It’s one that I’ve been working on for weeks I tell you, WEEKS!

I’m not exactly sure who/what/where or how I got the idea to make a date free salted caramel slice but, I somehow I got it and couldn’t for the life of me seem to shake it so, date free salted caramel slice had to be made.

It took a few attempts to get it just how I wanted I’m happy to say that I got there in the end!

Subtly sweet, silky smooth, lightly salted caramel sits on a deliciously nutty, cinnamon spiked base and finished with a decadent and rich, cool, crisp, dark chocolate coating . . .

You guys, this slice . . . so insanely delicious that simply saying it’s delicious doesn’t even come close to doing it the justice it deserves.

And oh my word, talk about quick and easy to make!

Honestly, the hardest part about making this slice is waiting for it to chill/set – believe me when I say the struggle is real but also, 100% worth it!

Now, I know, I know I’ve said this is a raw caramel slice and then I’m going to go ahead and tell you to roast/toast your cashews and almonds before making your base but, that step is totally optional although I do highly recommend it. Toasting your nuts before making the base makes it next level delicious.  Yes, it will take an extra 5-10 mins but, if you ask me, it’s 100% worth it!

Raw {Date Free} Salted Caramel Slice

  • Prep Time: 40 mins
  • Difficulty: Easy

  • Ingredients
  • For the base –
  • 1/4 cup of raw almonds
  • 1/4 cup of raw cashews
  • 1 Tablespoon of hemp seeds – optional
  • 1 teaspoon of vanilla
  • 1 tsp of water
  • 1 pinch of cinnamon  – measure with your heart
  • 1 pinch of salt
  • For the filling –
  • 1/2 cup of almond butter
  • 2 Tablespoons of coconut oil
  • 1 Tablespoon of maple syrup – I use sugar free/monk fruit maple
  • 1 Tablespoon of vanilla
  • 1/4 teaspoon of flaky sea salt – omit if using salted almond butter
  • Optional add-ins ;
  • 1 teaspoon of maca – an extra touch of sweetness and its great for energy & hormone balance
  • 1-2 scoops (Tablespoons) of unflavoured collagen = for an extra boost of protein and is great for hair, skin, nails & gut health – omit if vegan & use marine collagen if pescatarian
  • For the topping –
  • 1/4 cup of dark chocolate
  • 1 Tablespoon of coconut oil – optional
  • 1/4-1/2 tsp instant espresso – optional
  • Flaky sea salt
  1. Instruction
  2. Optional – lightly toast cashews and almonds – either on a lined baking tray at 175’C/350’F for 5-10 mins or just throw them into a dry fry-pan/skillet (make sure you toss them around occasionally so they don’t catch and burn on one side)  until lightly golden and deliciously fragrant.
  3. Place almonds and cashews into your food processor or blender and process until they break down into a fine, sandy-looking crumb
  4. Add hemp seeds, if using, along with your vanilla, water, cinnamon and salt and process again until a sticky “dough” forms
  5. Press base mixture into a lined loaf pan then pop it into the freezer while you make your filling
    Note – I have a little 13x8cm pan and it was the perfect size) – or, if you don’t want to have to bother with cutting your slice you could just spoon it into little chocolate moulds or even line a mini muffin tin with paper cupcake cakes – either will work just fine
  6. Place all filling ingredients into your food processor /blender and process until deliciously creamy and well combined
  7. Spoon/pour/spread salted caramel filling onto your base and pop it back into the freezer to set while you make your dark and delicious chocolate topping
  8. Melt chocolate and coconut oil by your preferred method – I like to do mine over the stove, double broiler style but the microwave works fine too #youdoyou
  9. Once your chocolate topping is melted, pour over salted caramel/base, sprinkle with sea salt and return the the freezer for 20-30 minutes to set.
  10. Slice – Devour – Enjoy xo

Note – this slice definitely needs to be kept refrigerated (I like to keep and eat mine straight from the freezer)  but it will keep well refrigerated for 7-10 days , although I highly doubt it will last that long. It can be frozen for a good 3-6 months.

Alright party people, it’s that time again, time for another round of Fit Friday Fun, are you ready?!

Today I’m sharing one short, sharp lower body workout that you can get in and get done in less than 20 minutes ,  with or without equipment, totally your call – what do you say, are you in?

