a little bit of love is all you need! ❤❤❤

5 ingredients, 10 minutes in the making = deliciously winning on soooo many levels! 🎉🎉🎉

Oh and FYI – this little jar of awesomeness also happens to be naturally vegan, gluten free, sugar free, dairy free, keto and paleo friendly  but, most importantly, it’s I N S A N E L Y delicious and you need it in your life, ASAP!

I don’t know about you but I can’t think of a better way to spend my birthday (or any day for that matter) than by diving head first into this jar of deliciousness and eating my way out.

Who am I kidding, birthday or not that sounds like an absolute dream!

All natural, quick and easy, velvety smooth, creamy, dreamy, decadent and rich, subtly sweet, deliciously indulgent, lightly salted, seriously chocolatey, healthy, homemade chocolate pistachio almond butter . . .

Chocolate Pistachio Almond Butter
{Sugar Free, Gluten Free, Keto & Paleo Friendly}

Makes approx 2 1/2 cups all natural, quick and easy, deliciously indulgent, seriously chocolatey creamy, dreamy, velvety smooth, lightly salted, healthy, homemade, chocolate pistachio almond butter

Ingredients –

2  cup of raw almonds

1  cup of pistachios, shelled

2 Tablespoons of cacao

1 Tablespoon of vanilla extract or 10-12 drops of Vanilla Cream Stevia – I use Sweet Leaf Stevia

1/2 (heaping) teaspoon of salt flakes

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) then add your almonds and pistachios, making sure they are spread evenly – aka not crowded.

3 – Roast your nuts for 7-10 minutes, until gloriously golden, deliciously fragrant and lightly toasted.

4 – Pour your golden, delicious roasted nuts into the bowl of your food processor or blender, add salt and process until smooth and creamy (or your desired consistency). Initially the almonds would grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Add cacao and vanilla and process to combine then have a cheeky taste (or two) and adjust as needed.

Note – If you prefer a thinner consistency feel free to add a drizzle of coconut oil to thin it out.

6 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – but I highly doubt it will last that long! (← seriously, good luck with that 😉 )

So about this whole quick and easy, DIY – healthy homemade chocolate thing . . . I can’t stop . . .

Well that’s not entirely true, I probably could if I wanted but, ummmmmm  . . . just between you and me, I really don’t.

Not even a little bit.

And, when it’s so easy to make with just 6 ingredients and 5 minutes to stir it all together (Yes, it really is that easy!) . . . why would I want to?!

And, this latest creation has taken my chocolate + nut butter loving obsession to a whole new level . . . 🙌🏻🙌🏻🙌🏻

It’s 2 of my greatest loves combined into one decadent, rich, deliciously indulgent (yet secretly healthy) divine little mouthful! #worthit

Please don’t let the fact that I’m asking you to make your own chocolate intimidate or put you off making this recipe . . . I promise you there is reason to be scared or intimidated in the slightest – it really is as simple as – melt, stir, set, eatyou can (and should!!) do this!  👏🏻👏🏻👏🏻

Healthy, homemade chocolate peanut butter fudge . . .

What more do I need to tell you?!

I mean, would you just look at them?!

Just sitting there in all their lightly salted, dark, delicious, seriously fudge-y, peanut butter stuffed glory 😍😍😍

Just in case you need a leetle more convincing . . . not only are these insanely delicious,  secretly healthy, decadent and rich, peanut butter stuffed fudge bites super quick and easy to prepare, made with no refined flours or sugars, using just 6 real food ingredients, that I bet you have on hand already and come together in well under 10 minutes but, they also happen to be dairy free, sugar free, gluten free, vegan, keto and paleo friendly.

Paleo friends simply use in your fave almond (or nut butter of choice) in place of the PB and any of you folks with nut allergies you can easily make them nut free – sunbutter (or your fave nut free spread) would work perfectly here too! Don’t you worry your pretty little head, I got you covered 😘😘😘

Now, one more thing before I go and let you get your chocolate making on,these deliciously simple, secretly healthy dark chocolate peanut butter fudge bites we’re making . . . they aren’t for the faint of heart.