You guys know how how much I love, love, love my lower body workouts, The lower body is where your powerhouse muscles are (I’m looking at you quads, glutes and hamstrings) which means you get a serious bang for your workout butt, I mean buck 😉

So, here’s what we are going to do –

5 exercises,

✳ Glute Bridges
✳ Step Ups
✳ Reverse Lunges
✳ Squats

✳ Curtsy Lunges
♻ x 4 rounds
❤ Add/remove weight & rest as needed

We will aim to do 8-10 reps of each exercise (count reps per leg for step ups and lunges) then repeat the entire sequence through for a total of 3 rounds, resting as needed. Sound good?

Nothing complicated, basic movements done with good form for a short but effective lower body workout that will leave you feeling strong, energized and ready to take on the rest of your day!

Just because I’m not allocating any specific rests breaks in today’s workout does not mean you push through without taking any rest!

I want you to listen to that beautiful body of yours and anytime you feel like you need to take a break to catch your breath and grab a little drink then by all means please do so, and take all the time you need. However, if possible try to wait until you get to the end of each set or the bottom of each round to do so but, do what you gotta do, OK?!

If you feel like you need to stop, grab a drink and catch your breath, by all means do so, take all the time you need,  then get straight back into it and repeat for a total of 3 rounds, deal?

Now, for those of you who are just getting started or may not have access to a gym of any kind of weights you can absolutely do with workout without any added weight and let me tell you, you will be feeling it.

Not even kidding, this was me the day my first attempt at this workout –

Just because you’re “only” using your body-weight as resistance doesn’t not make this an easy workout. Your quads and glutes will be burning by the final round and you will definitely be feeling the effects of it tomorrow I assure you.

For our fully functioning/more advanced lifters who might be looking to make things a little more challenging – grab yourself a weapon of choice – a set of dumbbells, a barbell, kettlebells, some resistance bands or any combination you like. Make sure you choose something appropriate for your strength but, don’t be afraid to challenge yourself.

The final reps in each set should be tough!

Although, we want quality not quantity, always! Never compromise your form, ever! If your form starts to fail your done, got it?

Take your time, concentrate, focus and breathe through each and every exercise. You are strong, you are amazing, you have big energy! You’ve totally got this!

Lower Body Workout

As always make sure you are nice an warm before you start your workout – Run on the spot, do jumping jacks, jump rope, dance around your living room, anything to get you warm then it’s time to get serious.

Finish with a nice little cool down and stretch, maybe take a walk or something anything to help bring your heart rate down. Finish with a few of your fave stretches. Please don’t skip the stretch people, its like dessert for the body.

Now onto our smoothie recipe . . .

How does a nice tall, subtly sweet, creamy, dreamy, delicious, nutritious, salted caramel iced matcha latte sound?

I love the way the earth tones of that magnificent matcha marries with the subtle sweetness of those magical medjool dates – it’s subtly sweet, deliciously dreamy and simply divine!

And, not only does it taste like straight up heaven in a cup but, it also happens to be  rich in antioxidants, high in calcium, potassium, magnesium, iron and fiber.

It’s a natural anti-inflammatory.

Great for stabilizing blood sugar, balancing hormones, enhancing mood, aid concentration and restoring energy levels (both mental and physical).

And it’s also great for post work out recovery, gut health as well as the health of your hair, skin and nails!

Super smoothie say whaaattttt?!

Salted Caramel Iced Matcha Latte Vegan - Gluten Free - Dairy Free - Sugar Free - Banana Free - Keto & Paleo Friendly - www.betterwithcake.com

 Salted Caramel Iced Matcha Latte
Vegan – Gluten Free – Dairy Free – Sugar Free – Banana Free – Keto &  Paleo Friendly
Makes 1 nice tall, subtly sweet, creamy, dreamy, lightly salted, seriously healthy, matcha latte

Ingredients –

1/4 cup coconut or Greek style yogurt

3/4 cup unsweetened vanilla almond milk (or milk of choice)

1/2 cup of (pre-steamed & frozen) cauliflower – you cant taste it, promise

1 teaspoon of matcha green tea powder

1-2 medjool dates, pit removed

1 Tablespoon of cashew or almond butter

A pinch of salt

1 teaspoon of maca powder – optional for hormone balance

1/2  teaspoon of vanilla (or 2-4 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

1-2 scoops of  Vital proteins unflavored collagen peptides – Optional for an extra does of protein and gut healing goodness

1/4-1/2  cup of ice – more or less to desired consistency

Optional for serving –

Cacao nibs

Coconut flakes

Matcha powder

A drizzle of healthy homemade 2 minute salted caramel

Method –

1 – Place all smoothie ingredients into your and process until smooth, creamy and well combined.

2 – Pour into a chilled glass or mason jar then top with coconut flakes, cacao nibs and dust with matcha if desired.

You could also add in a scoop of protein powder (vanilla or unflavoured would work really well in this recipe for an extra, extra boost of protein if you’re into that kinda thing – do what you feel baby 🙂

Allow me to introduce you to what I’m pretty sure is soon to become your new fave snack/treat of choice . . .

Pumpkin Spiced, Salted Caramel Bliss Bites!

I know, I know there are a million and one different recipes out there for our beloved bliss bites but, you guys did you hear me . . .

PUMPKIN SPICED, SALTED CARAMEL BLISS BITES!!!!!!

I don’t mean to yell but you guys . . . yes, these pumpkin spiced salted caramel bliss bites  really are THAT good!

Plump and juicy, deliciously chewy caramel infused medjool dates are combined with buttery cashews, crisp, crunchy almonds, a splash of vanilla and a cheeky pinch of salt to make our insanely delicious, salted caramel, bliss bite base.

Next, we infuse our blissfully delicious, sweet, chewy, lightly salted, caramel base with a gentle hum of our healthy, homemade, heart and belly warming pumpkin spice mix.

The combination of our pumpkin spice mix with that deliciously buttery soft, chewy, salted caramel base is truly incredible!

One bite and you will think Christmas has come early and if you ask me, it kind of has because that’s exactly what these bliss bites taste like to me.

Blissfully soft, deliciously chewy, perfectly spiced, lightly salted, caramel infused bites of happiness.

So much deliciousness I can hardly stand it but . . .

Because I can’t seem to leave well enough alone, I thought it might be a good idea if we gave our deliciously simple, secretly healthy,  pumpkin spiced, salted caramel bliss bites a subtly sweet, deliciously nutty, crisp and crunchy coconut coating . . .

Well, that was until I decided to try tossing them in a touch of cacao . . .

Ummmmm yep, also a very wise move on my part.

I mean, I think we can all agree that the addition of chocolate, in any way shape of form, really does make just about anything better, am I right?!

Oh you know I am. You’re so smart!

Not only does it add an incredible contrast in texture, with the coconut flakes adding a nice little crunch to the outside of our soft and chewy bliss bites where the cacao adds a touch of deliciously indulgent, decadent richness that marries so perfectly with the sweetness of our salted spiced caramel when you bite on in – it really is mind-blowingly delicious!

Ingredients –

1/2 cup cashews (I used raw, unsalted)

1/2 cup almonds (I used raw, unsalted)

3/4 cup medjool dates, pits removed – approx 7 large

1 Tablespoon of vanilla extract (or 8-12 drops of vanilla cream stevia – I like to use Sweet Leaf Stevia )

1/2 of salt flakes

1 teaspoon of our healthy, homemade pumpkin spice mix

1 scoop of Vital proteins unflavored collagen peptides optional

Optional for serving –

2-4 Tablespoons  of finely shredded coconut for coating.

2-4 Tablespoons of cacao

Method –

1 – Place almonds and cashews in your food processor/blender and pulse until crumbly, you want there to still be a few bigger chunks to give the bites some nice texture.

2 – Add dates and process until the mixture comes together to form a sticky “dough”.

3 – Add vanilla, salt flakes and spices and process again until combined.

4 – Using your hands, roll approx 1 Tablespoon of dough into little bite size balls then set aside.

I feel like I should mention that when I make my bliss bites I tend to make them way smaller than the ones you see in stores or cafes. I prefer to make them on the smaller side because I like being able to just pop one in my mouth on the down low so I don’t have to share I can go about my business. I would say you would probably need 3 of my bliss bites to make up the size of one of those store bought/cafe size bites. Feel free make them whatever size that tickles your fancy, just wanted to put that out there 🙂

5 – Place your coconut and cacao each into a small bowl (or even just a zip lock bag) then gently roll your bliss bites in the coconut or cacao for coating, gently but firmly pressing as you go.

6 – Once your bites have their delicious little coating, transfer directly to your mouth an airtight container (or even just a ziplock bag) and store in the fridge

  • If you find your dates are a little dry you could try soaking them in some warm water for 10 mins before you begin, then drain and rinse and make as normal.