They are decadent and rich, deliciously indulgent and seriously, and I mean

For those of you who prefer your chocolate on the sweeter side feel free to bump up the amount of vanilla you use, or you could go ahead and add in a drizzle of maple syrup or honey if you prefer – the trick is to taste as you go and customize as needed.

That’s another thing I love about making your own homemade treats – not only is it a lot better for you ( our fudge is made with no refined flours, sugars, weird fillers or unpronounceable ingredients)  and it’s 100% customizable.

Salted Dark Chocolate Peanut Butter Tahini Fudge Bites
{Dairy Free – Sugar Free – Gluten Free –
Vegan – Keto & Paleo Friendly}

Makes approx 16 deliciously indulgent, decadent and rich, seriously chocolaty, tiny but mighty, peanut butter stuffed dark chocolate tahini fudge bites.

Ingredients –

1/4 cup cacao butter

1/4 cup cacao

1/4 cup tahini

2 teaspoons of vanilla extract (or 10-12 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

1/4 teaspoon instant espresso – optional but recommended

1 pinch of salt + extra for serving

4 Tablespoons of peanut butter – I use Byron Bay Peanut butter – It’s made with just peanuts and mineral salt and is so, SO good! Highly, HIGHLY recommend! Get yours 👉🏻 here 👈🏻 (Paleo friends just sub almond butter or nut butter of choice or to make them nut free use your fave sunbutter)

 

1 teaspoons maca – optional for hormone balance

1-2 scoops of  Vital proteins unflavored collagen peptides – optional for an extra dose of protein and gut healing goodness

Method –

1 – Place cacao butter into a medium size bowl and melt by your preferred method. I like to do mine on the stove top, double boiler style, by placing the bowl on top of saucepan filled with just a few inches of water.

2 – Once your cacao butter has melted, add remaining ingredients and stir until smooth and well combined.

3 – Pour (or spoon) 3/4 of your melted fudge mixture into a chocolate mould tray (or you could just place some paper cupcake cases on to a baking sheet, or use a mini muffin tray instead)

4 – Place into the fridge or freezer to set.

5 – Once set, top each fudge bite with a teaspoon of nut butter (use the back of the spoon to flatten and smooth it out to the edges, then cover your nut butter with a drizzle of the left over chocolate fudge (again use your spoon to cover your nut butter and spread it to out to the edges).

6 – Sprinkle with a little sea salt then place them back into the fridge or freezer for 5 minutes to set and voila’

Ahhh you guys I am so, SO excited to share this recipe with you today because;

1 – Hello chocolate,

need I say more?!

2 – Making my own chocolate fudge is something I’ve been wanting to do for a long, long, loooonnnngggg time but, for some reason I built it up in my mind to be this be complicated ordeal that required specialist equipment (think Bunsen burners, thermometers, protective eye equipment and lab coats) but you guys . . . I could not have been more wrong!

Making your own chocolate fudge is so ridiculously easy, I’m kicking myself for not trying it sooner.

Honestly, the hardest part about making this fudge is having the patience to wait for it to set! That in itself just takes 10-15 minutes if you pop it in the freezer but still, #thestruggleisreal

Trust me, as far as recipes go, it doesn’t get much easier than this!

Just 5 ingredients – cacao butter, cacao, tahini, vanilla, a pinch of salt and sprinkling of instant espresso which which is totally optional (but highly recommended). I find adding a touch of espresso really helps to elevate, enhance and intensify the richness of the chocolate 🙌🏻🙌🏻🙌🏻

5 minutes in the making –  melt, stir, set, eat!

Yes, it really is that easy!

No reason to be scared or intimidated in the slightest, you can (and should!!) totally do this!  👏🏻👏🏻👏🏻

Now, I should warn you . . . this deliciously simple, secretly healthy dark chocolate fudge that we’re making today is not for the faint of heart, it’s decadent and rich, deliciously indulgent and seriously, and I mean
S E R I O U S L Y, intensely chocolaty.

A dark chocolate lovers dream!

For those of you who prefer your chocolate on the sweeter side feel free to bump up the amount of vanilla you use, or you could go ahead and add in a drizzle of maple syrup or honey if you prefer – the trick is to taste as you go and customize as needed.

That’s another thing I love about making your own homemade treats – not only is it a lot better for you ( our fudge is made with no refined flours, sugars, weird fillers or unpronounceable ingredients)  and it’s 100% customizable.

Don’t like tahini  you crazy thing use in sunbutter (sunflower seed butter) instead?! Or, feel free to go ahead and sub in your fave nut butter – I bet almond, cashew or macadamia butter would work really well here in place of the tahini but keep in mind it would no longer be nut free and, it would also alter the flavor. I have no doubt it would still be absolutely delicious, just different is all. (I personally love that subtle, sweet nuttiness that tahini leaves lingering on your palate) but play around, have some fun and make it just the way you like it!

And, not only is our dark chocolate fudge much healthier and totally customizable but, I think our healthy, homemade fudge tastes a million times better than just about anything you’d buy from the store.

One taste and I think you’ll agree.

1 – Place cacao butter into a medium size bowl and melt by your preferred method. I like to do mine on the stove top, double boiler style, by placing the bowl on top of saucepan filled with just a few inches of water.

2 – Once your cacao butter has melted, add remaining ingredients and stir until smooth and well combined.

3 – Pour (or spoon) your melted fudge mixture into a chocolate mould tray (or you could just place some paper cupcake cases on to a baking sheet, or use a mini muffin tray instead)

4 – Place into the fridge or freezer to set.

5 – Once set, sprinkle with a little sea salt and voila’

So . . .

Deliciously simple, decadent, rich, healthy, homemade mocha chia spiced almond butter . . .

You guys . . .

So much deliciousness your pretty little head may just explode!!!!

Gloriously golden, nutrient rich almonds are oven roasted then blended with a splash of vanilla, a cheeky pinch of salt, a combination of chai inspired spices (think cinnamon, nutmeg, cardamom and cloves) , a sprinkling of cacao and a gentle hum espresso.

I know I say it about all the nut butters that we make but you guys . . . this mocha chai spiced almond butter is so insanely delicious that one taste and life as you know it will be changed forever!

The subtle sweetness of vanilla combined with those creamy, dreamy, buttery almonds, that  heart warming hum of chai inspired spices, the decadent, richness of the cacao and that gentle hum of espresso . . .

You guys . . . I can’t even . . .

It’s decadent and rich, subtly sweet, deliciously indulgent, seriously chocolaty and simply divine!

For the coffee haters out there;

1 – Tell me again why we’re friends?! Just kidding, kinda, you know I love you 😘😘😘

2 – Please don’t be put of by the fact that this almond butter has espresso in it. I personally don’t think it has a strong coffee flavor (although you could certainly ramp things up if you wanted) the coffee seems to just enhance the richness of the chocolate more than anything.

Trust me, that leetle touch of espresso brings an element of depth and richness to this little jar of heaven that takes our latest batch of healthy, homemade almond butter to a whole new level!

Healthy, Homemade Mocha Chai Spiced Almond Butter
{Vegan, Gluten Free & Paleo Friendly}

Makes approx 1 1/2 heaping cups of all natural, quick and easy, creamy, dreamy, decadent, rich, delicious, nutritious, perfectly spiced, espresso infused, healthy, homemade chocolate, chai spiced almond butter

Ingredients –

2 cup of raw almonds

1 Tablespoon of vanilla extract (or 8-10 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

1 Tablespoon cacao

1 teaspoon of instant espresso

1 teaspoon of ground cinnamon

1/4 teaspoon of ground nutmeg

1/4 teaspoon of cloves

1/4 teaspoon of cardamom

1/2 teaspoon of salt flakes

Method –

1 – Preheat your oven to 175’C (350’F)

2 – Line a large baking sheet with baking/parchment paper (or a non stick silpat mat) and pour on your almonds, making sure they are spread evenly – aka not crowded.