Deliciously Simple, Healthy, Homemade Dark Chocolate Coated Salted Caramels
{Gluten Free& Paleo Friendly}

Makes approx 10 deliciously simple, secretly healthy, dark and delicious, chocolate coated salted caramel bites

Ingredients –

For the salted caramel –

1 cup (firmly packed) Medjool dates,pits removed – I used about 14 large dates*

1 teaspoon of vanilla extract

1 Tablespoon of coconut oil, melted and cooled

1-2 Tablespoons of warm water

1/2 teaspoon of salt flakes + extra for serving

1-2 scoops of Vital proteins unflavored collagen peptides – optional for an extra dose of protein and gut healing goodness

For the chocolate coating –

1/2 cup dark chocolate chips

Method –

To make the salted caramel –

1 – Place dates, vanilla, coconut oil and salt into your food processor or blender and process until it starts to break down and form a thick sticky mass/paste

2 – While your blender or food processor is running, add water 1 teaspoon at a time until the caramel loosens just slightly to form a deliciously smooth, gloriously golden, naturally sweet salted caramel.

2 – Transfer your salted caramel to a bowl and place in the fridge (or freezer) for 5-10 minutes to set a little so it’s more manageable and easier to handle.

3 – Once your caramel has firmed up slightly, take approx 1 Tablespoon of at a time and roll it between your hands to shape it into a nice little ball, then place onto a plate and repeat until all caramel has been used. Once you have all your delicious little caramel bites rolled pop them into the fridge while you make your chocolate coating.

4 – Melt your chocolate by your preferred method. I like to place my chocolate onto a small plate or bowl and sit it over a pot of gently simmering water, stirring occasionally until nice and melted.

5 – Remove your chilled caramel balls from the fridge and place them one at a time, into your deliciously dreamy melted chocolate then gently toss to coat. You can use a couple of spoons or forks to gently roll the caramel balls through the melted chocolate – works like a charm 😉

6 – Once your caramel has a nice and even-ish chocolate coating, place back onto the baking sheet, and repeat until all caramels have been bathed in chocolate.

7 – Drizzle your chocolate coated salted caramel bites with any remaining chocolate then sprinkle each with a little pinch of salt flakes and pop them into the fridge or freezer for 5-10 minutes to set.

These delicious little morsels will keep stored in an air tight container in the fridge for up to 2 weeks or can be frozen for up to 3 months.

How can something so sweet, so teenie tiny be so stinking terrifying?

Seriously I have been wanting to make these macarons for ever but have always been to scared. Which is silly, it’s just egg whites and sugar really . . . what’s so scary about that?

Scary delicious, yes but scary, scary . . . not really sure why but I. was. terrified!

Big time!!!

Finally, I decided to suck it up . . . I pulled out my apron, assembled ingredients, took a deeeeeeeeeep breath and gave it a red hot go.

Umm winner, winner chicken dinner!

Honestly these macarons are insane.

Insanely delicious with their crunchy chocolately shell, soft chewy centre and then theres the salted caramel filling . . .

oh.my.word . . . YES!

and not at all scary, difficult or tricky to make. You. Can. Do. It.

Totally worth it – totally!

Embrace the fear people, its only egg whites and sugar after all . . .

what’s the worst that can happen?

Chocolate Macarons with Salted Caramel {Dulce De Leche}

Ingredients –

Makes 25 individual Macarons (12.5 sandwiches)

55g (3/4 cup) Almond meal (ground almonds)
8g (1 1/2 Tbsp) Cocoa powder
100g (1cup) Icing sugar
55g egg whites (from approx 1 1/2 eggs)
15g (1 Tbsp) granulated sugar
A pinch of Cream of tartar
Dulce De Leche
Salt Flakes

Method –

Into the bowl/jug of a blender place the almond meal (ground almonds),

icing sugar

and cocoa powder

and pulse until just combined. Set aside.

In a medium size bowl place egg whites

and whisk until foamy.

Add the pinch of cream of tartar

and whisk until soft peaks form.

Sprinkle in granulated sugar

and whisk until you have stiff peaks.

Sift almond meal/cocoa mix into egg whites

and gently fold until well combined.

Pour batter into a piping bag fitted with a large round tip (if you don’t have a piping bag you can just use a large zip lock bag and snip off one corner.

Line 2 baking trays with baking/parchment paper and pipe circles approx 1 inch in size and also 1 inch apart.

Allow to sit a room temperature for about an hour, until a crust forms. The macarons should no longer be sticky to touch.

Preheat oven to 140’C (275″F)

Bake for 15-18 mins, until they rise slightly.

Allow to cool on baking sheets.

Once completely cool match macarons up into pairs of similar sizes as best you can, make a little production line on whatever surface you like . . . I went with my wire rack . . . no idea why . . . it felt good at the time?

Top one half of each macaron pair with a teaspoon of Dulce De Leche.

Smooth the delicious mound of caramel out with either the back of a spoon or knife.

Sprinkle on a pinch of salt flakes

and top with a macaron of similar size . . .

MmmmMM holy bite size deliciousness batman.