3 – Roast your almonds for 10 minutes, until lightly toasted and deliciously golden.

4 – Pour your roasted almonds into the bowl of your food processor or blender and process until smooth and creamy (or your desired consistency). Initially the almonds wil grind down into a powder, give it a minute or two and the oils will extract and it will become deliciously, thick, rich and creamy. You may need to stop and scrape down the sides of the bowl occasionally.

5 – Once you have blended to your desired consistency, add your vanilla, cacao, espresso, salt and spices then process until well combined.

6 – Taste and adjust seasoning accordingly – add a little extra salt or more vanilla/cinnamon/spices if you feel the need and, if you prefer a thinner/more runny consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that 😉 )

Yes my friend you read that right, I said epic avocado egg salad and I stand firm by my declaration!

One taste I think, no wait, I know, you’ll agree.

!00%, without question!

I know traditionally egg salad is made with eggs and mayonnaise and as much as I love a good mayonnaise (especially if we’re talking about Sir Kensington’s or Primal Kitchen  –  yummmmmmm  ❤❤❤) I find it tends to be a little overpowering and when used solely to dress a salad you know?!

Which is why I decided to sub avocado in place of the traditional mayo. That way we get to keep that deliciously creamy texture without overpowering the whole dish.

Genius right?!

Although, you can’t really go wrong putting egg and avocado together can you?!

Eggs and avocado are combined with a leeeeetle bit of mayo (which is totally optional but highly recommended because I personally think it adds a slight richness that, when combined with the avocado, is what takes this egg salad to the next level!), a sprinkling of garlic powder, a touch of salt and pepper and a cheeky squeeze of lemon juice. So simple to throw together but you guys . . . it’s so, so good!

A deliciously simple, seriously epic, match made in heaven.

And you guys, this egg salad . . . is 100% heaven sent!

It’s luscious, creamy and full of flavor and I know you are going to absolutely love it.

I mean who doesn’t love a good egg salad?!

To be honest I have been making this egg salad for a loooonnnngggggg time now I just haven’t really told you about it because well . . . it’s not the prettiest of dishes is it?!

But, I decided it was time.

I mean, it’s just to delicious to keep to all to myself and I assure you, what it lacks in looks it totally makes up for in flavor.

It really is an absolute taste sensation and seriously epic in more ways than one!

It’s super quick and easy to prepare made with just a handful of ingredients that I bet you have on hand already and comes together in just 5 minutes!

It also happens to be naturally gluten free, dairy free and paleo friendly as well as 100% Whole30 compliant but, most importantly, it’s insanely delicious, seriously nutritious and something the whole family will absolutely adore!

It’s packed with protein and heart healthy fats which means that not only is it all kinds of delicious but, it’s guaranteed to keep you feeling full and satisfied for hours on end.

It’s the perfect anytime dish!

I love to serve mine in lettuce cups because;

1 – I’m kind of obsessed with them (see 👉🏻 here,👉🏻  here,👉🏻  here and 👉🏻  here)

2 – I adore the contrast in texture and that cool, crisp freshness that the lettuce leaves bring to the table and,

3 – That way I can eat them straight off my chopping board which means I have less dishes to wash which = winning at life because, washing dishes, doing laundry and ironing, like burpees, are the devil. The less of that stuff I have to deal with the better, can I get an Amen?!

Sorry, I got a little carried away there . . .

Where was I . . .

Serving my epic avocado egg salad in lettuce cups, right.

I love the serve them in lettuce cups along with some pickled radish, because I just cant stop, and some fresh dill because it just seemed like a good idea at the time and you know what?! It really was so I strongly suggest you do the same.

And always with a dash (or two) of hot sauce.

Always!

Serve them with a couple of slices of crispy bacon or smoked salmon along with some crisp and crunchy, deliciously simple, perfectly roasted baby potatoes and have yourself a killer breakfast.

Or, you could eat it with some of your favorite crackers, roll it up in a tortilla or even on toast or as a sandwich for a quick and easy yet seriously satisfying lunch.

Or, you could enjoy it with some steak, sausage or protein of choice along with some perfectly roasted pumpkin for an absolutely amazing dinner.

However you choose to eat it you really can’t go wrong!

Epic Avocado Egg Salad Lettuce Cups
{Gluten Free – Dairy Free – Paleo Friendly}

Makes 1 – all natural, quick and easy. light, fresh, luscious, creamy epic avocado egg salad lettuce cup that is jam packed full of flavor

Ingredients –

3 hard boiled eggs, peeled

1/4 avocado

1/2-1 teaspoon of garlic powder

1 teaspoon of mayo – optional but makes them extra lush! I use Gevity rx great guts mayo its sugar free, dairy free, gluten free (egg free) & made with good quality EVOO & is boosted with bone broth which is great for hair, skin, nails & gut healing goodness. A squeeze of lemon juice (about 1/2 teaspoon)

Salt and pepper to taste

For serving –

Baby coz or butter lettuce leaves, washed and dried

Avocado

Pickled Radish

Fresh Dill

Method –

1 – Place your peeled, hard boiled eggs into a bowl a use a fork to mash them up. You can also just use a grater or roughly chop them for a heartier egg salad.

2 – Add avocado, mayo (if using) garlic powder, lemon juice along with your salt then pepper and stir to combine. Taste and adjust seasonings as needed.

3 – Place a few slices of avocado into your prepared lettuce cups, top with your epic avocado egg salad, add some pickled radish, a sprig or 2 of fresh dill and finish with a few dashes of your favorite hot sauce!

So, here we are with our very first nut butter recipe of 2017 where one delicious obsession inspires another . . .

Deliciously simple, healthy, homemade, salted maple pecan almond butter!!!!

Deliciously buttery pecans and almonds are oven roasted then blended with a splash of vanilla, a drizzle of maple syrup and a cheeky little pinch of salt to bring you your very own subtly sweet, lightly salted, gloriously golden, velvety smooth, creamy jar of heaven.

I can’t even!

I don’t even know how it’s possible that something so simple can taste SO good!

But it is and it does.

Believe me, I checked, not once, not twice but several times over.

So many times in fact that I had to re-make the recipe just so I could take some photos for you!

Talk about taking one for the team 😋😋😋

The things I do for you 😉

Anyways, I checked, and checked and checked again and yep – it really is absolute awesomeness personified!

I don’t know what it is but this batch latest batch of almond butter is certainly different from all the ones we’ve made in the past.

It’s smoother, creamier, richer, more indulgent and decadent yet somehow at the same time manages to feel lighter?! I don’t know how it’s even possible but it really is even more awesome than those that have come before it!

Even if I do say so myself.

As far as nut butters go this salted maple pecan almond butter is definitely next level!

Maybe it’s the different oils in the pecans, I honestly don’t know but, whatever the reason I’m sure not complaining!

This maple pecan almond butter really is divine!

It’s deliciously buttery, subtly sweet, lightly salted, velvety smooth and I am head over heels in love!

I mean would you just look at it?!

That color!!!!!!!

That texture!!!!

Those flecks of vanilla!!!!

Salted Maple Pecan Almond Butter {Vegan, Gluten Free & Paleo Friendly}

Makes approx 2 1/2 cups All natural, quick and easy, subtly sweet, velvety smooth, creamy, dreamy, lightly salted, healthy, homemade, maple pecan almond butter

Ingredients –

Sometimes the natural sugars in the maple syrup can cause the nuts to solidify slight and they may look like they have siezed but do not panic, just keep blending and they will come good (aka creamy, dreamy and silky smooth), promise.

6 – Taste and adjust seasoning accordingly – add a little extra salt or more vanilla or maple syrup if you feel the need and, if you prefer a thinner consistency feel free to add a drizzle of coconut oil to thin it out.

7 – Store in an airtight container in the fridge. It should keep well for up to 2 weeks – if it lasts that long! (← seriously, good luck with that 😉 )
